SWEET ONION VINEGAR COLESLAW DRESSING



Sweet Onion Vinegar Coleslaw Dressing image

This simple homemade dressing is from my mom's recipe box. It's sweet and oniony, and bright and tangy with vinegar. With a sprinkling of celery seeds, this simple dish packs in tons of flavor!

Number Of Ingredients 6

1 c. sugar
1/2 c. white vinegar
1 c. vegetable oil
1 tsp. whole celery seeds
1/4 to 1/3 c. grated sweet white or yellow onion, to taste
kosher salt and freshly ground black pepper, to taste

Steps:

  • In a medium saucepan over medium-high heat, stir sugar and vinegar until sugar dissolves.
  • Remove saucepan from heat and add remaining ingredients, stirring to combine. Let cool.
  • Transfer to a 1-quart jar with a lid, or use a similarly sized container. The dressing will appear layered and separated, which is fine. Refrigerate to cool completely.

Yield 8 servings, 1/2 cup per serving

Number Of Ingredients 11

4 tablespoons reduced-fat ricotta cheese
1/2 cup nonfat yogurt
2 1/2 tablespoons red wine vinegar
1 teaspoon celery seed
1/8 teaspoon celery salt
2 teaspoons prepared mustard
3 tablespoons finely grated onion
1/2 tablespoon minced garlic
1 tablespoon sugar
2 cups finely grated cabbage
1 teaspoon chopped parsley

Steps:

  • Puree the ricotta in a food processor or blender until very smooth.
  • Add the yogurt and vinegar, and process thoroughly. Remove from processor, and add celery seed, celery salt and mustard.
  • Combine the onion, garlic, sugar, cabbage and parsley, and fold in the dressing. Serve over beef.

Pickled Onion and Cilantro Coleslaw for Pulled Pork image

This is an easy, flavorful coleslaw that is great as a stand-alone side dish or as a topping for fish or pulled pork tacos. This coleslaw is best when left to chill overnight.

1 teaspoon ground cumin
1 cup cider vinegar
½ cup white sugar
1 red onion, thinly sliced
½ cup olive oil
1 teaspoon ground cumin
1 head cabbage, thinly sliced
1 bunch cilantro, roughly chopped
salt and ground black pepper to taste

Steps:

  • Heat 1 teaspoon cumin in a small saucepan over medium heat until just toasted, about 3 minutes. Stir in vinegar and sugar. Bring to a boil; cook for 5 minutes. Add onion and reduce to a simmer. Simmer for 5 minutes. Let cool; cover and refrigerate for at least 4 hours.
  • Whisk olive oil, 1 teaspoon cumin, and 2 tablespoons juice from the pickled onions in a bowl. Mix in cabbage, cilantro, and half of the pickled onions. Stir in salt and black pepper. Refrigerate at least 4 hours.
