Cucumber Salad with Herb & Garlic Dressing (Vinaigrette) image

Recipe video above. Crisp, juicy cucumber and a tasty Herb & Garlic Vinaigrette makes for a sensational salad!! It's refreshing with extra flavour from the dressing - I can eat SO MUCH of this!! A touch of mustard is key here - thickens the dressing to help it coat the cucumber slices.

3 cucumbers (, standard (or 2 long Telegraph/English cucumber(Note 1))
1/2 red onion (, finely diced)
1 1/2 tbsp red wine vinegar ((Note 2))
3 tbsp extra virgin olive oil
1 garlic clove (, minced)
1/2 tsp Dijon mustard
3/4 tsp mixed dried herbs ((Note 3 sub))
1/2 tsp white sugar ((optional))
1/2 tsp salt and black pepper (, EACH)

Steps:

  • Shake Dressing in a jar.
  • Cucumber: Trim ends then slice about 3 mm/ 1/8" thick.
  • Place in bowl with red onion.
  • Pour over Dressing, toss gently and serve immediately.

Easy all-star Mediterranean salad with three star ingredients: tomatoes, cucumbers, and parsley, seasoned simply and dressed in extra virgin olive oil and lemon juice! You'll love this everyday cucumber and tomato salad next to your favorite Mediterranean entrees. You can change it up by adding feta cheese, chickpeas, or even a cup of cooked couscous to turn it into a meal!

6 Roma tomatoes, (diced (about 3 cups diced tomatoes))
1 Large English cucumber, (or hot-house cucumber, diced)
1/2 to 3/4 cup chopped fresh parsley leaves
kosher salt, (to taste)
1/2 tsp black pepper
1 tsp ground Sumac
2 tbsp extra virgin olive oil,
2 tsp freshly squeezed lemon juice

Steps:

  • In a large mixing bowl, place the diced tomatoes, cucumbers, and parsley. Season with kosher salt and toss. Set aside for 5 minutes or so.
  • Add the sumac, olive oil, and lemon juice. Give the salad a gentle toss. Enjoy!

This is an old recipe from one of Julia Child when she had her TV cooking show..I remember I wrote it on an envelope-couldn't find any paper.Found it again while sorting out some of my cook books for garage sale.

Number Of Ingredients 9

3 medium slender cucumbers,peeled, sliced 1 inch thick (4 cups)
1 Tbsp butter
2 Tbsp finely chopped onion
2 Tbsp all purpose flour
1 1/2 tsp salt
1/8 tsp pepper
1 1/2 c whole milk
1 large egg, beaten
2 Tbsp finely chopped fresh parsley

Steps:

  • 1. Cook cucumbers, covered, in 1 inch boiling water, 10 minutes; drain well.
  • 2. In a medium skillet melt the butter, sauté the onion until golden, about 5 minutes. Remove from heat. Add flour, salt, and pepper, stirring until smooth.
  • 3. Gradually stir in milk; bring to boiling, stirring until thickened. Stir a small amount of the hot sauce into egg; then pour back into skillet. Add cucumbers.
  • 4. Over low heat, bring cucumber mixture just to boiling, stirring. Sprinkle with parsley. Enjoy.

STEAMED PARSLEYED CUCUMBERS

2 large firm cucumbers
1 tablespoon butter
2 tablespoons chopped Italian parsley
1/2 teaspoon ground coriander
1/4 teaspoon ground cumin
Juice of 1/2 lemon
Salt and freshly ground white pepper to taste

Steps:

  • Trim off the ends of the cucumbers and remove the skin. Cut the cucumbers into pieces 2 inches thick. Quarter each piece lengthwise and remove the seeds.
  • Place the cucumber pieces into a rack of a steamer over boiling water. Steam 2 minutes or until tender.
  • Heat the butter in a saucepan, and add the cucumber, parsley, coriander, cumin, lemon juice, salt and pepper. Toss and cook 30 seconds.

1/2 cup water
Salt to taste
1 tablespoon butter
4 tablespoons chopped parsley
Freshly ground pepper to taste
1/4 teaspoon ground cumin
2 tablespoons lemon juice

Steps:

  • Trim off the end of the cucumbers, peel and cut them in pieces 2 inches in length. Quarter each section lengthwise with a paring knife. Remove the seeds, leaving only the flesh.
  • Bring the water, with salt, to a boil in a saucepan. Add the cucumbers and cook for about 1 minute. Do not overcook. Drain. Return the cucumbers to the saucepan and add the butter, parsley, salt, pepper, cumin and lemon juice. Cook and toss until the butter is melted

Number Of Ingredients 6

8 small red-skinned potatoes, about 3/4 pound
2 large firm cucumbers, washed
1 tablespoon butter
2 tablespoons finely chopped Italian or flat parsley
Salt and freshly ground pepper to taste
Juice of 1/2 lemon

Steps:

  • Using a sharp knife, cut the potatoes in half and peel some skin off, leaving a band in the center for color.
  • Trim off the ends of the cucumber and remove the skin. Cut the cucumbers into 2-inch rounds. Quarter each slice lengthwise and remove the seeds.
  • Put the potatoes in the rack of a steamer over boiling water and steam for 10 minutes. Add the cucumbers and steam for 3 minutes more. Do not overcook.
  • Heat the butter in a saucepan and add the potatoes, cucumbers, parsley, salt and pepper. Add the lemon juice and toss. Heat for 30 seconds.

3 firm cucumbers
3 ripe plum tomatoes
1 tablespoon butter
1 tablespoon fresh lemon juice
Salt and freshly ground pepper to taste
3 tablespoons chopped fresh parsley

Steps:

  • Trim the ends off the cucumbers and cut them into 2-inch lengths. Quarter each section lengthwise. Carefully cut away the skin with a paring knife and remove the seeds, leaving only the flesh.
  • Core the tomatoes and drop them into boiling water for 10 seconds. Remove the skins with a paring knife. Cut the tomatoes into small cubes.
  • Place the cucumbers in a saucepan and cover with water. Bring to a boil and cook for about 1 minute. Drain in a colander.
  • Return the cucumbers to the saucepan. Add the butter, lemon juice, tomatoes, salt and pepper. Mix in the parlsey and toss until the butter melts. Serve hot.
