Orange and Maple Roasted Butternut Squash image

Glaze thinly sliced, roasted butternut squash with maple syrup and fresh orange, and add a sprinkle of parsley to finish.

1 butternut squash (about 2 1/2 pounds), peeled, halved, seeded and thinly sliced
2 tablespoons olive oil
Kosher salt and freshly ground black pepper
2 tablespoons pure maple syrup
Zest and juice of 1 orange
2 tablespoons chopped fresh flat-leaf parsley

Steps:

  • Preheat the oven to 350 degrees F. Toss the squash with the oil and a generous pinch each of salt and pepper in a large bowl. Tile the squash slices in a 9-by-13-inch baking dish, overlapping the pieces. Stir the maple syrup, orange zest and juice together in a small bowl and pour over the squash.
  • Cover with foil and bake 30 minutes. Uncover and continue to bake until the squash is tender and the top begins to brown, 30 to 40 minutes more. Scatter the parsley over the top.

Depending on the size of your squash, you may want to use more or less salt and pepper and more or less Grand Marnier or fresh orange juice.

Number Of Ingredients 5

1 butternut squash
1 tablespoon olive oil
1 teaspoon kosher salt
1 teaspoon fresh ground black pepper
2 -4 tablespoons Grand Marnier (may substitute fresh orange juice)

Steps:

  • Preheat the oven to 350 degrees.
  • Line a shallow baking dish or rimmed cookie sheet with aluminum foil.
  • Using a vegetable peeler, peel the squash, remove the seeds, and cut into 1-2" chunks.
  • Toss the squash with the olive oil and season with salt and pepper.
  • Place in the oven and bake for 30 minutes, then shake the pan so all of the pieces will cook evenly, and bake for another 20 minutes.
  • Stir in the Grand Marnier, and bake for another 15-25 minutes until the squash is browning on the bottom and looking caramelized and bubbling.
  • Remove from the oven and serve.

2 medium butternut squash (4 to 5 pounds total)
6 tablespoons unsalted butter, melted
1/4 cup light brown sugar, packed
1 1/2 teaspoons kosher salt
1/2 teaspoon freshly ground black pepper

Steps:

  • Preheat the oven to 400 degrees F.
  • Cut off and discard the ends of each butternut squash. Peel the squash, cut them in half lengthwise, and remove the seeds. Cut the squash into 1 1/4 to 1 1/2-inch cubes and place them on a baking sheet. Add the melted butter, brown sugar, salt, and pepper. With clean hands, toss all the ingredients together and spread in a single layer on the baking sheet. Roast for 45 to 55 minutes, until the squash is tender and the glaze begins to caramelize. While roasting, turn the squash a few times with a spatula, to be sure it browns evenly. Taste for seasonings and serve hot.

Steps:

  • Preheat the oven to 400°F.
  • Cut off the ends of each butternut squash and discard.
  • Peel the squash and cut in half lengthwise.
  • Using a spoon, remove the seeds.
  • Cut the squash into 1 1/4" to 1 1/2" cubes (large and uniform is best), and place them on a baking sheet.
  • Add the melted butter, brown sugar, salt and pepper.
  • With clean hands, toss all of the ingredients together and spread out in a single layer on the baking sheet.
  • Roast for 45 minutes to 55 minutes, until the squash is tender and the glaze begins to caramelize.
  • Turn the squash while roasting a few times with a spatula to be sure it browns evenly.
  • Adjust seasonings if needed.
  • Serve hot.
  • Enjoy!
