ONE POT CHICKEN PARMESAN PASTA



One Pot Chicken Parmesan Pasta image

All the great chicken parmesan flavors, combined in one easy one pot pasta dish that's ready in 30 minutes! Less dishes, but a meal with maximum flavor!

Number Of Ingredients 13

2-3 boneless skinless chicken breasts, (diced into bite sized pieces)
1 tsp Italian seasoning
1/2 tsp garlic powder
1 medium yellow onion, (minced)
3 cloves garlic, (minced)
16 oz dried short-cut pasta ((I used rigatoni))
24 oz jar of your favorite marinara sauce ((I used Newman's Own))
water to fill empty marinara sauce jar
1 cup mozzarella cheese
1/2 cup parmesan cheese
salt and pepper, to taste
additional dried Italian seasoning, optional
fresh parsley and/or basil, minced (for garnish)

Steps:

  • To a large pot or skillet (I used my dutch oven), add a drizzle of olive oil and heat over MED-HIGH heat. Add chicken, season with salt, pepper, Italian seasoning and garlic powder. Cook about 5 minutes, until chicken is most of the way cooked through. Remove to a plate.
  • Add onion and garlic to the pot and cook about 2-3 minutes, until soft. Pour in marinara sauce, fill up empty sauce jar with water and add to the pot. Bring to a boil, then reduce to a strong simmer.
  • Add chicken and pasta, stir, then cover and cook for 10-15 minutes, until pasta is cooked to your liking. Stir in parmesan cheese and 1/4 cup of the mozzarella cheese.
  • Sprinkle remaining 3/4 cup mozzarella cheese on top of the dish and cook another 2-3 minutes, until cheese is melted and gooey.
  • Sprinkle with additional Italian seasoning if desired, and garnish with parsley or basil.

1 tablespoon olive oil
1 pound chicken breast (diced into 1/2" cubes)
salt & pepper
½ cup onion (diced)
2 cloves garlic (minced)
1 teaspoon Italian seasoning
1 tablespoon fresh parsley
14 ½ ounces diced tomatoes (drained)
3 cups chicken broth (+ ½ cup extra if needed)
1 cup heavy cream
12 ounces penne (or medium pasta)
⅔ cup mozzarella cheese
½ cup parmesan (divided)

Steps:

  • Season chicken with salt & pepper. Heat olive oil over medium heat and cook chicken until no pink remains. Set aside.
  • Add onion and garlic to the pan. Cook until onion is tender, about 3 minutes.
  • Add seasoning, parsley, 3 cups broth, tomatoes and cream and bring to a boil. Add pasta. Let simmer for about 15 minutes or until tender and thickened. If you need, add ½ cup broth till pasta is cooked. Mix in ¼ cup parmesan cheese.
  • Add the chicken back to skillet, top with mozzarella cheese and remaining ¼ cup parmesan, then broil 2-3 minutes or until cheese is melted and golden.

30 Minute One Pot Chicken Pasta image

Cheesy Chicken Pasta with extra veggies - made in one pan!

1 tbsp vegetable oil
1 large onion (peeled and chopped)
2 large chicken breasts (cut into chunks)
1 Pinch salt and pepper
2 cloves garlic (peeled and minced)
1 tbsp tomato puree ((usually gluten free, but best to check if required))
1 red bell pepper (de-seeded and chopped)
4 1/2 cups (300g) dried pasta - such as spiralli ((use a gluten free variety if required))
1 tsp dried oregano
½ tbsp Worcestershire sauce ((usually gluten free, but best to check if required))
28 oz (800g) tinned chopped tomatoes
1 1/4 cups (300ml) chicken stock (made from hot water from the kettle + 2 stock cubes (or 2 heaped tsp veg bouillon for gluten free))
1/2 cup (120ml) milk (half fat or full fat)
20 sugar snap peas/snow peas (roughly chopped)
1 packed cup (100g) mature/strong cheddar cheese (grated/shredded)
1 tbsp chopped fresh parsley

Steps:

  • Heat the oil in a large frying pan and add in the onions. Cook for 3 minutes on a medium-to-high heat until they start to turn translucent.
  • Add in the chicken, salt and pepper. Cook for a further 3 minutes until the chicken is sealed (it won't be cooked in the middle at this point).
  • Add in the garlic, tomato puree and red peppers. Stir, then add in the pasta.
  • Now add in the oregano, Worcestershire sauce, tins of tomatoes, stock and milk. Stir and bring to the boil, then turn down to a gentle simmer. Cover with a lid or some foil and simmer for 12-15 minutes (checking occasionally) until the pasta is cooked.
  • Stir in the chopped sugar snap peas (it's nice to add them at the end, so they're hot, but retain their crunch),
  • then sprinkle the pasta with cheese and put it under the grill/broiler for a couple of minutes until the cheese has melted.
  • Top with chopped chives and serve.

You can have this creamy and comforting pasta with chicken on the table in just 30 minutes and best of all, it all cooks in one pot -- you won't even need to boil water first! It's packed with tender chicken thighs, bell peppers, and onions, and finished off with a creamy tomato sauce.

2 tablespoons olive oil
1 pound boneless, skinless chicken thighs (about 4), cut into 1-inch pieces
2 1/2 teaspoons Cajun seasoning
2 medium green bell peppers, stemmed, seeded and cut into 1/4-inch strips
1 small yellow onion, thinly sliced
2 cloves garlic, chopped
12 ounces smooth penne (see Cook's Note)
4 cups low-sodium chicken broth
One 14.5-ounce can diced tomatoes
6 ounces cream cheese, cubed, at room temperature
Kosher salt
4 scallions, sliced, for serving

Steps:

  • Heat the oil in large wide pot over medium-high heat. Add the chicken and Cajun seasoning and cook, stirring occasionally, until the chicken just starts to change color and the spices are toasted, about 2 minutes.
  • Add the peppers and onions and cook until they just begin to release some of their juices, 3 to 4 minutes. Stir in the garlic and cook until softened, 1 minute.
  • Add the pasta, chicken broth and tomatoes and bring to a boil over medium-high heat. When it boils, continue to cook, stirring occasionally, until the pasta is al dente and the sauce is thickened and reduced by about half, about 15 minutes.
  • Remove from the heat and add the cream cheese and 1 1/2 teaspoons kosher salt. Stir until the cream cheese is combined and melted. Don't worry if the sauce looks runny, it will thicken as it sits. Top with sliced scallions.

  • Add the bell peppers and onion, cooking until the onion is translucent, about 6 minutes.
  • Add the chicken back to the pot with salt, pepper, chili powder, cumin, and garlic powder, stirring until evenly coated, about 30 seconds.
  • Add the milk and the penne, stirring constantly to prevent any pasta from sticking.
  • Cook for about 20 minutes until pasta is cooked and the milk has reduced to a thick sauce that coats the pasta.
  • Add the cheese and mix until melted.
