Kosher salt and freshly ground black pepper
1 pound bowtie pasta (farfalle)
4 cups packed fresh mint leaves (about 4 1/2 ounces), plus several whole leaves for garnish
3 tablespoons (about 1 1/2 ounces) unsalted toasted pistachios
1 clove garlic, lightly crushed
1 cup extra-virgin olive oil
One 2 1/2-ounce wedge pecorino, plus 1 handful grated, for garnish
Juice of 1/2 a large lemon
A dollop of unsalted butter, optional
Fresh mint leaves, for garnish

Steps:

  • Bring a large pot of salted water to a boil and cook the pasta according to the manufacturer's instructions for al dente pasta.
  • Meanwhile, put the mint leaves, pistachios and garlic in the bowl of a food processor and pulse until finely chopped. While still pulsing, slowly drizzle in the olive oil. Remove the lid and use your hands to break up the wedge of pecorino into small chunks and add them to the food processor along with a pinch of salt and pepper. Pulse until well combined but there are still small pieces of pecorino throughout the mixture. (You do not want to blend too much because it will cause the mint to brown.) Season with additional salt and pepper if needed.
  • Transfer the pesto to a large high-sided skillet. When the pasta is cooked to al dente, use a large slotted spoon to lift the pasta out of the pot and directly into the skillet. Stir to combine. Turn the heat to medium-high and cook, stirring occasionally, until the excess water from the pasta has evaporated and some of the pecorino has started to melt, 3 to 5 minutes. Stir in the lemon juice and butter if using. Season with additional salt and pepper if needed.
  • Transfer to a large platter and garnish with the grated pecorino and whole mint leaves. Serve warm or at room temperature.

Herbed Fava Beans With Pasta image

Kosher salt
2 1/2 pounds fresh fava beans in the pods, shelled (or 1 1/2 to 2 cups shelled fava beans)
1 cup small bow-tie pasta or other small pasta
3 tablespoons extra-virgin olive oil
1 clove garlic, smashed
4 sprigs mint, plus 1 tablespoon finely chopped mint leaves
4 sprigs parsley, plus 1 tablespoon finely chopped parsley leaves
1 bunch scallions, finely chopped
2 tablespoons unsalted butter
Freshly ground pepper

Steps:

  • Fill a large bowl with ice water. Bring a large pot of salted water to a boil. Add the fava beans and cook 30 seconds. Remove with a slotted spoon and transfer to the ice water; let cool about 5 minutes (keep the pot of water boiling). Drain the beans, then peel off their skins (they should slip right off). Add the pasta to the boiling water and cook as the label directs. Reserve about 1 1/2 cups cooking water, then drain the pasta.
  • Heat the olive oil, garlic, mint sprigs, parsley sprigs and all but 2 tablespoons of the scallions in a large skillet over medium heat. Cook, stirring, until the scallions are soft, 1 to 2 minutes. Add the favas and 1 cup of the reserved cooking water. Bring to a simmer and cook until the favas are tender and the liquid is slightly reduced, 8 to 10 minutes; discard the garlic and herb sprigs.
  • Add the pasta to the skillet and cook, tossing until it absorbs some of the sauce, about 3 minutes. Stir in the butter, chopped mint and parsley, reserved scallions, and salt and pepper to taste. Add more cooking water to loosen, if needed. Serve warm or at room temperature.
  • Tip: If you can't find fresh fava beans, use frozen shelled and skinned ones and blanch as directed.

PASTA WITH FAVAS, SHRIMP, AND FRESH CHILE

This quick pasta features fava beans; they're like a cross between asparagus and split peas, with a buttery texture and nutty taste that defines seasonal spring vegetables. They star alongside shrimp and pancetta is a dish that's a cinch to make.

2 pounds fava beans in pods
Kosher salt and freshly ground pepper
1 pound fresh long pasta, such as tagliatelle, or 12 ounces dried spaghetti
6 ounces pancetta, cut into 1/4-inch pieces (1 cup)
3 tablespoons extra-virgin olive oil, divided, plus more for drizzling
3 large cloves garlic, thinly sliced
1 pound large shrimp, peeled, halved lengthwise, and deveined
1 Fresno chile, thinly sliced
1 lemon, halved

Steps:

