Baked Lemon-Butter Salmon image

Easy and delicious lemon-butter salmon fillets. This is an old recipe I changed up a bit and doubled in order to feed a large group or family.

Ingredients

vegetable oil cooking spray
8 (4 ounce) skinless salmon fillets
4 tablespoons salted butter
2 ½ tablespoons fresh lemon juice
salt and ground black pepper to taste

Steps:

Preheat the oven to 400 degrees F (200 degrees C). Spray a baking dish with cooking spray and place salmon fillets in the dish.
Place butter in a microwave-safe bowl and microwave on high in 30-second increments until melted, 30 seconds to 1 minute.
Mix lemon juice, salt, and pepper into the melted butter; pour over the salmon.
Bake in the preheated oven until fish flakes easily with a fork, 12 to 18 minutes.

Ingredients

1/4 cup butter
1 tablespoon lemon juice
2 cups breadcrumbs
2 cloves minced garlic
1/4 cup fresh parsley, chopped
1/4 cup fresh basil, chopped
4 (8 ounce) salmon fillets
1/3 cup heavy cream
1/3 cup sour cream
2 tablespoons chopped fresh chives
2 tablespoons chopped fresh basil
1 tablespoon chopped fresh parsley
1 tablespoon fresh lemon juice

Steps:

Preheat oven to 400 degrees and butter a baking dish.
In large skillet, melt butter and stir in lemon juice, bread crumbs and garlic.
Stir mixture frequently until crumbs are golden.
Remove skillet from heat and stir in parsley and basil.
Season salmon with salt and pepper and coat all sides with crumb mixture.
Place on baking dish and bake in middle of oven for 15 to 20 minutes or until done.
Serve with cream sauce.
