2 tablespoons kosher salt
1 tablespoon fresh ground black pepper
2 teaspoons cayenne pepper
4 lbs medium chicken wings, thighs and drumsticks
2 cups all-purpose flour
2 teaspoons onion powder
2 teaspoons garlic powder
2 teaspoons cayenne pepper
2 teaspoons kosher salt
2 teaspoons fresh ground black pepper
18 ounces crisp beer, such as lager (2 1/4 cups) or 18 ounces pilsner beer (2 1/4 cups)
vegetable oil, for frying

Steps:

  • MAKE THE BUTTERMILK SOAK: In a large bowl, combine the buttermilk with the salt, black pepper and cayenne. Add the chicken and turn to coat. Let stand at room temperature for 2 hours or refrigerate for 4 hours.
  • MAKE THE BEER BATTER: In a large bowl, whisk the flour with the onion powder, garlic powder, cayenne, salt and black pepper. Whisk in the beer to make a thin batter.
  • Drain the chicken and thoroughly pat thoroughly dry with paper towels. Transfer the chicken to the batter, turning to coat.
  • In a large, deep skillet, heat 1 inch of oil to 350°. Set a rack over a baking sheet and line the rack with paper towels. Lift the chicken from the bowl, letting the excess batter drip back into the bowl. Fry the chicken in batches at 350°, turning once, until golden and an instant-read thermometer inserted in the thickest part registers 160°; about 18 minutes for wings and 20 minutes for thighs, breasts and drumsticks. Transfer the fried chicken to the rack and let stand for 5 minutes before serving.

1 cup lager beer
1 cup buttermilk
1 cup assorted herbs, such as parsley, oregano, marjoram, rosemary, chives and basil, chopped
1 teaspoon salt
1/2 teaspoon black pepper
1 (3 -4 lb) roasting chickens, quartered
2 cups dried breadcrumbs

Steps:

  • In large, shallow dish, whisk together lager beer, buttermilk, 1/2 cup herbs, salt and pepper. Add chicken to dish, turning to coat all sides. Cover and refrigerate for at least 2 hours or up to 24 hours. Turn chicken occasionally as it marinates.
  • Preheat oven to 400 degrees. Cover a large sheet pan with parchment paper or coat with cooking spray.
  • In shallow dish, place bread crumbs and remaining 1/2 cup of herbs. Stir to distribute herbs evenly.
  • Remove chicken from marinade and drain. Dip each piece of chicken in the crumbs, rolling to coat all sides thoroughly. Place chicken pieces on sheet pan, leaving space between each piece.
  • Bake 45 minutes to 1 hour, or until chicken is golden brown on top and cooked through. Baking time will depend on size of chicken pieces. To test for doneness, insert a meat thermometer into the thickest part of the meat. The chicken is done when the temperature registers 160 degrees.
  • Serve chicken hot, room temperature or cold.

3 boneless, skinless chicken breasts
1 cup low flat buttermilk
¼ cup sriracha sauce
1 cup panko breadcrumbs
1 cup all-purpose flour
½ teaspoon salt
¼ teaspoon black pepper
1 teaspoon paprika
½ teaspoon seasoning salt
3 tablespoons canola oil

Steps:

  • On a cutting board, slice each chicken breast into strips.
  • In a bowl, combine the buttermilk and Sriracha and mix to combine. Add the chicken strips and submerge in the buttermilk mixture. Cover with plastic wrap. Or toss all of the ingredients into a resealable bag. Refrigerate for at least 2 hours.
  • Preheat oven to 425˚F (220˚C).
  • In a shallow dish, add the Panko, flour, salt, pepper, paprika, and seasoning salt and mix to combine.
  • Dip the chicken strips in the panko mixture, ensuring they are fully coated.
  • Line a rimmed baking sheet with parchment paper and brush with canola oil.
  • Transfer the chicken to the baking sheet, and bake for 10 minutes. Flip the chicken over, and bake for an additional 10 minutes. If desired, broil for 2-3 minutes to crisp up at the end.
  • Transfer the chicken to a paper towel-lined plate to remove extra grease.
  • Enjoy!

12 chicken thighs
3 eggs
1 cup all-purpose flour
1 cup Italian seasoned bread crumbs
salt and pepper to taste
1 teaspoon paprika
½ cup vegetable oil

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place flour in a shallow plate or bowl and season with salt and pepper to taste. Put the bread crumbs in another shallow plate or bowl and beat the eggs in another bowl.
  • Dredge the chicken piece by piece in the flour, then the egg, then the bread crumbs, until all pieces are coated. Pour the oil into a 9x13 inch baking dish. Add the chicken to the dish and sprinkle with paprika to taste. Bake in the preheated oven for 30 minutes, then turn pieces over and bake for another 30 minutes. 1 1/2 teaspoons poultry seasoning (optional)

  • PREP: Heat oven to 425F.
  • CLEAN: Wash hands.
  • Place buttermilk in shallow dish.
  • On waxed paper or plate, mix flour, poultry seasoning, paprika and salt.
  • Dip chicken in buttermilk to coat completely.
  • Dredge in flour mixture to cover completely.
  • Place on clean sheet of waxed paper.

3 tablespoons hot sauce
1 tablespoon kosher salt

4 skinless chicken legs
4 boneless skinless chicken breast halves
1 1/4 cups corn flake crumbs

Steps:

  • In a a large bowl, combine the buttermilk, hot sauce, salt, pepper,paprika and cayenne. Stir until well combined.
  • Rinse chicken and pat dry.
  • Transfer chicken to a large ziplock bag and add buttermilk mixture.
  • Allow chicken to marinate for 12 hours, at a minimum.
  • Preheat oven to 400 degrees.
  • Place a metal cooking rack inside a metal baking pan and set aside.
  • Place corn flakes crumbs inside a shallow dish and season with salt and pepper.
  • Remove chicken from buttermilk mixture, allow excess to drip off. Place chicken into the cornflake crumbs, turning to coat evenly and press in to make cornflakes stick.
  • Transfer to the rack lined baking sheet and repeat with remaining chicken.
  • Drizzle butter over chicken.
  • Bake chicken on the rack for 40 minutes until golden.
