1 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon salt
1 egg
1/3 cup vegetable oil
1 orange, zest of, - 2
1 cup granulated sugar
3/4 cup buttermilk
8 ounces cream cheese, room temperature
5 tablespoons butter, room temperature
3 1/2 cups sifted powdered sugar
1/2-3/4 teaspoon almond extract

Steps:

  • Preheat oven 350 degrees and line baking sheet with parchment paper.
  • In a bowl, mix the flour, baking soda, baking powder and salt; set aside. In another bowl, mix the egg, oil, orange zest and sugar. Add the dry ingredients to the wet, alternating with the buttermilk, until all the ingredients are well combined.
  • Drop the dough, a teaspoonful at a time keeping the shape as rounded as possible, onto the prepared baking sheet, taking care to leave enough space between the cookies as they expand while baking.
  • Bake about 8 minutes, until slightly golden around the edges, but do not overbake for they will get hard. Transfer to a wire rack to cool completely.
  • While the cookies are cooling, prepare the filling. In a mixing bowl using an electric mixer, mix the cream cheese and butter until light and well blended. Add the sifted powder sugar, in batches, until the filling is perfectly smooth. Add the almond extract, mix well.
  • To fill the cookies, use a pastry bag or spoon to spread the filling onto the the flat side of one cookie and then sandwich another cookie on top.

1/2 to 3/4 teaspoon almond extract

Steps:

  • Preheat your oven to 350F and line a baking sheet with parchment paper. In a bowl, mix the flour, baking soda, baking powder and salt; set aside.

Add the sifted powdered sugar, in batches, until the filling is perfectly smooth. Add the almond extract, mix well.
  • To fill the cookies, you can use a spoon or a pastry bag to spread some of the filling onto one of the cookies and then sandwich another cookie on top. Fill and sandwich cookies until all the cookies are matched. You might have some filling leftover, it makes a nice frosting on cupcakes or muffins.

2 1/4 c flour
1 1/2 tsp baking powder
1/2 tsp salt
4 Tbsp unsalted butter at room temp.
1/2 c sugar
4 Tbsp vegetable oil
1/2 c brown sugar, firmly packed
2 large eggs
1/2 c buttermilk
2 Tbsp milk
1 tsp baking soda
1 tsp white vinegar
1 tsp vanilla extract
ORANGE CREAM CHEESE FILLING
1 1/4 c confectioners' sugar
6 oz cream cheese at room temp
grated orange zest
1/2 c butter, room temp
1/2 tsp vanilla extract
1 tsp fresh orange juice

Steps:

  • 1. Preheat oven to 350* and line two baking sheets with parchment paper.
  • 2. Sift together the flour, baking powder, and salt onto a sheet of waxed paper.
  • 3. In a large bowl beat together the butter, shortening, and both sugars until light and creamy about 3 min.
  • 4. Add the eggs and the buttermilk until combined. In a measuring cup combine the milk, baking soda and vinegar.
  • 5. Alternate the milk mixture, and the flour mixture when adding to the batter. Beat on low until combined.
  • 6. Add the vanilla and beat on med. speed about 2 min. until until completely combined.
  • 7. Using a cookie scoop drop about 1 tablespoon of batter onto the prepared baking sheets about 2 inches apart.
  • 8. Bake one sheet at a time for about 10 min. or until the edges are golden. Remove from oven and let cool on sheet for 5 min. Then place on wire racks to cool completely.
  • 9. For the filling ~ sift the confectioners sugar on to parchment paper.
  • 10. In a medium bowl beat together the cream cheese, and sugar on low speed until well combined.
  • 11. Add the orange zest, butter, vanilla and orange juice. Increase the speed to medium and beat until creamy and smooth about 4 min.

COOKIES
2 c flour
2 Tbsp cocoa powder
1/4 tsp baking powder
1/2 c room temperature butter
1 c light brown sugar
1 egg
2 tsp vanilla
1/2 c buttermilk
orange food coloring (gel)
CREAM CHEESE FILLING
8 oz cream cheese, room temperature
1/2 c butter, room temperature
1 tsp vanilla
2 c powdered sugar
FOR DECORATION
mini pretzels
green food coloring

Steps:

  • 1. Preheat oven to 375. Line your baking sheets with parchment paper or a Silpat because they will stick.
  • 2. Cream butter and sugar together. Add egg and vanilla, mix until combined.
  • 3. In a separate bowl, mix your dry ingredients together. On low speed add 1/3 of your dry mix into your wet mixture, then 1/3 of your buttermilk...continue adding in this order until all your dry ingredients and milk are mixed in and smooth.
  • 4. Now add your orange food coloring. It doesn't take very much to achieve a pretty orange color, but add until the color you like is reached. Mix on low to combine the food coloring, scraping the sides until color is even.
  • 5. Transfer batter into a piping bag or snipped off ziplock.
  • 6. Pipe in the shape of pumpkins (kind of a fat heart shape) about 2 inches apart. They are all ABOUT 2.5" wide and ALMOST 2" in height.
  • 7. Bake for approx 6 minutes until they are set. Let cool on baking sheet for 2 minutes and then transfer to a wire rack to finish cooling.
  • 8. Fill each with your cream cheese filing, using a snipped ziploc bag to fill them.
  • 9. Directions for cream cheese filling: 1.In a mixer, cream together your butter and cream cheese until smooth. 2.On low speed add in your vanilla and powdered sugar. 3.Turn speed up to medium until combined, scraping sides of bowl when necessary.
  • 10. TO ASSEMBLE: After filling each whoopie pie, break some mini pretzels into pieces and place them to make your "pumpkin stem". If desired, use the remaining cream cheese filling, tint in green, and pipe on leaves and vines.

2 (3 gram) packets Duncan Hines® Frosting Creations™ Orange Creme Flavour Mix

Steps:

  • Preheat oven to 350 degrees F. Line 2 baking sheets with parchment paper.
  • Mix Duncan Hines® Devils Food Cake Mix, flour, eggs, vegetable oil and water.
  • Using a tablespoon, scoop batter onto parchment-lined baking sheets. Put no more than 6 to 8 on a sheet pan, as the batter will spread.
  • Bake for 8 minutes. Let cool completely.
  • Pour 1 packet of Duncan Hines® Frosting Creations™ Orange Creme Flavour Mix into 1 can of Duncan Hines® Frosting Creations™ Frosting Starter. Stir until evenly blended. Repeat with second can and packet.
  • Spread 1 tablespoon of the Orange Creme frosting you just created on the flat sides of half of the whoopie pies and top with remaining pies.
