WHITNER'S BBQ HOT OPEN-FACED BRISKET SANDWICH



Whitner's BBQ Hot Open-Faced Brisket Sandwich image

1/2 cup kosher salt
2 tablespoons ground black pepper
2 tablespoons Whitner's BBQ Rub, recipe follows
2 tablespoons brown sugar
2 ounces (4 tablespoons) butter
1/2 cup all-purpose flour
1 tablespoon chili powder
1 tablespoon kosher salt
3/4 teaspoon garlic powder
3/4 teaspoon onion powder
1 quart chicken stock (homemade is best, but use a low-sodium version if using store-bought)
1 whole brisket
Cheap white bread
1/4 cup paprika
1/4 cup kosher salt
1/4 cup brown sugar
2 tablespoons chili powder
2 tablespoons ground cumin
2 tablespoons ground mustard
2 tablespoons ground black pepper
1 tablespoon cayenne pepper
1 tablespoon garlic powder

Steps:

  • For Whitner's brisket rub: Combine salt, pepper, Whitner's BBQ Rub and brown sugar in a large mixing bowl and mix well. Store in an airtight container.
  • For Whitner's gravy: Melt the butter in a medium saucepan over medium-low heat. Add the flour to make a roux and whisk until butter and flour mixture is smooth and fragrant and begins to brown slightly, 3 to 4 minutes. Add the chili powder, salt, garlic powder, and onion powder to the roux and continue to whisk for 1 to 2 more minutes. Turn heat up to medium-high and add the chicken stock.
  • Continue to whisk until the roux is dissolved into chicken stock and the gravy begins to thicken slightly, about 5 more minutes. Strain through a sieve for best results.
  • For the brisket sandwiches: Preheat a smoker for cooking at 200 degrees F.
  • Liberally rub brisket with 1/2 cup brisket rub. Smoke until tender and reaches an internal temperature of 195 to 200 degrees F. Cooking time will depend on the weight of the brisket; a 10-pound or larger brisket will typically take at least 12 hours.
  • Remove it from the smoker, wrap it in foil, and let it rest at room temperature for 1 to 2 hours. Slice brisket against the grain (remove excess fat from brisket if desired, leave on for a more intense flavor), place on top of white bread, and smother with hot gravy.
  • Place 5 to 6 slices brisket over slices of white bread and spoon gravy on top.
  • Combine paprika, salt, brown sugar, chili powder, cumin, mustard, black pepper, cayenne and garlic powder in a large mixing bowl and mix well. Store in an airtight container.

1 whole untrimmed packer brisket (roughly 12 pounds)
1/2 cup kosher salt
1/4 cup coarse ground black pepper
1/4 cup granulated garlic
1/2 cup Cajun spice
1 pint light brown sugar
1 pint Dignowity BBQ Sauce, recipe follows, plus additional for serving
1 ciabatta roll
1 portion Sharp Cheddar Mac and Cheese, recipe follows
2 slices green pear
Freshly shredded Cheddar, for topping
1 quart light brown sugar
5 cups ketchup
1 cup pineapple juice
1 cup molasses
1/2 cup liquid hickory smoke
1/4 cup dry mustard
1/8 cup kosher salt
4 teaspoons freshly ground black pepper
2 teaspoons granulated garlic
2 teaspoons Cajun spice
2 sticks unsalted butter
1 cup all-purpose flour
2 quarts whole milk
2 quarts grated sharp Cheddar
2 tablespoons kosher salt
1 tablespoon ground black pepper
1 tablespoon Cajun spice
5 quarts precooked elbow noodles

Steps:

  • Preheat a smoker for cooking at 225 degrees F.
  • Trim any excess fat from brisket. Sprinkle the brisket liberally with kosher salt. Stir together the black pepper, granulated garlic and 1/4 cup Cajun spice, then sprinkle all over the brisket. Place brisket fat-side up on a smoking tray and place in smoker. Add soaked and drained hickory wood chips and smoke until an instant-read thermometer inserted in the center registers 195 degrees F, about 12 hours.
  • Let the brisket rest and cool completely, preferably overnight.
  • Preheat the smoker for cooking at 250 degrees F. Cut the brisket into 1/2-inch cubes. Spread these cubes in an even layer on a sheet tray. Sprinkle with brown sugar, the remaining 1/4 cup Cajun spice and the BBQ Sauce. Mix thoroughly with your hands to ensure every piece is coated. Spread them out in an even layer and put the tray back in the smoker with fresh soaked wood chips to smoke for 2 hours. Remove from smoker.
  • Hollow out the ciabatta. Add Mac and Cheese, some brisket burnt ends, green pear, some Cheddar and BBQ Sauce. Close the sandwich and place on a flattop panini press until cheese melts, about 1 minute. (Save the remaining meat for another use.)
  • Combine light brown sugar, ketchup, pineapple juice, molasses, liquid smoke, mustard, salt, black pepper, granulated garlic, Cajun spice and 1 cup water in a stainless steel saucepan. Heat on low heat, stirring constantly and scraping the bottom with a wooden spoon so the sugars do not burn on the bottom of the pan, until it comes to a simmer. Simmer until desired consistency has been achieved, for about 1 hour. Allow to cool completely, then transfer to a clean plastic container or mason jar and store in the fridge.
  • Melt butter in a saucepan over medium heat. Add flour to hot melted butter and whisk constantly for 3 minutes. Slowly add milk while continuing to whisk, then continue to cook, whisking, until sauce is thickened and bubbling. Remove from heat and stir in Cheddar, salt, pepper and Cajun spice. Stir until smooth and velvety, then fold in precooked noodles. Return to low heat and stir constantly until noodles are heated through. Serve.

