When I first got this recipe I thought it would be strange to make this cake, then refrigerate it, and bake the next morning. But it's great. The cake is so moist and delicious. It's wonderful when you have company staying at your house, and it makes a great breakfast with a cup of coffee.

⅓ cup butter, softened
½ cup white sugar
¼ cup packed brown sugar
1 egg
1 cup all-purpose flour
½ teaspoon baking powder
¼ teaspoon baking soda
½ teaspoon ground cinnamon
½ cup buttermilk
¼ cup packed brown sugar
¼ cup finely chopped walnuts
¼ teaspoon ground cinnamon

Steps:

  • Lightly grease an 8 inch square baking pan. In a large bowl, cream together the butter, white sugar, and 1/4 cup brown sugar. Beat in the egg until well blended. In a medium bowl, combine the flour, baking powder, baking soda, and 1/2 teaspoon cinnamon. Stir the flour mixture into the creamed mixture alternately with buttermilk. Spread evenly into the prepared baking pan.
  • In a small bowl, mix 1/4 cup brown sugar, walnuts, and 1/4 teaspoon cinnamon. Sprinkle over the batter. Cover, and refrigerate overnight.
  • The next day, preheat oven to 350 degrees F (175 degrees C). Bake the cake for 40 to 45 minutes in the preheated oven, or until a toothpick inserted in the center comes out clean.

¼ cup butter, softened
¾ cup brown sugar
1 large egg

  • Beat 1/4 cup butter and 3/4 cup brown sugar together with an electric mixer in a large bowl until light and fluffy. The mixture should be noticeably lighter in color. Beat egg into butter mixture. Add sour cream, vanilla yogurt, and vanilla extract to the mixture; beat to integrate.
  • Stir 1 cup flour, 3/4 teaspoon cinnamon, baking soda, and salt together in a bowl; add to the butter mixture and beat to combine into a batter. Fold apples into the batter. Pour batter into prepared baking dish.
  • Mix 1/4 cup brown sugar, 1/4 cup flour, 2 tablespoons butter, and 1/2 teaspoon cinnamon together in a bowl using a fork to achieve a crumbly consistency; sprinkle over the top of the batter.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, 35 to 40 minutes. Cool in the pan for 10 minutes before removing to cool completely on a wire rack.

1/2 cup quick-cooking oats
2 tablespoons flax seed meal

Steps:

  • Cream butter and add sugar gradually.
  • Beat at medium speed until light and fluffy.

I came across this recipe while perusing some lovely foodie blogs. The title intrigued me and this simple recipe, as yet untested sounds like it will be delicious. Not really a cake as there is no flour, just delicious slow cooked apples.

4 lbs cooking apples, granny smiths
1 orange
3/4 cup sugar, more if required
2 tablespoons butter

Steps:

  • Preheat the oven to 175°F Choose a 6-cup souffle/ovenproof dish, generously grease it with one tablespoon of butter. Cut a round of parchment to fit inside the dish, generously grease it on one side with the remaining tablespoon butter.
  • Place the sugar in a bowl. Zest about 1 tablespoon of the orange zest into the sugar bowl, rub the zest into the sugar with your fingertips. Halve the orange and squeeze its juice into another bowl. Peel the apples, core them, and thinly slice them into rings (if you don't want to bother coring, simply halve them and thinly slice). Add the apple slices to the bowl with the orange juice as you work to prevent discoloring, tossing them to coat.
  • Layer the apple slices, overlapping them, in the prepared dish, sprinkling each layer with a little of the sugar. Place the parchment round, buttered-side down, over the apples. Place in the oven for 12 hours.
  • Remove the apple dish from the oven, there should be a good amount of bubbling juice. Pressing down on the parchment with an oven mitt, pour off the juice into a sauce pan. Bring the juice to a simmer and boil until brightly colored and thickened. Meanwhile, invert the apple cake onto a serving plate. Drizzle with the juices.
