I don't know anyone who doesn't LOVE brownies. But go Paleo ... and Gluten Free ... and you feel they COULD be out of reach. Along with pizza, pasta, pie and ... y'know ... all those comfort foods you've learned to love. But here's a brownie recipe to die for ... and Paleo to boot!

¾ cup walnut halves and pieces, divided
⅓ cup coconut oil, melted
4 oz unsweetened baking chocolate
1 cup almond flour
1 cup coconut (palm) sugar (or Lakanto )
3 eggs
1 tbsp vanilla extract (the pure stuff)

Steps:

  • Preheat the oven to 350 degrees F.
  • Chop and toast 1/2 cup walnuts in 350-degree oven until browned (alternately toast in a skillet), about 10 minutes. Remove from oven and set aside.
  • Line an 8 x 8 x 2-inch baking dish with parchment paper and set aside.
  • In a small saucepan, heat the coconut oil and chocolate over low heat until melted (alternately heat in small bowl on 50% power for 2 minutes in the microwave). Remove for heat, cool slightly, and set aside.
  • In a medium bowl, combine the almond flour and coconut sugar and mix to combine.
  • Add the melted chocolate mixture and mix until combined.
  • Add the eggs and vanilla and combine all ingredients. Fold in the toasted walnuts.
  • Pour the batter into the prepared pan and spread evenly.
  • Use the remaining walnut halves to top the batter.
  • Bake at 350 degrees F for 25-30 minutes until a toothpick inserted in the middle comes out clean.
  • Remove brownies from the oven and cool completely on a wire rack before slicing.

1 cup (120 g) almond flour
1/3 cup (32 g) cacao powder
1/3 cup (80 g) coconut sugar
1 teaspoon (2 g) baking powder
1/2 teaspoon (3 g) salt
2 large eggs, whisked
1 teaspoon (5 ml) vanilla extract
1/3 cup (80 ml) melted coconut oil, cooled to room temperature
1/3 cup (40 g) finely chopped walnuts
1/3 cup (53 g) chocolate chips (optional)

Steps:

  • Preheat the oven to 350 F (175 C). Line an 8-inch (20 cm) square baking pan with parchment paper and set aside.
  • Combine the almond flour, cacao powder, coconut sugar, baking powder and salt in a large bowl.
  • Add the whisked eggs, melted coconut oil, vanilla extract and chopped walnuts to the bowl and mix to form a smooth batter. If desired, use a rubber spatula to fold-in the optional chocolate chips until completely incorporated. Pour the batter into the prepared baking pan.
  • Place the baking pan in the oven and bake for 30 to 40 minutes until the brownies are cooked through and a toothpick inserted into the center comes out clean.
  • Remove from the oven and let cool completely before removing the browning from the pan and cutting into squares.

1 3/4 cup walnut meal (purchased or ground in a food processor)
3/4 cup Dutch process cocoa powder
1 1/2 teaspoons baking powder
1 1/2 teaspoons baking soda
1/2 teaspoon fine sea salt
2 large eggs (room temperature)
1 cup coconut milk (room temperature)
1/2 cup honey or maple syrup 2 teaspoon vanilla extract
1/3 cup extra virgin coconut oil (gently melted)
1/4 cup chopped walnuts for topping (optional)
Butter for greasing pan

Steps:

  • Adjust oven rack to middle position. Preheat oven to 350°F. Butter a 13x9x2 inch baking pan. In a medium bowl, mix together dry ingredients until well blended. Set aside. In a small bowl, whisk eggs for one minute, then add coconut milk, honey or maple syrup and whisk again. Add melted coconut oil and whisk until wet ingredients are completely blended. Add wet mixture to dry ingredients and whisk well; be sure to scrape sides and bowl bottom so no pockets of dry ingredient remain. Batter will be thinner consistency than conventional brownies. Pour batter into prepared bans. If desired, sprinkle chopped walnuts on top of batter. Bake 35 to 40 minutes. Cool completely before cutting.
