Liven up midweek pasta with a fiery sausage and chilli hit

200g pasta shapes
150g pack purple sprouting broccoli , cut into pieces
2 tbsp extra-virgin olive oil
2 garlic cloves , sliced
½ tsp fennel seeds (optional)
½ tsp crushed red chillies
2 Italian-style pork sausages , skins removed and meat broken into pieces
parmesan shavings, to serve

Steps:

  • Bring a large pan of water to the boil and cook the pasta until nearly al dente. Throw in the broccoli and cook for 2 mins more. Drain, saving 1-2 tbsp of the water.
  • Heat the oil in a large frying pan and add the garlic, fennel seeds, if using, and chillies. When they start to colour a bit, add the sausage and cook until golden and cooked through. Tip in the pasta and broccoli with the reserved water and toss. Serve hot with the Parmesan shavings.

Number Of Ingredients 9

1 head broccoli (approximately 3/4 lb.)
2 1/2 links sweet Italian sausage
1 tablespoon olive oil
4 garlic cloves, minced
1/2 teaspoon red pepper flakes
1/2 teaspoon fennel seed
1 lb dried short pasta such as fusilli, penne, ziti
salt & pepper
2 ounces pecorino romano cheese, grated

Steps:

  • Bring a large pot of salted water to a boil.
  • Clean broccoli & separate florets from the stems. Remove the tough peel from the stems & cut into cubes. Place in steamer & steam to desired tenderness. Reserve the broccoli water.
  • Remove the casings from the sausage. Heat the olive oil to medium high and brown the sausage flattening & chopping until all is browned.
  • Add garlic, fennel seed & red pepper flakes. Cook until garlic is pale brown. Remove from the heat.
  • Add steamed broccoli & 1/2 cup of the broccoli water to the sausage.
  • Add the pasta to the boiling water and cook according to package directions.
  • Scoop out the pasta & add to the sausage & broccoli along with 1/2 cup of the pasta water.
  • Reheat the sausage, broccoli & pasta & stir until the water mostly boils away & forms a nice sauce. 1 1/2 to 2 minutes.
  • If too dry add more water from pasta &/or broccoli.
  • Grate 1/2 ounce of pecorino romano cheese over pasta reserving the remaing cheese for tableside.
  • Salt & pepper to taste.
  • Can be reheated in microwave. Just sprinkle with a little water before heating.

This quick, yummy, fairly healthy recipe came from the internet (can't remember the site) and I modified it to our families taste. My Italian hubby grew up on this (although I make it a tad differently). We eat it as a main dish, although you could easily eat it as a side for any kind of meat or fish. Adjust the broth to your preferences, my husband likes it soupy, so this version has a lot of broth.

8 tablespoons olive oil
2 tablespoons butter
3 garlic cloves, minced
1 bunch broccoli, separated into florets (or 1 bag frozen florets)
2 cups chicken broth
1 cup fresh basil, chopped (adjust to your taste) or 1/2 teaspoon dried basil (adjust to your taste)
1 lb rigatoni pasta (you can use any pasta you like)
1/4 cup fresh parsley, chopped (dried, to taste)
1/8 teaspoon fresh ground pepper (to taste)
1/4 cup freshly grated parmesan cheese, to taste (and more for serving!)

Steps:

  • In a large skillet heat oil and butter; gently brown the garlic. Add broccoli; stir gently. Add chicken broth, cover, bring to boil, lower heat and simmer until broccoli is al dente.
  • Add the broccoli mixture to the rigatoni and flavor with basil, parsley, pepper and cheese. Stir until combined. Serve with cheese to sprinkle on top. Enjoy!

A beautiful two pan entree that'll please anyone who likes Italian sausage. Delicious with cheesy garlic bread and a sparkling white wine. My boyfriend and everyone in our families loves this dish!

1 (16 ounce) package farfalle (bow tie) pasta
1 tablespoon olive oil
1 pound bulk Italian sausage
2 cloves garlic, minced
2 ½ cups chicken broth
⅛ teaspoon crushed red pepper flakes
1 bunch broccoli rabe, trimmed
¼ cup butter
1 ½ cups grated Parmesan cheese
¼ teaspoon salt
¼ teaspoon black pepper

Steps:

  • Bring a large pot of lightly salted water to a boil over high heat. Add the farfalle pasta, and cook until al dente, 8 to 10 minutes; drain.
  • Meanwhile, heat the olive oil in a large skillet over medium-high heat. Stir in the Italian sausage until crumbly and no longer pink, about 5 minutes. Stir in the garlic, and continue cooking until the sausage begins to brown, about 5 minutes more. Pour off the excess grease, then pour in the chicken broth and red pepper flakes. Bring to a boil over high heat, then add the broccoli rabe, and cover. Cook until the broccoli rabe is tender, about 4 minutes.
  • When the broccoli rabe is done, stir in the butter, Parmesan cheese, salt, and pepper until the meat sauce has thickened. Toss with the farfalle and serve.

  • Bring a large pot of liberally salted water to a boil. While the water is heating, clean the broccoli: Separate the florets from the stems and set them aside. Remove the tough peel of the stems with a paring knife or vegetable peeler, then cut the stems into half-inch cubes. Remove the casings from the sausage.
  • Warm the olive oil in a large skillet over medium-low heat and crumble the sausage meat into the oil, flattening each piece slightly so it will brown better. Cook until the sausage browns and crisps. Add the garlic and red pepper flakes and cook until the garlic turns pale brown, about 5 minutes. Do not let the garlic scorch; if it begins to brown, remove the pan from the heat.
  • Add the pasta and the diced broccoli stems to the boiling water and cook 6 to 7 minutes. Add the broccoli florets and cook until the pasta is tender, about 10 minutes total. Scoop out the pasta and broccoli and drain; keep the water at a boil.
  • Place the skillet over high heat and add the drained broccoli and pasta to the sausage and garlic. Add one-half cup boiling water from the pasta pot. Cook, stirring frequently, until the water mostly boils away, about 1 1/2 to 2 minutes. Season to taste with salt and a good grinding of black pepper.