  • Prepare an ice-water bath. Remove favas from outer pods and cook in a pot of salted boiling water until they float, 1 to 2 minutes. Transfer to ice-water bath; drain. Pinch tops of favas and squeeze out bright-green beans; you should have about 1 1/4 cups. (Blanched beans can be refrigerated in an airtight container up to 2 days, or frozen up to 3 months.)
  • Cook pasta in a large pot of salted boiling water until al dente, about 2 minutes for fresh, 8 to 10 minutes for dried. Reserve 1 cup pasta water, then drain.
  • Meanwhile, in a large straight-sided skillet, heat pancetta with 1 tablespoon oil over medium. Cook, stirring occasionally, until golden brown, 6 to 8 minutes. Add fava beans and stir to coat; season with salt and pepper. Remove from heat; using a slotted spoon, transfer pancetta and beans to a bowl.
  • Return skillet to medium-high heat and swirl in remaining 2 tablespoons oil. Add garlic and cook until just fragrant, about 30 seconds. Add shrimp and cook, flipping once, until garlic is golden and shrimp curl and just turn opaque, about 2 minutes (they will continue to cook as they mix with the hot pasta).
  • Stir in sliced chile and fava-pancetta mixture. Add cooked pasta and 1/4 cup reserved pasta water to skillet and cook, stirring vigorously, 1 to 2 minutes. Remove from heat; add more pasta water, a spoonful at a time, and drizzle in a bit more oil if needed to create a silky sauce. Squeeze lemon over top and season to taste; serve immediately.

FETTUCCINE WITH MERGUEZ AND MINT PESTO



Fettuccine With Merguez and Mint Pesto image

For a pasta dish with sausage that's bold and rustic, easy to whip up for dinner but intriguing enough for entertaining (the recipe can be doubled), I opted for merguez, the North African lamb sausage. The trick is having a market that sells merguez, or order it in bulk online to keep a supply in the freezer. To the merguez, I added the flavors of Morocco: mint, garlic, lemon, sun-dried tomatoes, olives and a dusting of ground cumin. Thanks to some pasta water, these components all came together admirably to dress the pasta and suit the Bordeaux.

2 large cloves garlic
1/4 cup pine nuts
2/3 cup, packed, fresh mint leaves (about 2 small bunches)
1/3 cup extra-virgin olive oil
Salt
1 tablespoon extra-virgin olive oil
1 large onion, finely chopped
1 teaspoon ground cumin
1/2 pound fresh merguez sausage, casing removed
6 sun-dried tomatoes in oil, drained and finely slivered
15 Kalamata olives, pitted
8 ounces dried fettuccine, preferably spinach
2 tablespoons lemon juice
Salt

Steps:

  • Make the pesto: Turn on food processor, and drop garlic through feed tube to mince. Add pine nuts through the tube and grind. Add mint leaves and process until mixture is combined. Scrape down bowl, and with machine running, slowly drizzle in the 1/3 cup olive oil. Process until blended. Transfer to a small bowl and season to taste with salt. Set aside.
  • Make the pasta: Heat 3 quarts water in a large pot. As water comes to boil, heat oil in a large sauté pan, and sauté onion on medium-low until soft. Stir in cumin. Add merguez, increase heat to medium and cook, using two forks to break up the sausage and stirring all the while, until the meat is nubbly and no longer looks raw. Stir in sun-dried tomatoes, olives and 2 tablespoons of the pesto. Reduce heat to low.
  • Add fettuccine to boiling water and cook about 5 minutes, until nearly al dente. Drain, reserving 3/4 cup of the pasta water, and set pasta aside. Add pasta water to the merguez mixture and let cook until liquid in the pan just coats the ingredients. Stir in lemon juice. Add fettuccine to sauté pan, tossing with other ingredients over low heat. Add salt to taste. Transfer to individual bowls or a serving dish and serve with remaining pesto alongside.

250g shelled fresh peas (just under 900g/2lb in their pods)
2 fat garlic cloves , finely chopped
50g pine nuts , toasted
50g fresh parmesan cheese, chopped into small chunks
good handful fresh mint leaves (about 20g/¾)
6 tbsp extra-virgin olive oil
350g dried spaghetti
freshly grated parmesan cheese
extra-virgin olive oil

Steps:

  • Cook the peas in boiling water for 2-3 minutes until just tender, then drain and refresh in cold water. Pat dry.
  • Tip the peas into a food processor and add the garlic, pine nuts, parmesan, mint and olive oil. Season with salt and pepper, then pulse very briefly until the ingredients are roughly chopped. Don't overdo it - they should still have lots of texture. (You can freeze the pesto at this point.)
  • Cook the spaghetti according to packet instructions until al dente - that's with a bit of bite still. Drain, reserving some of the cooking water.
  • To serve, toss the spaghetti with the pesto and about 2 tbsp of the water. Pile into warmed bowls and serve at once, with parmesan and olive oil at the table.
