PIEROGIES - AUNTIE MARY'S RECIPE
Auntie Mary is celebrated in the family for her pierogies. Many years ago I made pierogies with her one afternoon. She didn't use any measurements - she knew how to make them instinctively. I suspect one of her daughters helped with documenting the measurements. Her own notes follow. "It is much easier to glue pierogi before cooking if you moisten half of the edge of a dough circle with some water. Also remember that air should be squeezed out of the pierogi. Otherwise, they will tear during cooking. Keep an eye on it." Thank you Auntie Mary.

Steps:
- Dough- combine all ingredients and knead well. (Elaine's method: Mixed moist ingredients quickly in food processor then added the flour to knead until it formed a ball. Put in fridge to rest up to 2 days,) Roll out and cut with a 2 inch round cookie cutter. Fill with potato, sauerkraut or fruit fillings. Place 1 tsp. filling on each piece, fold over and pinch edges together. Drop into boiling water for 7 to 8 minutes or until Pierogies float to the top. Remove from pot. Place in a large bowl and top with melted butter.
- Potato-Cheese Filling: Combine all ingredients and mash well together. Yield 4 dozen.
- Sauerkraut Filling: Cook sauerkraut approximately 20 minutes. Drain and press out water. Saute onion in butter until golden. Add sauerkraut, salt and pepper. Fry for 10 minutes. Cool before putting fillings into Perogies. Yield: 4 dozen
- Prune or Plum Filling: Boil fruit for 20 minutes. Drain and cool. Remove seeds and chop finely. Sprinkle with sugar. Put one plum or prune per pierogy.
- You can freeze the pierogies before boiling or after boiling. Freeze the pierogies on parchment in a single layer on a cookie sheet. After freezing put them in a container. Put parchment between layers so they don't stick together. Boil or fry them after thawing. Serve with sour cream, applesauce or gravy.
HOMEMADE BLOODY MARY MIX
Mother-in-law gave me this recipe. It tastes better then the name brand store stuff. Spice it up or down to your tastes. Chill and mix with desired amount of vodka and ice.

- Stir tomato juice, lime juice, pickled jalapeno pepper juice, vinegar, white sugar, Worcestershire sauce, horseradish, salt, pepper, cloves, onion powder, and garlic powder in a 2-quart pitcher.

MADELEINES
Steps:
- Melt the butter either in your microwave or in a small pot over medium heat. Browning the butter will add a lovely depth or flavor to the cakes but is of course optional. Once melted or browned pour the butter into a bowl and allow to cool.
- Sift the flour, salt, and baking powder into a bowl then whisk together and set aside.
- Add the eggs and sugar to the bowl or your stand mixer fitted with a whisk attachment or a large bowl if using an electric hand mixer. Beat on high until the mixture is a light yellow color with a thick silky texture, about 8-9 minutes. You'll see the beater leave trails when it's ready. Mix in the vanilla and lemon zest toward the end.
- Fold the dry ingredients into the egg mixture and mix until just combined. You can sift the flour mixture into the eggs while you fold to avoid getting lumps or over-mixing the delicate batter.
- Drizzle the butter into the batter and gently mix until just combined.
- Cover and chill the batter as well as the buttered tins for 1 hour then scoop one tablespoon of batter into each scallop-shaped well. Bake at 350F 8-10 minutes.
- Serve with a light dusting of powdered sugar.

Steps:
- 1. Melt together butter, worcestershire, seasoned salt and garlic, add other ingredients. Put on a cookie sheet and bake at 250 degrees 45 minutes, stirring occasionally.
- 2. Notes: Use shredded wheat, wheat chex, peanuts, pretzels or rice chex if you don't like shredded wheat. Or you can combine any of the above.
AUNT MARGIE'S DELICIOUS COOKIES
Steps:
- Mix sugars, egg, oil, oleo and vanilla. Add remaining ingredients and mix well.
- Drop onto cookie sheet by spoonful and press down with fork.
- Bake at 350°F for 12-15 minutes.
