Number Of Ingredients 5

1 1/2 lb small red potatoes peeled
vegetable oil for deep frying
salt
1 c freshly parmigiano-reggiano cheese
2 Tbsp black truffle oil

Steps:

  • 1. use a mandolin to slice the potatoes very thin. Soak them in cool water for 30 minutes. Drain and dry completely.
  • 2. Heat the oil to 360 degrees. Deep fry the potatoes for 3 to 5 minutes until golden brown. Drain on paper towels. Season with salt. Transfer the potatoes to a bowl
  • 3. Toss with the truffle oil and cheese. Serve immediately

2 pounds red bliss potatoes scrubbed well, patted dry, skins left on
4 cups vegetable oil for frying
1/4 cup grated Parmesan
1 tablespoon truffle oil
1 teaspoon salt
1 teaspoon freshly-ground black pepper

Steps:

  • Using a mandolin or very sharp, heavy knife, slice the potatoes into rounds as thin as possible, and place in a large bowl of water to prevent discoloration. Heat the oil in a large, heavy pot to between 340 and 350 degrees. Pat the potatoes completely dry. Add to the oil in batches and cook until golden brown, stirring with a long handled spoon to turn and cook evenly, about 2 minutes. Drain on paper towels and place in a large bowl. Toss with the cheese, truffle oil, salt, and pepper. Serve immediately. This recipe yields 8 servings.
