Tender, juicy pork chops with a crisp panko breading.

4 pork chops (thick cut 3/4 to 1 inch)
1 cup panko bread crumbs
1/2 cup all purpose flour
2 eggs
4 tablespoons milk
1/2 teaspoon smoked paprika
1/2 teaspoon garlic powder
1/2 teaspoon thyme
1 teaspoon salt
1/2 teaspoon pepper
olive oil for frying

Steps:

  • Preheat oven to 350 degrees F.
  • Line baking sheet with parchment paper. This will help prevent the breading from sticking to the baking sheet.
  • Set up 3 stations, I use pie plates for this.
  • Station 1 - all purpose flour
  • Station 2- mix together eggs and milk
  • Station 3 - mix together panko bread crumbs, paprika, garlic powder, thyme, salt & pepper
  • Dust pork chops with flour, shake off excess.
  • Immediately dip into egg mixture.
  • Next press into bread crumb mixture ensuring a good coating of bread crumbs.
  • Heat olive oil to large frying pan.
  • Brown the pork chops on medium heat just until golden brown on each side.
  • Transfer to baking pan to finish cooking in the oven for thicker cut pork chops.
  • Bake at 350º for 20-30 minutes until internal temperature reaches 145 degrees.
  • If using thinner cut pork chops you can skip baking in the oven and just use the stovetop.

1 1/2 cups buttermilk
1 1/2 cups all-purpose flour
2 tablespoons Miss Brown's House Seasoning, recipe follows
1 tablespoon hot sauce
1 teaspoon yellow mustard
4 thin bone-in pork loin chops (about 2 pounds total)
Canola oil, for frying
1 tablespoon unsalted butter
1 tablespoon all-purpose flour
3/4 cup half-and-half
Generous pinch of Miss Brown's House Seasoning, recipe follows
Kosher salt and freshly ground black pepper
1 1/2 teaspoons garlic powder
1 1/2 teaspoons onion powder
1 1/2 teaspoons sweet paprika
1 1/2 teaspoons kosher salt
1 1/2 teaspoons freshly ground black pepper

Steps:

  • For the pork chops: Pour the buttermilk into a shallow baking dish and set aside. In another shallow baking dish, stir together the flour and 1 tablespoon plus 2 teaspoons of the House Seasoning and set aside.
  • Stir together the hot sauce, mustard and the remaining teaspoon of the House Seasoning in a small bowl. Rub the seasoning onto both sides of the pork chops. Place the pork chops in the buttermilk and turn to coat completely.
  • Pour enough oil into a large cast-iron skillet to come 1 inch up the sides. Heat over medium-high heat until a deep-fry thermometer reaches 350 degrees F.
  • Working with one piece at a time, remove the pork chops from the buttermilk, letting any excess drip off. Coat in the flour mixture and carefully add to the hot oil. Fry, turning once, until the chops are browned and reach an internal temperature of 150 degrees F, about 4 minutes per side. Transfer to a clean wire rack set over a rimmed baking sheet to drain.
  • For the table gravy: Meanwhile, drain the oil from the skillet. Melt the butter over medium-high heat, then whisk in the flour and cook for a minute, whisking constantly. Whisk in the half-and-half, a little at a time. Bring the gravy to a simmer and simmer until thickened, whisking occasionally, 1 to 2 minutes. Whisk in the House Seasoning and season with salt and pepper.
  • Stir together the garlic powder, onion powder, paprika, salt and pepper in a small bowl.

1 cup vegetable oil for frying

Steps:

  • In a medium bowl, mix together the eggs, milk, garlic, salt and pepper. Heat oil in a large heavy skillet over medium-high heat. Place the panko crumbs in a shallow bowl.
  • Rinse pork chops with water, then dip in the egg mixture. Coat with panko crumbs, dip in the egg mixture again, then coat with another layer of panko crumbs. Lay coated chops on a plate until the rest are finished. If you have time, let them set for about 10 minutes, and the coating will set very well. If you wish to freeze the chops, now is the time.
  • When the oil is very hot, place pork chops into the pan, and fry for about 5 minutes on each side, until golden brown.

