Prep these tasty, hearty burritos the night before for a quick breakfast in the morning or let them cook while you are away on a weekend afternoon for an easy supper. -Anna Miller, Churdan, Iowa

1 pound bulk pork sausage
1 package (28 ounces) frozen O'Brien potatoes, thawed
2 cups shredded sharp cheddar cheese
12 large eggs
1/2 cup 2% milk
1/4 teaspoon seasoned salt
1/8 teaspoon pepper
12 flour tortillas (8 inches)
Optional toppings: Salsa, sliced jalapenos, chopped tomatoes, sliced green onions and cubed avocado

Steps:

  • In a large skillet, cook sausage over medium heat until no longer pink, 8-10 minutes, breaking into crumbles; drain., In a greased 4- or 5-qt. slow cooker, layer potatoes, sausage and cheese. In a large bowl, whisk eggs, milk, seasoned salt and pepper until blended; pour over top., Cook, covered, on low 3-3/4 to 4-1/4 hours or until eggs are set and a thermometer reads 160°. Uncover and let stand 10 minutes. Serve in tortillas with toppings of your choice.

Adapted from Isa Does It Mediterranean Overnight Scramble TO MAKE AHEAD: We like to triple this recipe and, eat some of the burritos on the spot, and freeze the others for quick breakfasts during the week. We freeze them on a sheet pan so they are solid before storing in a sealed container. It works best to pull them out of the freezer the night before to thaw in the fridge overnight. My kids love the raw tortillas that can be purchased at Costco. They are also best if you have time to crisp up the warmed burrito in a pan.

14 ounces extra firm tofu (preferably organic sprouted)
1 1/2 cups potatoes, cooked and diced
3/4 tablespoon bacon, flavored vegan bits
1/4 cup kalamata olive, chopped (optional)
2 tablespoons lemon juice
1/2 teaspoon dried marjoram or 1/2 teaspoon oregano
2 tablespoons fresh basil, minced (or 2 t dried basil)
1/4 teaspoon ground turmeric
1/4 teaspoon salt
1 tablespoon olive oil
1/4 teaspoon crushed red pepper flakes (optional)
1/4 teaspoon fresh ground black pepper (to taste)
8 tortillas

Steps:

  • The night before, crumble the tofu into a mixing bowl.
  • Add all the ingredients except the oil, season with black pepper, and mix lightly with your hands.
  • Cover, and leave in the fridge overnight.
  • In the morning, heat the oil in a pan. Cook the tofu mixture for 5-7 minutes, until heated through and lightly browned.
  • Serve in tortillas.

8 large eggs
1/3 cup 2% milk
1/2 teaspoon salt
1/2 teaspoon pepper
1 pound bulk pork sausage
1 cup sour cream
1 can (10-3/4 ounces) condensed cream of chicken soup, undiluted
4 flour tortillas (10 inches), cut into 1-in. pieces
1-1/3 cups salsa, divided
2/3 cup shredded cheddar cheese
2/3 cup shredded part-skim mozzarella cheese
Optional: Enchilada sauce and thinly sliced green onions,

Steps:

  • Preheat oven to 350°. Whisk together eggs, milk, salt and pepper. In a large skillet coated with cooking spray, cook and stir egg mixture over medium heat until thickened and no liquid egg remains; remove. , In the same skillet, cook and crumble sausage over medium heat until no longer pink, 5-7 minutes; drain. Stir together sour cream and soup. Spread half the sour cream mixture in an ungreased 13x9-in. baking dish. Layer with half the tortilla pieces, half the salsa, the scrambled eggs, the sausage, and the remaining tortillas and sour cream mixture. Top with remaining salsa; sprinkle with cheeses., Bake, uncovered, until heated through, 30-35 minutes. If desired, serve with enchilada sauce and sliced green onions., To Make Ahead: Refrigerate unbaked casserole, covered, several hours or overnight. To use, preheat oven to 350°. Remove casserole from refrigerator while oven heats. Bake as directed, increasing time by 5 minutes.

1 lb bulk pork sausage
2 green onions, chopped
8 eggs
1 tablespoon butter
1 package (11 oz) Old El Paso™ flour tortillas for burritos (8 tortillas; 8 inch)
1 cup shredded Cheddar cheese (4 oz)
Old El Paso™ Thick 'n Chunky salsa
Sour cream

Steps:

  • In 10-inch skillet, cook pork sausage over medium-high heat until no longer pink; drain. Stir in green onions. Remove from skillet; set aside.
  • In large bowl, beat eggs until well blended. Wipe skillet clean with paper towels. In same skillet, melt butter. Add eggs; cook, stirring frequently, until scrambled and set. Add sausage and onions; mix gently.
  • Heat tortillas as directed on package. Spoon sausage evenly onto each tortilla. Sprinkle each with 2 tablespoons cheese. Fold in sides of each tortilla; roll up to make burritos. Place in freezer container with waxed paper between layers. Freeze 8 hours or overnight.
  • Night before use, place burritos in refrigerator to thaw. Next morning, heat oven to 350°F. Wrap each burrito in foil; place on cookie sheet. Bake 10 to 15 minutes or until hot. Serve with salsa and sour cream.
