CREAMY SMOKED SALMON PASTA



Creamy Smoked Salmon Pasta image

This is a lighter version of pasta carbonara. For people who want the flavor but not the bacon, smoked salmon is the perfect substitute!

6 tablespoons butter
½ onion, finely chopped
2 tablespoons all-purpose flour
2 teaspoons garlic powder
2 cups skim milk
½ cup grated Romano cheese
1 cup frozen green peas, thawed and drained
½ cup canned mushrooms, drained
10 ounces smoked salmon, chopped
1 (16 ounce) package penne pasta

Steps:

  • Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
  • Melt butter in a large skillet over medium heat. Saute onion in butter until tender.
  • Stir flour and garlic powder into the butter and onions. Gradually stir in milk. Heat to just below boiling point, and then gradually stir in cheese until the sauce is smooth. Stir in peas and mushrooms., and cook over low heat for 4 minutes.
  • Toss in smoked salmon, and cook for 2 more minutes. Serve over pasta.

12 ounces penne pasta
6 ounces smoked salmon
2 tablespoons olive oil
1 tablespoon garlic
3 tablespoons butter
1 1/2 cups whipping cream
1/4 teaspoon salt
1/4 teaspoon black pepper
2 ounces green onions
2 ounces parmigiano-reggiano cheese
2 sprigs dill

Steps:

  • Cook pasta in boiling salted water until al dente (firm to the bite, but not cooked all the way through.) Drain and set aside.
  • Saute garlic in olive oil over medium heat.
  • Cook until the garlic begins to sweat, but doesn't turn brown.
  • Add butter.
  • Once butter melts, add cream and bring to a simmer.
  • Add the pasta and keep simmering.
  • Then add the smoked salmon (cut into 1" cubes) and half of the cheese.
  • Toss well until the cheese is incorporated into the sauce.
  • Cut the green onions into 1/2" pieces.
  • Coat in olive oil and broil in the oven.
  • You can do this before cooking the pasta.
  • Add the roasted green onions into the sauce.
  • Season with salt and pepper.
  • Serve in a large bowl or on a plate.
  • Garnish with the remaining cheese and dill.
  • Serves 2.

3 ounces pasta, shapes
1 teaspoon olive oil
1 scallion, trimmed, washed and finely sliced
2 ounces smoked salmon, chopped
4 -5 tablespoons heavy cream
1/2 lime, juice of, only
fresh ground black pepper

Steps:

  • Cook the pasta in a pan of lightly salted boiling water according to the packet instructions and drain. Meanwhile, heat the oil and fry the scallion until softened.
  • Stir in the chopped salmon and heavy cream and heat until beginning to bubble. Add the lime juice, bring the mixture to the boil and simmer for 1 - 2 mins, stirring.
  • Stir in the cooked pasta, season with pepper and serve.

2 slices red onion, chopped
6 ounces smoked salmon, cut into strips
½ cup grated Parmesan cheese

Steps:

  • Bring a large pot of salted water to a boil. Add orecchiette and cook, stirring occasionally, until tender yet firm to the bite, 9 to 12 minutes.

3 tablespoons butter
12 ounces smoked salmon, cut into 1/3 inch-wide strips
1 cup whipping cream, plus
2 tablespoons whipping cream
1 teaspoon tomato paste
3 teaspoons chopped fresh dill, divided
1/8 teaspoon cayenne pepper

Steps:

  • Cook pasta in a large pot of boiling, salted water until tender but still firm to bite, stirring occasionally.
  • Drain, reserving 1/4 cup cooking liquid.
  • Meanwhile, melt butter in heavy large skillet over medium heat.
  • Add salmon and cook until fish turns light pink, stirring frequently, about 2 minutes.

1 cup whipping cream
1/4 cup chopped fresh dill or 2 teaspoons dried dillweed
1 teaspoon fresh lemon juice
12 ounces tagliatelle or linguine, freshly cooked
4 ounces smoked salmon, cut into thin strips
Lemon wedges

Steps:

  • Bring clam juice and cream to boil in heavy large skillet over high heat. Reduce heat and simmer until mixture thickens enough to coat spoon, whisking occasionally, about 10 minutes. Whisk in dill and lemon juice. Add tagliatelle and toss to coat. Remove skillet from heat. Add salmon; toss to combine. Season to taste with salt and pepper.

1 tablespoon extra-virgin olive oil
1 shallot, minced
1 ounce smoked salmon, cut into small pieces
1 tablespoon reduced-fat cream cheese

Steps:

  • Fill a large pot with lightly-salted water and bring to a rolling boil. Stir the linguine into the water and return to a boil. Cook uncovered until the pasta has cooked through but is still firm to the bite, about 11 minutes; drain, reserving 2 tablespoons of the water.