1 teaspoon seasoned salt (such as Lawry's®)
½ teaspoon garlic powder
½ teaspoon black pepper
¾ cup panko bread crumbs
2 (6 ounce) pork chops, about 1/2-inch to 3/4-inch thick
¼ cup oil

Steps:

  • Place beaten eggs on a large plate.
  • Mix flour, seasoned salt, garlic powder, and black pepper on another plate. Spread out panko bread crumbs on a third plate.
  • Dip pork chops in egg, then in flour, again in egg, and finally in panko. Press lightly on pork chops so that the panko adheres. Set aside and let rest while oil is heated.
  • Heat oil in a large skillet over medium heat. Add pork chops and cook uncovered until golden brown, 4 to 5 minutes. Unsalted butter, for cooking and serving
6 slices Texas toast (or thick-sliced bread of your choice)
1/4 cup powdered sugar
1 cup blueberries
1 cup strawberries
1 peach, sliced
Maple syrup, for serving

Steps:

  • Whisk together the flour, milk, granulated sugar, almond extract, vanilla extract, cinnamon, salt and eggs in a bowl until smooth.
  • Heat a frying pan over medium heat and add some butter.
  • Soak the bread slices in the mixture on both sides. Cook the bread until golden brown, 3 to 4 minutes per side. Sprinkle with the powdered sugar. Top with the fresh berries and peaches. Serve with maple syrup and butter.

Olive oil, for brushing
Kosher salt and freshly ground black pepper
Mint Pesto, recipe follows
2 cups fresh mint leaves
1/4 cup fresh basil leaves, roughly chopped
1/4 cup walnuts, toasted and cooled
2 cloves garlic
1/4 teaspoon crushed red pepper flakes
3 tablespoons freshly grated Parmesan
1/2 cup extra-virgin olive oil
1/2 teaspoon kosher salt
Freshly ground black pepper
2 teaspoons lemon zest

Steps:

  • Heat a grill pan over medium-high heat. Brush both sides of the lamb chops with olive oil and sprinkle with salt and black pepper.
  • Grill the chops 3 to 4 minutes per side, or until desired doneness is reached. Remove the chops to a plate and let rest 3 to 5 minutes before serving.
  • Place the chops on a platter and pour any juices that accumulated back over the chops. Spoon the Mint Pesto over and serve.
  • Add the mint, basil, walnuts, garlic, red pepper and Parmesan to a food processor. Pulse until the herbs are finely chopped. With the motor running, add the olive oil in a steady stream. Add the salt, pepper and lemon zest and pulse until combined. Set aside with plastic wrap set directly over the surface.

Look for beautiful good-quality pork, such as Berkshire, and ask for center-cut loin chops with bone. For the bread crumbs, use day-old firm white sandwich bread or French loaf, cubed and whirled in a food processor, for about three cups of soft, fluffy crumbs. Dry, fine store-bought crumbs will not yield the same result. Make sure to fry these chops very gently over medium-high heat, to allow the bread-crumb coating to brown slowly, creating a crisp, golden crust. Serve with a tart salad or braised greens, such as broccoli rabe.

When butter is hot, lay in the chops without crowding, and let them fry very gently, about 4 to 5 minutes per side, until beautifully golden brown. (Turn down heat if they seem to be browning too fast.) If your pan is small, cook in 2 batches and keep finished chops warm in a 250-degree oven.
  • Blot cooked chops on paper towels. Transfer to a warm platter or individual plates. Serve with lemon wedges.

1 teaspoon Italian seasoning blend

extra-virgin olive oil cooking spray

Steps:

  • Pour 1 cup water in a 4-cup microwave-safe measuring cup. Microwave until boiling, about 4 minutes. Stir in kosher salt and sugar, until dissolved. Add remaining 3 cups water to make a brine.
