Here's what you need: pie crust, onion, pumpkin, bacon, ground sage, oil, eggs, sour cream, milk, salt, pepper, egg

1 pie crust, 9 inch (23 cm)
3 cups onion, sliced
2 cups pumpkin, or butternut squash
½ lb bacon
¼ teaspoon ground sage
oil, for frying
2 eggs
½ cup sour cream
¼ cup milk
salt, to taste
pepper, to taste
1 egg, for egg wash

Steps:

  • Preheat oven to 325˚F (170˚C).
  • Saute bacon in a medium-sized frying pan. Add squash and onion, until the onions are translucent and the squash golden brown. Season with sage, salt, and pepper. Set aside to cool.
  • Roll out pie crust into an even thin layer. With a 6-inch (15 cm) diameter bowl, cut out 6 circles. Fill a 6-cup cupcake tin with the cutouts.
  • Mix eggs, sour cream, and milk. Season with salt and pepper.
  • Add the onion-pumpkin-bacon mixture into the cups.
  • Carefully pour egg mixture into every cup. Decorate pies with leftover pie crust, if desired.
  • Cover edges and decoration with egg wash.
  • Bake for 40 minutes or until egg mixture is cooked through and crust is golden brown. (Cover top with aluminum foil for the last 10 minutes if decoration gets too dark.)

12 slices bacon
1 cup shredded Swiss cheese
⅓ cup chopped onion
2 cups milk
4 eggs
1 cup baking mix
⅛ teaspoon ground black pepper

Steps:

  • Heat oven to 400 degrees F (205 degrees C). Grease a 10-inch glass pie plate.
  • Place the bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Pat dry on paper towels and crumble the bacon. Sprinkle bacon, cheese, and onion in the pie plate.
  • In a medium bowl, stir the milk, eggs, baking mix, and pepper with fork until blended. Pour into pie plate.
  • Bake 35 to 40 minutes or until knife inserted in center comes out clean.

2 1/4 lbs potatoes, peeled and cubed
1 tablespoon vegetable oil
9 ounces bacon, cut into strips
2 ounces butter
4 onions, finely sliced
1 pinch sugar
5 ounces cheddar cheese, grated
2 tomatoes, sliced
salt & freshly ground black pepper

Steps:

  • Bring a pan of salted water to the boil and cook the potatoes until soft. Drain and mash.
  • While the potatoes are cooking, heat and cook the bacon in half the butter and the oil in a frying pan until just beginning to brown and crisp. Remove from the pan with a slotted spoon.
  • Add the onions to the pan. Add seasoning and the sugar. Fry gently until the onions are soft and caramelized. Take care not to allow them to burn.
  • Return the bacon to the pan and stir evenly through the onions. Add a little broth or water to de-glaze the pan and then tip the mixture into a heatproof dish.
  • Add the remaining butter and 4oz of the cheese to the potato. Season and mix well. Preheat the broiler to high.
  • Spoon the mixture over the onions and bacon, scatter with the remaining cheese and top with the slices of tomato.
  • Place under a hot grill until the cheese is melted and brown. Serve.

9 inches uncooked pie shells, , chilled
10 medium Spanish onions or 10 medium bermuda onions, thinly sliced
3 tablespoons butter
3 eggs
1 cup sour cream
1/4 cup dry sherry
salt and pepper
1 tablespoon parsley, chopped
1 teaspoon celery seed
1 slightly beaten egg white
6 slices Canadian bacon, cut in 1 inch pieces

Steps:

  • Melt butter in frypan.
  • Add the onions.
  • Stir and cook over low heat until they are clear.
  • Cool the onions well.
  • In a sauce pan, combine and heat slowly until blended.
  • 3 eggs,sour cream,sherry,salt and pepper, parsley and celery seed.
  • Stir the mixture into the onions.
  • Brush the bottom of the pie shell with the egg white.
  • Pour the onion mixture into the pie shell.
  • Place the bacon pieces evenly over the top of the onions.
  • Start the pie in a hot preheated oven, 450 degrees, bake for 10 minutes.
  • Reduce the heat to 300 degrees and bake a further 30 minutes or until the bacon is crisp and the pastry edges are light brown.
  • Serve very hot.
