SIXTEEN-BEAN SOUP

Steps:
- Set aside seasoning packet from beans. Sort beans and rinse with cold water. Place beans in a Dutch oven; add water to cover by 2 in. Bring to a boil; boil for 2 minutes. Remove from the heat; cover and let stand for 1 to 4 hours or until beans are softened. Drain and rinse beans, discarding liquid., Return beans to the pan. Add contents of bean seasoning packet, onion, garlic, salt, chili powder, pepper, pepper sauce, bay leaf and water. Bring to a boil. , Reduce heat; cover and simmer for 2-1/2 to 3 hours or until beans are tender. Add tomatoes and lemon juice. Simmer, uncovered, until heated through. Discard bay leaf.

10 BEAN SOUP
Yes, another soup recipe! We really love a hot bowl of soup on a cold winter day for lunch. The challenge is keeping it low fat and healthy. This bean soup is fantastic! It makes alot and it freezes well. You can really use any favorite bean mixture (dry) or use your own! I buy the 10 Bean mix in bulk at a local grocery store. It also has some pearl barley thrown in there too!

Steps:
- Soak beans in water overnight. Drain the beans the next morning or afternoon.
- In large soup pot saute onion, carrot, and celery in oil for about five minutes. Add garlic, salt, and pepper and saute another five minutes.
- Add chicken broth, vegetable broth, diced tomatoes, water, and beans to vegetable mixture.
- Bring to a boil. Reduce heat to a low boil and cover. Cook for about 2 hours. Stir occasionally.
- Add green beans and corn and contine to cook covered for about 1 more hour or until beans are tender.
- Prep time is soaking beans overnight and chopping vegetables.

OVERNIGHT BEAN SOUP

- Rinse beans and place in a 3-quart saucepan with 6 cups water. Bring to a boil over medium-high heat reduce heat to low and simmer 2 minutes. Remove from heat. Cover and let stand 1 hour or overnight.*If desired, drain liquid into a measuring cup, then discard add same amount of fresh water to beans. (Some nutrients will be lost.) Transfer beans and water to a slow cooker. Add boiling water, carrots, celery, bouillon granules, bay leaf, thyme, salt, and pepper. Cover and cook on high 5 to 5 1/2 hours or on low 10 to 11 hours or until beans are very tender.*Stir in parsley and soup mix. Cover and cook on high 15 minutes or until heated through and onion and parsley are tender.Remove bay leaf. Ladle 2 cups of the soup mixture into a blender container. Cover and blend until puréed. Stir into soup mixture in slow cooker.Garnish each serving with optional bacon.*For best results, let dried beans soak overnight before cooking in slow cooker. At high altitudes, simmer beans 10 minutes before standing overnight cooking may take as long as 7 hours on high or 14 hours on low.

OVERNIGHT OLD FASHIONED BAKED BEANS
This is the first recipe I tried to make baked beans from scratch. It has been a favourite for 20 + years.

Steps:
- Wash beans, place in medium bowl, cover with cold water and refigerate overnight.
- Drain beans, place in saucepan and cover with 6 cups hot water, bring to boil.
- Reduce heat, simmer covered 40 minutes or till tender.
- Preheat oven to 300°F.
- Drain beans, reserve 2 cups liquid.
- Place beans in 2 quart bean pot or casserole with tight fitting lid.
- Mix together all other ingredients (except pork), add bean liquid and stir to combine.
- Add pork to beans, mix in well.
- Pour liquid ingredients over beans and stir well, be sure liquid covers beans.
- Cover and bake 5 hours.
- Stir every hour, if bean dry out add small amounts of boiling water as needed.
- Note: preparation time doesn't include overnight refrigeration.
