Steps:
- Cook the small broccoli florets in boiling water with 1 tsp salt until soft (they should be bright green). Drain and set aside.
- Cook the pasta in boiling water with 1 tsp salt until al dente (follow instructions on the package). Drain and put back in the pot. Melt 2 Tbsp butter and mix into the pasta.
- In a large skillet, heat the olive oil on medium-high, add the bacon and fry until lightly crisp. Fold a paper towel and put it in the skillet. Move it around the pan with spatula until it soaks up most of the fat. Discard the paper towel.
- Reduce to medium heat. Add the garlic and fry for 2 to 3 minutes stirring constantly.
- Add the broccoli and season with salt and pepper. Stir over medium heat for 2 minutes.
- Add the broccoli mixture to the pasta. Mix well and serve with Parmesan.

- Heat the reserved oil from the tuna in a very large saucepan. Tip in the tomatoes plus 200ml water and simmer while you cook the pasta, following pack instructions. Add the broccoli for the final 3 mins, then drain, reserving some of the cooking water.

TUNA & BACON PASTA FINA
This is a recipe that I have been making for years. It's always a favorite. You can tweak the ingredients to your own tastes if you so choose. My brother likes to add minced onions to the saute. It's quick, it's easy & tastes great!

- Season with black pepper (optional).
- Crumble the bacon strips and place back in the pan with the tuna & garlic.

PASTA WITH TUNA, BACON, AND BROCCOLI
I know how this sounds, but it is actually a really great combination. You can change it up by adding chicken, shrimp or scallops. I also like sauted mushrooms in it. It's great for left over spaghetti noodles when you're tired of plain old marinara.

BROCCOLI PASTA
Believe it or not, the star behind this 5-ingredient supper is overcooked broccoli! We over-steam it here to give the broccoli a delicate and creamy texture, making it perfect for mashing, mixing with pasta water and tossing with pasta.

Steps:
- Set up a steamer basket in a 3-quart saucepan. Add enough water to come up to the bottom of the basket. Bring the water to a boil. Add the broccoli florets to the basket, cover and cook until the broccoli is soft and nearly falling apart but still holds its shape, about 15 minutes.
- Meanwhile, bring a large pot of salted water to a boil. Transfer the broccoli to a large bowl. Add 2 tablespoons butter and gently toss; season with salt and pepper, then mash.
- Cook the spaghetti according to label directions, then reserve 1 cup cooking water and drain.
- In a large skillet, cook the garlic in the remaining 2 tablespoons butter and the olive oil for 30 seconds. Add the mashed broccoli, the Parmesan and half of the reserved cooking water. Cook, stirring, until saucy. Season with salt and pepper. Toss with the spaghetti, adding more cooking water as needed.

- 2. Saute Celery & onion in butter or olive oil 3-4 minutes.
- 3. Place pasta in greased casserole dish. Pour mixture over top and.
- very gently stir into pasta until mixed well.
- 4. Cover loosely with foil and bake at 350 for 25 minutes.
- 5. Spread bacon bits, shredded cheese, and french fried onions on top. Cook an additional 5 minutes, uncovered.
- ** I usually cook this in a deep 9 x 9 casserole dish. If using something larger, you probably want to change the initial bake time to 20 minutes (or less - until it's bubbly).

- Heat the oven to 200°C/180°C fan/gas 6. In a small bowl, combine the chopped onions and vinegar, then set aside (this helps to mellow the flavour of the onion).
- Bring a large pan of salted water to the boil and cook the pasta for 2 minutes less than the packet instructions. Add the broccoli to the pasta pan 2 minutes before the end of the reduced cooking time. Drain both and return to the pan, drizzle over a little olive oil, then stir and set the pan aside.
- While the pasta is cooking, make the white sauce. Melt the butter in a large saucepan over a medium heat. Add the flour and stir to make a roux, then cook for 1-2 minutes. Remove from the heat and gradually add the milk, stirring well after each addition to ensure there are no lumps. Return to the heat, bring to the boil, stirring constantly, then simmer for 2 minutes until thickened. Remove from the heat, stir in the dijon mustard, 100g cheddar and 50g gruyère and allow to melt.
- Drain the chopped onion (discard the vinegar) and add to the white sauce in the pan along with the drained pasta and broccoli, capers, tuna and half the parsley. Transfer to a large ovenproof dish, then scatter over the remaining cheeses. Toss the sourdough chunks in 1 tbsp oil, then sprinkle over the top (see Make Ahead). Bake for 30 minutes until the croutons are golden and the bake is bubbling. Serve scattered with the remaining chopped parsley.
