Juicy sweet cherry tomatoes burst open in warm olive oil, creating a luxuriously silky sauce that comes together in minutes.

1 pound pasta
Kosher salt
1/2 cup olive oil
2 large garlic cloves, finely chopped
3 pints cherry tomatoes
1/2 teaspoon freshly ground black pepper
Pinch of sugar
1 cup coarsely chopped fresh basil
Freshly grated Parmesan (for serving)

Steps:

  • Cook pasta in a large pot of boiling salted water, stirring occasionally, until al dente; drain and transfer to a large bowl.
  • Meanwhile, heat oil in a 12" skillet or wide heavy saucepan over medium-high. Add garlic, then tomatoes, pepper, sugar, and 1 tsp. salt. Cook, stirring occasionally, until tomatoes burst and release their juices to form a sauce, 6-8 minutes.
  • Toss pasta with tomato sauce and basil. Top with Parmesan.

A quick and easy sauce made using juicy, bursty cherry tomatoes (also known as nature's Gushers). If cherry tomatoes are unavailable, any larger tomatoes will suffice for this summertime pasta sauce recipe. Cut them into tiny pieces, about the cherry tomatoes size, and set them aside. And go from there. In warm olive oil, juicy sweet cherry tomatoes break open, resulting in a wonderfully silky sauce that comes together in minutes.

3 pints cherry tomatoes
½ tsp freshly ground black pepper
½ tsp Pinch of sugar
1 cup coarsely chopped fresh basil
½ cup Freshly grated Parmesan (for serving)
1 pound pasta
½ tsp Kosher salt
½ cup olive oil
2 cloves large garlic , finely chopped

Steps:

  • Cook pasta until al dente in a massive pot of salted boiling water, stirring periodically; drain and transfer to a large mixing bowl.
  • Meanwhile, in a 12" skillet or a large, heavy pan, heat the oil over medium-high heat in a heavy saucepan. After that, add the garlic, tomatoes, pepper, sugar, and 1 teaspoon salt.
  • Cook, stirring periodically, for 6-8 minutes, or until tomatoes burst and release their juices, forming a sauce.
  • Combine the pasta, tomato sauce, and basil in a mixing bowl. Finish with a sprinkling of Parmesan cheese.

  • Heat ½ cup oil in a large heavy pot over low. Add garlic and cook, stirring, until softened and fragrant but not browned, about 2 minutes. Increase heat to medium and add tomatoes, red pepper flakes, basil sprigs, and 1½ tsp. salt. Cook, stirring to coat, until tomatoes begin to burst, about 4 minutes. Smash some but not all of the tomatoes with the back of a wooden spoon to help create a sauce, then continue to cook, stirring occasionally, until a chunky, thickened sauce comes together and about half the tomatoes are completely broken down and half remain in tact, 10–12 minutes. Taste and adjust seasoning, adding sugar if sauce seems tart. Pluck out and discard basil sprigs.
  • Meanwhile, cook pasta in a large pot of boiling salted water, stirring occasionally, until al dente. Drain pasta, add to pot with sauce, and cook over medium heat, stirring, until coated, 1–2 minutes. Remove from heat and stir in 1 oz. Parmesan.
