12 tablespoons unsalted butter (room temperature)
2 eggs
1 egg yolk
1½ teaspoon vanilla extract
½ teaspoon maple extract
½ cup sour cream
1 cup whole milk
8 oz cream cheese, room temperature
4 tablespoons unsalted butter, room temperature
½ cup fresh light brown sugar ((soft, with no lumps))
½ teaspoon vanilla extract
½ teaspoon maple extract
salt, pinch
2½ cups powdered sugar
½ cup buttered pecan chips

Steps:

  • Preheat oven to 350. Generously grease 2 9-inch cake pans with shortening and lightly dust with flour. Set aside.

2 cups butter (softened)
1 cup granulated sugar
1 ½ cup brown sugar, packed
6 large eggs (room temperature)
1 tablespoon vanilla extract
¼ teaspoon table salt
1 ½ teaspoon baking powder
4 cups all-purpose flour sifted (spooned and leveled; divided)
1 cups buttermilk (room temperature)
4 cups chopped toasted pecans

Steps:

  • Preheat oven to 325°. In a small bowl toss pecans with ¼ cup flour
  • Beat butter on medium speed with a stand or hand mixer. Gradually add in granulated and brown sugar and beat until light and fluffy (3 to 5 minutes). Add eggs in 1 at a time, beating until just blended. Stir in vanilla.
  • In a medium bowl stir together baking powder, salt, and 3 ¾ cups flour. Add this flour mixture to the butter mixture, alternating with buttermilk. Beging and ending with flour mixture until just combined. Do not over mix. Gently stir pecans into the batter.
  • Spray a 10-inch tube or 10 to 12 cup bundt pan with baking spray or butter and flour pan. Pour batter into the pan and smooth the top with spatula.
  • Bake for 70 to 90 minutes or until a wooden pick comes out mostly clean. Check at about 45 minutes and if the cake is browning too quickly add foil over the top and finish baking. Cool in pan for 15 minutes and then turn onto a cooling rack to finish cooling.

Combine the flour, baking powder and salt; add to the creamed mixture alternately with milk, beating well after each addition., In a large bowl with clean beaters, beat egg whites until soft peaks form. Gradually beat in remaining sugar, 1 tablespoon at a time, on high until stiff peaks form. Fold into batter. Fold in nuts., Transfer to prepared pans. Bake at 350° for 18-22 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pans to wire racks to cool completely., For filling, in a small heavy saucepan, combine sugar and cornstarch; gradually stir in milk until smooth. Cook and stir over medium-high heat until thickened and bubbly. Reduce heat to low; cook and stir 2 minutes longer., Remove from the heat. Stir a small amount of hot mixture into egg yolks; return all to the pan, stirring constantly. Bring to a gentle boil; cook and stir for 2 minutes. Remove from the heat; stir in butter and vanilla. Cool., For frosting, in a large heavy saucepan, combine the sugar, egg whites, water and cream of tartar over low heat. With a hand mixer, beat on low speed for 1 minute. Continue beating on low over low heat until frosting reaches 160°, about 8-10 minutes. Pour into a large bowl; add vanilla. Beat on high until stiff peaks form, about 7 minutes., Spread filling between cake layers. Frost cake. Store in the refrigerator.

1 ¼ cups butter
2 cups chopped pecans
3 cups sifted all-purpose flour
2 teaspoons baking powder
½ teaspoon salt
2 cups white sugar
4 eggs
1 cup milk
2 teaspoons vanilla extract
¼ cup butter
1 teaspoon vanilla extract
¼ teaspoon salt
4 cups sifted confectioners' sugar
⅓ cup heavy whipping cream

Steps:

  • Grease and flour bottoms of three 9 inch layer pans. Preheat oven to 350 degrees F (175 degrees C).
  • Melt 1/4 cup butter in heavy skillet over medium heat. Add pecans and brown 10 to 15 minutes, stirring frequently.
  • Sift flour with baking powder and 1/2 teaspoon salt. Cream remaining butter in large mixing bowl. Gradually add 2 cups sugar; cream at high speed of mixer until light and fluffy. At medium speed blend in eggs, one at a time, beating well after each. At low speed add sifted dry ingredients alternately with milk and vanilla extract, beginning and ending with dry ingredients. Blend well after each addition. Stir in 1 1/3 cups pecans. Pour batter into pans.
  • Bake for 25 to 30 minutes, until cake is golden brown and springs back when lightly touched in center. When cool, blend remaining pecans with Creamy Butter Frosting; spread between layers and on top.
  • To Make Creamy Butter Frosting: Cream 1/4 cup butter or margarine in mixing bowl. Add 1 teaspoon vanilla extract, salt, 4 cups confectioners' sugar and 1/3 to 1/2 cup cream. Beat until smooth and of spreading consistency. If necessary, thin with additional cream.

FROSTING
2 cup(s) white sugar
1 cup(s) evaporated milk
1 teaspoon(s) butter

Steps:

  • Prepare cake mix according to box directions adding 1 tsp. almond extract. Make 4 layers. Cook and let cool.
  • Frosting: Cook 2 cups sugar with evaporated milk until mixture pulls away for the pot. (Black iron pot is the best) Add 2 cups pecans. Remove from heat, add 1 teaspoon butter and 1 teaspoon almond extract, stir until shiny.

1 ½ cups white sugar

Steps:

  • Preheat oven to 300 degrees F (150 degrees C). Grease an 11x14-inch baking dish.

1 cup milk
¼ cup coconut milk
2 teaspoons vanilla extract