1/2 Spanish onion, sliced
1 cup sliced cremini mushrooms
Salt
4 thick-cut slices rye bread
8 slices mozzarella
10 ounces sliced cooked brisket
1/4 cup Steak Sauce, recipe follows
2 tablespoons extra-virgin olive oil
4 cloves garlic, ground
2 shallots, ground
1 portobello cap, ground
1/2 cup Worcestershire sauce
1/4 cup balsamic vinegar
2 tablespoons ketchup
2 tablespoons brown sugar
1 teaspoon Dijon mustard
1 teaspoon salt
1/4 teaspoon chili powder
1/8 teaspoon ground allspice
2 tablespoons dark soy sauce
1 tablespoon molasses

Steps:

  • On a hot griddle, add the clarified butter, and then add the onions. Cook until just tender, and add the mushrooms. Season with salt, and cook until caramalized. Set aside to cool.
  • To assemble the sandwich, top one slice of the bread with 2 slices of mozzarella, 5 ounces sliced brisket, 2 tablespoons of the Steak Sauce, half of the caramelized onions and mushrooms and 2 more slices of mozzarella, then top with another slice of bread. Repeat for the remaining sandwich. Ladle some clarified butter on the griddle and place the sandwiches in the butter. Cook the sandwiches on both sides until the bread is toasted, the meat is warm and the cheese melts.
  • Heat the oil in a medium saucepan set over medium-high heat. Saute the garlic, shallots and portobello for 3 minutes. Add in the Worcestershire, vinegar, ketchup, sugar, mustard, salt, chili powder and allspice. Simmer for 15 minutes. Add 2 cups water, and then cook for 10 minutes. Add in the soy sauce and molasses, and cook for 5 minutes. Blend until smooth and cool.

1 tablespoon onion powder
1 tablespoon black pepper
1 teaspoon cayenne pepper
1 teaspoon garlic powder
1 teaspoon celery seed
1/2 teaspoon pink salt
8 ounces (2 sticks) butter, softened
1/2 cup grated Parmesan
4 ounces chopped garlic
Two 14-ounce cans tomato paste
2 ounces brown sugar
1 ounce salt
1 tablespoon dry mustard
1 teaspoon celery seed
1/2 teaspoon cayenne pepper
1 cup pineapple juice
1/2 cup apple cider vinegar
4 ounces molasses
2 ounces tamarind paste
1 trimmed brisket
5 cups chicken stock
20 to 24 slices fresh Texas toast
20 to 24 slices Cheddar

Steps:

  • For the caramelized onions: Heat a large skillet over medium heat. Add oil and the onions. Cook until translucent, then add the brown sugar and stir in until combined. Add the salt and pepper and continue to cook until desired color is achieved.
  • For the brisket rub: In a large mixing bowl, stir together the brown sugar, granulated sugar, salt, paprika, chili powder, onion powder, black pepper, cayenne, garlic powder, celery seed and pink salt.
  • For the garlic Parmesan butter: Combine butter, Parmesan and garlic in a bowl.
  • For the BBQ sauce: In a medium saucepan over medium heat, add the tomato paste and cook for 5 minutes. Add the brown sugar, salt, mustard, celery seed and cayenne pepper. Cook for 2 minutes. Add the pineapple juice, vinegar, molasses and tamarind paste and simmer, stirring occasionally, for 1 1/2 hours.
  • For the smoked brisket: Place brisket in a large pan and thoroughly rub both sides with 3 cups brisket rub (save the remainder for another use). Let the brisket marinade, refrigerated, overnight.
  • Preheat a smoker to 250 degrees F.
  • Smoke brisket until it has a developed crust, 14 to 16 hours.
  • Preheat the oven to 350 degrees F.
  • Place brisket in a pot with chicken stock and braise for 1 hour 30 minutes. Shred the meat. Reserve the au jus.
  • Spread garlic Parmesan butter on Texas toast. Toast on a flattop.
  • Melt 2 slices cheese on the other side of half of the toast.
  • Heat 6 ounces brisket in a pan with reserved au jus until the au jus reduces by a quarter. Add BBQ sauce, then lay on the bottom slice of toast. Top with a handful of caramelized onions and close sandwich. Slice in half and serve. Repeat to make more sandwiches.

1/2 teaspoon ground mustard
1 cup milk
1 egg, beaten
1 teaspoon vegetable oil
1/2 cup chopped green bell pepper
1/4 cup chopped onion
1 cup barbecue sauce
3/4 lb cooked roast beef (from deli), chopped
2 cups shredded Cheddar cheese (8 oz)

Steps:

  • Heat oven to 350°F. Spray 13x9-inch pan with cooking spray. In large bowl, stir Bisquick mix, mustard, milk and egg until mixed. Pour and spread in pan.
  • Bake 15 to 17 minutes or until toothpick inserted in center comes out clean. (Top will not brown.)
  • Meanwhile, in 10-inch nonstick skillet, heat oil over medium heat. Add bell pepper and onion; cook 3 to 4 minutes, stirring occasionally, until crisp-tender. Stir in barbecue sauce and beef. Cook until hot.
  • Spread beef mixture over baked bread base. Sprinkle evenly with cheese.
  • Bake 4 to 5 minutes longer or until cheese is melted. Cut into squares.
