This is a quick, simple, and above all, a cheap way to make pork chops. I love it!

4 pork chops, trimmed
2 tablespoons butter, melted
1 egg, beaten
2 tablespoons milk
¼ teaspoon black pepper
1 cup herb-seasoned dry bread stuffing mix

Steps:

  • Preheat oven to 425 degrees F (220 degrees C). Pour butter into a 9x13 inch baking pan.
  • Stir together egg, milk and pepper. Dip pork chops in egg mixture, coat with stuffing mix and place in pan.
  • Bake in preheated oven for 10 minutes. Turn chops and bake for another 10 minutes, or until no pink remains in the meat and juices run clear.

1 egg
¼ cup grated Parmesan cheese
1 teaspoon Cajun seasoning
2 boneless pork chops, trimmed

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Spray a baking dish with cooking spray.
  • Whisk egg in a shallow bowl.
  • Mix Parmesan cheese and Cajun seasoning together on a plate.
  • Dip each pork chop into egg. Press into Parmesan mixture until coated on both sides. Place in the prepared baking dish.
  • Bake in the preheated oven until golden and an instant-read thermometer inserted into the center reads at least 145 degrees F (63 degrees C), 35 to 40 minutes.

From the Kellogg's cookbook. This uses corn flake crumbs and a hint of lime. I like these a lot and it's so easy to make. The only comment I have is that the oregano slides off the chops a bit when you dip it in the egg mixture so maybe adding the oregano to the crumb mixtue would work better. Made according to the directions you do get the flavor though. Enjoy!

1 large egg
3 tablespoons milk
2 tablespoons fresh lime juice
1 teaspoon dried oregano
1/4 teaspoon garlic powder
salt and pepper
1 cup corn flake crumbs
6 center-cut pork chops, 3/4-inch thick
1 lime, cut into 6 wedges (optional)

Steps:

  • Combine the egg, milk and lime juice with the oregano, garlic powder, salt and pepper, in a shallow bowl.
  • Place the corn flake crumbs in another shallow bowl.
  • Preheat oven to 350 degrees F.
  • Line a baking pan with foil or lightly coat with a non stick cooking oil spray; set aside.
  • Working with one chop at a time, dip into the egg and then into the crumbs to evenly coat.
  • Place the coated chops on the prepared pan and when all chops are coated, bake in the preheated oven for about an hour or until an instant read thermometer reads 160 degrees F.
  • Remove from oven and serve with lime wedges, if desired.

2 large eggs
1 tablespoon water
1 cup seasoned bread crumbs
4 (5 ounce) bone-in, center-cut pork chops
1 ½ teaspoons kosher salt
1 teaspoon ground black pepper
¼ cup olive oil

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Lightly coat a wire rack with cooking spray and set in a rimmed baking sheet.
  • Whisk eggs and water together in a shallow dish. Place bread crumbs in a second shallow dish.
  • Season pork chops evenly with salt and pepper. Dip and coat chops in egg, allow excess to drip off, then dip in bread crumbs until well coated.
  • Heat 1/2 of the oil in a large skillet over medium-high heat. Place 2 chops in the skillet and cook until golden and crisp, about 2 minutes. Flip and cook until crisp on the other side, 1 to 2 minutes more. Transfer to the prepared rack. Heat remaining oil in the skillet and repeat to sear remaining chops.
  • Bake pork chops in preheated oven until no longer pink in the center, 10 to 15 minutes. An instant-read thermometer inserted into the center should read 155 degrees F (68 degrees C).

  • Trim the fat from the meat.
  • Pour butter into a 13x9x2 inch baking pan.
  • Combine eggs, milk, and pepper.
  • Dip the pork chops into the egg mixture.
  • Coat with stuffing mix or bread crumbs.
  • Place pork chops in the pan.
  • Bake in a 425 degree oven for 10 minutes. Turn chops. Bake about 10 minutes more or till no pink remains and juices run clear.
