Crispy Honey Orange Glazed Salmon image

Crispy Honey Orange Glazed Salmon fillets are pan-fried in the most beautiful honey-orange-garlic sauce, with a splash of soy for added flavour!

1 tablespoon olive oil
2 teaspoons butter,
4 (6-ounce) skinless salmon fillets, ((170 grams each))
1/4 cup fresh orange juice, ((about 1/2 an orange))
3 tablespoons honey
2 tablespoons low-sodium soy sauce
4 cloves garlic, (crushed or minced)
salt and cracked black pepper, (to taste)
1/2 an orange, (sliced to serve)

Steps:

  • Heat butter (or oil) in a pan or skillet over medium-high heat. Sear salmon skin-side up for 3-4 minutes. Flip and sear for 2 minutes.
  • Pour in the orange juice and allow to reduce to half the quantity (it takes about 1 minute to reduce down if your pan is hot enough). Add the garlic and cook until fragrant (30 seconds). Move the salmon to the sides of the pan and add in the honey and soy sauce, stirring well to combine all of the flavours together.
  • Bring to a simmer until reduced to a nice syrup (this takes about another 30 seconds to 1 minute), and move the salmon around in the sauce to evenly coat. Remove from heat once the salmon is cooked to your liking.
  • Season with salt and pepper to your tastes. Drizzle with the sauce to serve. Best served over rice, noodles, steamed vegetables or with a salad.

A whole fish is easier to prepare than you might think, and it makes an impressive presentation for guests.

Number Of Ingredients 9

4 leeks, trimmed of dark-green stem, sliced in half lengthwise
4 oranges
1 whole salmon, about 8 pounds, head and tail on, scaled, cleaned
1 teaspoon salt
1/2 teaspoon freshly ground black pepper
1 red onion, cut into 1/8-inch-thick rounds
6 sprigs fresh cilantro
1 tablespoon unsalted butter
1 cup dry white wine

Steps:

  • Heat oven to 400 degrees. Strew bottom of 12-by-18-inch jelly-roll pan or 12-by-16-inch half-sheet pan with leeks; set aside. With a sharp knife, cut away the peel, pith, and outer membranes from 2 oranges; slice orange flesh into 1/4-inch-thick rounds; set aside.
  • Rinse salmon under cold water, making sure cavity of fish is completely clean. Pat fish dry with paper towel. Cut 3 shallow slits through salmon's skin, about 3 inches apart, on each side of fish. Season salmon cavity with salt and pepper.
  • Stuff cavity with cilantro sprigs, reserved orange rounds, and onion rounds. Drape a large piece of cheesecloth over leeks in bottom of roasting pan. Place salmon on top of cheesecloth.
  • Squeeze juice from remaining 2 oranges into small saucepan; place pan over medium-high heat, and bring juice to a boil. Add butter, and stir until melted; remove pan from heat. Brush salmon with orange-juice mixture. Place roasting pan in oven, and roast salmon, basting every 10 minutes with orange-juice mixture, until skin is crispy and dark golden brown and meat is pink and firm to the touch, about 1 hour. If head or tail of fish become too dark, gently fold aluminum foil over them. Remove pan from oven; pour wine into pan to help loosen salmon. Using cheesecloth to help lift fish, carefully transfer to serving platter. Gently remove cheesecloth from under fish, and serve.

1 teaspoon brown sugar
4 salmon fillets (6 ounces each), skin removed
1/2 cup orange marmalade
1/4 cup lime juice

Steps:

  • Combine Cajun seasoning and brown sugar; rub over fillets. In a large nonstick skillet coated with cooking spray, cook fillets over medium heat for 3-4 minutes on each side or until fish flakes easily with a fork. Add marmalade and lime juice to the skillet; heat through.

I like to make this for company since you can get it ready ahead of time up until the final baking step. It looks both pretty and impressive, and the orange flavor is more subtle than you'd expect. This recipe originally came from Spice Islands, but I adapted it since I didn't have the spice blend they called for. This is a healthy and elegant meal (not to mention delicious) when served with a leafy salad, brown rice, and asparagus.

2 oranges, unpeeled and sliced
1 onion, thinly sliced
1 1/2 tablespoons olive oil
5 (6 ounce) salmon fillets
1 tablespoon lemon pepper
1/2 tablespoon garlic granules
1 tablespoon dried parsley
1/2 cup orange juice
1 1/2 tablespoons lemon juice
1 tablespoon honey

Steps:

  • Preheat oven to 400F.
  • Mix the lemon pepper, garlic, and parsley in a small dish.
  • Place the slices of ONE orange in a single layer in a 13 x 9 inch glass baking dish.
  • Place onion slices on top.
  • Drizzle with the olive oil and sprinkle 1/2 of the herb mixture over all.
  • Roast the orange and onion mixture in the oven for about 25 minutes, or until the onions look browned and tender.
  • Remove dish from oven.
  • Increase the oven temperature to 450F.
  • Push the onion and orange slices to the sides of the dish.
  • Place the salmon in the center of the dish and sprinkle with the remaining herb mixture.
  • Spoon orange and onion slices back on top of the salmon.
  • Whisk the orange juice, lemon juice, and honey together in a small bowl.
  • Pour over the salmon.
  • Roast for about 12-15 minutes, or until the salmon is opaque in the center.
  • Discard the cooked oranges.
  • Serve the salmon with roasted onions on the side, and garnished with the remaining (uncooked) orange slices.

2 pounds salmon fillet
1 cup orange juice
2 teaspoons balsamic vinegar
1 teaspoon finely chopped fresh ginger root
salt and ground black pepper to taste

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Place orange juice in a small saucepan over medium low heat. Cook and stir 10 to 15 minutes, until reduced by about 1/2 and thickened. Remove from heat, and allow to cool.
  • Stir balsamic vinegar and ginger root into orange juice.
  • Line a medium baking dish with parchment paper. Place salmon fillet on paper, skin side down. Season with salt and pepper. Cover with 1/2 the orange juice mixture.
  • Bake salmon in the preheated oven 10 to 15 minutes. Brush with remaining marinade, and continue baking 10 to 15 minutes, until easily flaked with a fork.
