BALSAMIC ORANGE MAPLE GLAZED CHICKEN
This recipe for Balsamic Orange Maple Glazed Chicken is a definite keeper! It is very easy to make and is jam packed with flavor!

Steps:
- Preheat your oven to 350 degrees.
- Prepare a rimmed baking sheet with cooking spray.
- Place chicken breasts on your prepared pan.
- In a small saucepan, over medium to medium high heat, combine orange juice, maple syrup, balsamic vinegar, Dijon or yellow mustard, 1/2 teaspoon salt and 1/2 teaspoon pepper.
- Bring mixture to a boil and simmer until liquid is reduced to 1 cup, about 7 minutes.
- Add basil and orange peel. Remove from the heat and set aside.
- Coat chicken with remaining salt and pepper.
- Bake in oven for 45 minutes, basting as frequently as possible. We try and baste about every 10 minutes. Totally worth it! Serve and enjoy!
ORANGE-BALSAMIC CHICKEN
My mom was cleaning out one of her closets and came across several folders full of recipes that she had clipped from magazines and newpapers over the years. This appears to have come from an advertisement for a Weight Watchers Cookbook called "Quick Cooking for Busy People". I don't know if they used the same point system back then as they do now but this claims to be worth 4 points. Anyway, it's a quick and tasty way to make chicken!

Steps:
- Place chicken between 2 pieces of heavy-duty plastic wrap and flatten to 1/2 inch thickness. Sprinkle with salt and pepper, then dredge in flour.
- Melt margarine in a large non-stick skillet. Add chicken and cook over medium-high heat until done, about 8-10 minutes, turning once. Remove from skillet and keep warm.
- Combine broth and cornstarch. Stir in marmalade. Add to skillet and cook, stirring constantly, until mixture is thickened.
- Stir in vinegar. Reduce heat to medium.
- Return chicken to skillet and turn to coat well with sauce. Cook 1-2 more minutes until thoroughly heated.

MAPLE BALSAMIC GLAZED SKILLET CHICKEN
This easy to make golden brown skillet chicken is coated in the most delicious savory sweet maple-balsamic glaze. This skillet chicken breast recipe is made in one skillet in less than 30 minutes.

- Pat the chicken dry and season with salt and pepper to taste.
- In a small bowl, whisk the maple syrup, balsamic vinegar, Dijon mustard and cayenne pepper. Set aside.
- Heat the olive oil in a large heavy skillet over medium-high heat. Add the chicken breast and cook for about 5-6 minutes per side or until cooked through. Remove chicken from the skillet.
- Lower the heat to medium-low and add the garlic. Cook for about a minute stirring constantly. Add the broth and scrape the bottom of the skillet with a wooden spoon to remove any brown bits. Bring to a boil and cook for about 2 minutes or until the broth has reduced by half.
- Stir in the maple syrup mixture and mix to combine. Return the chicken to the skillet and turn to coat. Cook for 2-3 minutes or until the chicken is well coated and the mixture looks syrupy. Remove from the heat and serve. Garnish with chopped parsley (optional).

- Preheat oven to 450 degrees. Season chicken with salt and pepper. In a large ovenproof skillet, heat oil over medium-high. Add chicken, skin side down, and cook until golden and crisp, 7 minutes. Transfer chicken to a plate and pour off fat from skillet. Return chicken, skin side up, to skillet and transfer to oven. Bake until cooked through, 10 minutes. Transfer chicken to a plate.
