ORANGE CREAM FUDGE

Steps:
- Grease a 9 x 13 inch pan.
- In a medium saucepan over medium heat, combine sugar, cream and butter. Heat to soft ball stage, 234 degrees F (112 degrees C). Remove from heat and stir in marshmallow creme and white chocolate chips; mix well until the chips melt. Reserve 1 cup of mixture and set aside.
- To the remaining mixture add orange flavoring, yellow and red food coloring. Stir well and pour into prepared pan. Pour reserved cream mixture on top. Using a knife, swirl layers for decorative effect.
- Chill for 2 hours, or until firm, and cut into squares.

This is a wonderful treat for people who love the combination of chocolate and orange. It brings back wonderful memories of me cooking in the kitchen with my mom, when I was a little girl.

Steps:
- In a food processor, combine the vanilla wafers, 2 cups of the confectioner's sugar, cocoa powder, orange juice concentrate, and corn syrup.
- Process until the cookies are ground to crumbs and mixture is evenly blended.
- Add the pecan pieces and pulse process until the nuts are finely chopped.
- Transfer the mixture to a bowl and form into 1" balls.
- Roll balls in 1/4 cup confectioner's sugar** to coat.
- Store in an airtight container in refrigerator for up to 1 month.
- **We always rolled our balls in regular granulated sugar. If we made them at Christmas time, we dyed some of the sugar green and some of the sugar red and rolled 1/2 the balls in the green sugar and 1/2 the balls in the red sugar.
ORANGE CORDIAL FUDGE BALLS
A nice gift for special occasions. I'm guessing at the number of fudge balls it yields; the truth is I'm probably somewhat inconsistent in the exact size I make the fudge balls because sometimes the recipe yields more than at other times. I've never melted the chocolate in the microwave instead of a double boiler but I suppose it's possible.

- Mix the crumbs with the liqueur and set aside.
- Melt the chocolate with the butter in the top of a double boiler.
- Stir chocolate mixture and corn syrup into crumb mixture to blend.
- Add the sugar and 1/2 cup of the chopped nuts and stir; the dough will be stiff.
- Shape the dough by spoonfuls into balls and roll in the remaining 1 cup of chopped nuts.
- Store in the freezer until shortly before giving or using.

- Coarsely chop the cranberries.
- Mix the cranberries in the sugar, orange zest and spices until well coated.
- Stir in the liquids.
- Pour into large glass jar and put in cool dark place for 1 month, shaking every few days.

DARK CHOCOLATE FUDGE BALLS
It was just one of those of days when I had to have chocolate and I came up with this variation on fudge. Cooking time is actually 'chill' time.

- Melt the butter in a large pot then add the cocoa and marshmallows. Continue melting over low heat and gradually add the chocolate chips and the milk. Once all the ingredients are blended and smooth, pour into a medium bowl and chill.
- After chilled, roll the fudge into balls and coat with whatever you like - powdered sugar, coconut, chopped nuts, etc.
- Keep refrigerated.

CHOCOLATE ORANGE FUDGE
This is so easy and yet it is probably the best fudge I've ever had. I usually omit the pecans. My niece used this recipe, substituting 3-4 drops peppermint extract for the orange zest, and earned a blue ribbon at the county fair. Even my 12-16 year old 4H girls had no problems making it. Note: make sure you use fresh orange zest. Dried will make the fudge bitter. Also make sure you don't get any of the bitter white part of the rind when you are zesting your orange.

- Line a 8x8x2-inch baking pan with lightly buttered waxed paper or aluminum foil.
- Set aside.
- Melt chocolate chips with condensed milk in the top of a double boiler or in a bowl in the microwave.
- Stir until smooth.
- Remove from heat and stir in pecans and grated orange peel.
- Spread in prepared dish and chill until firm.
- Carefully remove fudge from pan using the edges of the foil.

Steps:
- Combine butter, sugar and salt in a saucepan over medium heat; bring to a boil, cook 4-5 minutes, stirring constantly (start timing when mixture starts to bubble around the edges of pan).
- Remove from heat; add marshmallows, chocolate chips, vanilla, walnuts, raisins and candied pineapple OR apricots.
- Stir vigorously for 1 minute (until marshmallows melt and are blended), working quickly, drop by teaspoonfuls onto waxed paper.
- Store in an airtight covered container, in the fridge or out of the fridge.

And, wow, does the Cointreau add a deliciousness! They are wonderful when initially made, even better after aging a couple of days.
