Here's how to make ground beef or venison jerky with or without a jerky gun. Simply season the meat, press into thin strips, then dehydrate. A perfect low carb snack!

3 pounds ground beef or venison
5 teaspoons garlic powder
4 teaspoons sea salt
4 teaspoons fresh ground pepper
1 tablespoon liquid smoke

Steps:

  • Combine all ingredients in a large mixing bowl.
  • Using a jerky gun, press thin strips onto dehydrator racks. Or, roll thin between parchment paper, cut into strips and place on racks.
  • Dehydrate for 7-12 hours until dry and crisp.
  • Store up to 7 days in refrigerator or freeze for longer storage.

I began making jerky in 1997. I usually make about 20-30 batches per year. I have tried a myriad of recipes and finally came up with my own that I have used almost exclusively for the past 5 or 6 years. I primarily make beef and venison jerky, but have tried a number of other critters with good success (squirrel jerky was one of the toughest jerky's ever!) Hope you like it. I use a CONVECTION STYLE dehydrator (warming coils on bottom, warm air rises...bottom trays dry out first. Must rotate trays at about 12 +/- hours. FORCED AIR style dehydrators are much easier to use, faster, and...I'll buy one when my old convection-style RONCO dehydrator finally breaks. Finally, I know a lot of recipes state to make jerky in your oven. Due to the strong aroma, I make mine in my garage. The aroma is very good, but the seasonings are very strong. I'd compare it to baking 6 or 7 roasts at a time.

4 lbs lean beef, venison, rabbit, squirrel, etc (Eye of Round, London Broil, Round Roast, etc.)
20 ounces Kikkoman soy sauce (this is waaaay less salty than other soy sauces out there and low carb too.)
8 ounces liquid smoke (i prefer Mesquite but will also use Hickory)
2 tablespoons minced garlic cloves (more or less to suit. I prefer California Sun-Dry Garlic with sun dried tomatoes)
2 -10 drops habanero sauce (OPTIONAL, I use Dave's Ultimate Insanity Sauce)

Steps:

  • Mix Soy Sauce, liquid smoke, minced garlic, and (optional hot sauce) in large bowl. Set aside.
  • Trim fat from beef. Discard.
  • Slice beef into thin slices about 1-inch by 2-inches by 1/8-inch thick is about as small as I would go. Thinner slices dehydrate quicker!
  • Add beef into marinate, stir, cover, and place in refrigerator.
  • Periodically, about once per hour, stir beef and marinate. Marinate for 3 (minimum) to "whatever" hours. Longer marinating time equals more flavor. After about 12 hours, there is minimal change in flavor.
  • Drain marinate from beef in colander.
  • Place marinated meat slices on dehydrator trays. Try not to overlap the meat. Plug in dehydrator and follow manufacturer's instructions for drying time. (Convection dehydrators will require more time and trays will need to be changed. Forced air dehydrators may not require tray changes.).

Many commercially prepared meat jerky contain sugar in the marinade. Making your own venison or beef jerky takes a bit of time but it is well worth it.

1 pound boneless venison or beef
4 tablespoons coconut aminos (or tamari, or soy sauce)
2 tablespoons Worcestershire sauce (or homemade version)
1 tablespoon liquid smoke flavoring (provides a nice smoky flavor)
1/4 teaspoon pepper
1/4 teaspoon garlic powder
1 teaspoon salt
1/4 teaspoon onion powder

Steps:

  • Slice meat into thin pieces (this is easiest to do if meat is still frozen). For a softer jerky, it's best to soak the meat slices in a brine solution for 24 hours to tenderize the meat and remove the blood.
  • In a large releasable plastic bag, combine soy sauce, Worcestershire sauce, liquid smoke, pepper, garlic powder, onion powder and salt.
  • Place meat in, and close bag.
  • Refrigerate overnight. Knead occasionally, to evenly distribute marinade.
  • Preheat oven or dehydrator anywhere between 145 to 165 degrees F. If using regular oven, place a pan on the bottom of oven to catch drips, or line with aluminum foil.
  • Place meat on racks so that they do not touch each other, and dehydrate for 5 to 7 hours or until meat breaks when trying to bend.

Number Of Ingredients 8

2 pounds red meat (although you can use elk, bear, venison, wild boar or just about any other critter you can hunt. I stick with beef such as top round steak, flank steak or brisket)
2/3 cup Worcestershire sauce
2/3 cup soy sauce
2 teaspoons ground black pepper
2 teaspoons onion powder
1 teaspoon liquid smoke
1 teaspoon red pepper flakes
1 tablespoon honey

Steps:

  • Place the meat in the freezer for 1 hour, so that it will be easier to cut.
  • Slice the meat with the grain as thin as humanly possible.
  • Mix brine ingredients right in a resealable plastic bag (placing the bag inside a large plastic container will make this easier.)
  • Place meat strips in brine. Move the meat around so the marinade is evenly distributed around it. Seal bag, working out as much air as humanly possible.
  • Lay bag flat in the plastic container and refrigerate for 3 to 6 hours.
  • Remove meat from the brine and drain on cooling racks. Discard the brine.
  • When the meat is dry place it inside Blo-hard 3000 and set fan to medium. Leave overnight or for at least 12 hours.
  • If you don't find yourself in possession of a Blo-hard 3000, place strips directly on oven racks.
  • Heat oven to lowest setting and use a blob of foil as a wedge to hold door ajar.
  • Oven-dry overnight or until meat reaches a consistency of your liking.
  • Store in zip-top bag or jar in a cool dark place for 30 or 40 years or until fuzzy stuff starts to grow on it.

A top of the line beef jerky that can be done in just 12 hours. Sliced rump roast marinated in soy sauce, brown sugar, and liquid smoke then dried in a dehydrator for 12 hours.

3 pounds rump roast
3 cups soy sauce
3 cups packed brown sugar
4 fluid ounces hickory-flavored liquid smoke

Steps:

  • Slice roast into slabs approximately 1/4 inch thick, (Note: you can have this done at the grocery store or butcher). Trim off all of the fat from the edges. Cut the slabs into pencil-like strips (about 1/4 inch wide), and about 4 inches long.
  • In a large bowl, combine the soy sauce, brown sugar and hickory-flavored liquid smoke; blend well. Place all of the meat into the bowl of marinade. Cover and place in refrigerator for at least 30 minutes.
  • Place the meat in a food dehydrator for about 12 to 20 hours, depending how dry you like your jerky. Rotate the trays after 6 hours. For example: Bottom tray on top, top tray on bottom, second tray from bottom to be second tray from top, and so on.

I finally wrote down the exact amounts I used to get some great tasting jerky! The cayenne pepper is optional as it does spice it up a bit. The kids love it and its better than feeding them twinkees.

5 lbs ground beef or 5 lbs ground venison
2 tablespoons mortons tender quick salt
1/3 tablespoon fresh coarse ground black pepper
1/2 tablespoon garlic powder
1/4 cup soy sauce
1/4 cup Worcestershire sauce
2 tablespoons brown sugar
1/2 tablespoon liquid smoke
1 teaspoon cayenne pepper

Steps:

  • Mix all ingredients. Pour over meat and mix well. Put it in the fridge overnight. I use a dehydrator and a jerky gun to dry the stuff as I've found this is the best way to make jerky. Usually takes about 7 hours to dry.
