This is a light and crispy salad great for a summer picnic or when it's too hot out to cook. I've had this recipe for years and have no idea where it originally came from. It's extremely easy to prepare and is always a hit.

Steps:
- Place lettuce, chicken, green onions, and sesame seeds in a large bowl and toss.
- Combine the vegetable oil, white wine vinegar, sugar, soy sauce, pepper, ground ginger and salt in a container with a tight fitting lid. Shake all ingredients vigorisly until well combined. Pour Dressing over salad and refrigerate for at least 2 hours. Serve the same day.

This Asian inspired salad makes for a lovely luncheon or supper. The contents of the salad can easily be adjusted to whatever you like or have on hand. If you prefer a vegetarian meal, omit the chicken or use tofu instead. Won't be chicken salad but will still be delicious.

- Using a blender or food processor, blend all of the dressing ingredients (yogurt, orange juice, ginger, salt, sugar, orange peel, cayenne and cinnamon) until smooth and creamy. Refrigerate until ready to use.
- To assemble salads, place lettuce into large serving bowl or onto 4 serving plates. Toss together remaining ingredients except almonds on top of lettuce.
- Drizzle 1/2 of dressing on salad, reserving remaining portion so that guests can adjust amount to taste.
- Garnish with sliced almonds (optional).

ASIAN CHICKEN SALAD WITH GINGER-SESAME DRESSING

- In a large bowl, combine cabbage, shredded carrots, snap peas, baby corn, bean sprouts, red bell pepper, green onions and fresh cilantro. Set aside.
- – Using a blender or food processor, combine rice vinegar, soy sauce, garlic clove, honey and fresh ginger and pulse to combine. With the motor running, slowly add the olive oil in a steady stream and continue blending until mixture is creamy.
- Using a meat pounder (or empty bottle), pound out the chicken breasts to a uniform thickness. Place chicken breasts in a plastic bag and add 2 tablespoons of the salad dressing. Make sure the chicken is completely coated and allow chicken to marinate for 30 minutes to an hour.
- – Pre-heat a grill pan or an outdoor grill on medium-high heat and add marinated chicken breasts. Sprinkle with a little salt and pepper and cook chicken about 4 to 5 minutes on each side until juices run clear. Transfer chicken to a cutting board and let rest for 15 minutes before cutting. This keeps them juicy!
