This rich, hearty beef stew has a garden full of flavor with vegetables like cabbage, rutabaga and carrots. Mom knew this main dish is one that would suit us 11 kids. When we were all home, she'd throw in extra vegetables to stretch it. -Anne Heinonen, Howell, Michigan

1 boneless beef chuck roast (2 pounds), cut into 1/2-inch cubes
1 tablespoon canola oil
1 large onion, chopped
5 cups water
1 teaspoon seasoned salt
1/2 teaspoon pepper
2 to 3 teaspoons salt, optional
5 to 6 medium potatoes, peeled and cut into 1/2-inch cubes
5 medium carrots, cut into 1/4-inch slices
1 medium rutabaga, peeled and cut into 1/2-inch cubes
1 cup sliced celery (1/2-inch pieces)
1/2 medium head cabbage, finely sliced
1/4 cup all-purpose flour
3/4 cup cold water
2 teaspoons browning sauce, optional

Steps:

  • In a Dutch oven over medium-high heat, brown meat in oil. Add the onion, water, seasoned salt, pepper and salt if desired; bring to a boil. Reduce heat; cover and simmer for 2 hours. , Add the vegetables; cover and simmer for 30 minutes or until the meat and vegetables are tender. Combine flour, cold water and browning sauce until smooth. Stir into stew. Bring to a boil; cook and stir for 2 minutes or until thickened and bubbly.

1/4 cup all-purpose flour
1/4 teaspoon freshly ground pepper
1 pound beef stewing meat, trimmed and cut into inch cubes
5 teaspoons vegetable oil
2 tablespoons red wine vinegar
1 cup red wine
3 1/2 cups beef broth, homemade or low-sodium canned
2 bay leaves
1 medium onion, peeled and chopped
5 medium carrots, peeled and cut into 1/4-inch rounds
2 large baking potatoes, peeled and cut into 3/4-inch cubes
2 teaspoons salt

Steps:

  • Combine the flour and pepper in a bowl, add the beef and toss to coat well. Heat 3 teaspoons of the oil in a large pot. Add the beef a few pieces at a time; do not overcrowd. Cook, turning the pieces until beef is browned on all sides, about 5 minutes per batch; add more oil as needed between batches.
  • Remove the beef from the pot and add the vinegar and wine. Cook over medium-high heat, scraping the pan with a wooden spoon to loosen any browned bits. Add the beef, beef broth and bay leaves. Bring to a boil, then reduce to a slow simmer.
  • Cover and cook, skimming broth from time to time, until the beef is tender, about 1 1/2 hours. Add the onions and carrots and simmer, covered, for 10 minutes. Add the potatoes and simmer until vegetables are tender, about 30 minutes more. Add broth or water if the stew is dry. Season with salt and pepper to taste. Ladle among 4 bowls and serve.

Hearty and delicious, a perfect comfort food for a rainy day or cold night. This recipe will fill your home with the aroma of great cooking. Great served with a favorite, rustic artisan bread. NOTE: Prepare as a crock-pot meal. Cook everything up that needs to be cooked, add the raw ingredients and liquid. Slow cook for 8-10 hours for an old world dinner after a long day's work. NOTE 2: With produce that absorb a lot of water such as celery onions and lettuce it is unfortunate to know that these vegetables pull lots of contaminants and pesticides from the soil and water that is given to them. For best quality (health wise) and taste please use organically grown produce.

2 lbs stew meat
5 slices smoked bacon, peppered and thick cut
3 parsnips, peeled and chopped
3 carrots, peeled and chopped
1 lb baby red potato, washed
2 ounces baby portabella mushrooms, washed and quartered
1 small onion, diced
3 garlic cloves, coarsely chopped
2 stalks celery, peeled and chopped
1 (4 cup) box beef broth (I like Pacific Organic brand)
2 (1 1/2 ounce) beef stew seasoning (I use McCormick brand)
2 tablespoons butter
2 tablespoons olive oil
2 tablespoons fresh parsley leaves, minced
water

Steps:

  • * In a large pot fry the bacon till it becomes crispy and remove bacon from the pot to cool. Once bacon is cool crumble or chop into small pieces to use later.
  • * Place the stew meat in the bacon grease to sear in the juices. The quicker your meat is browned on all sides the more tender your meat will become. Don't worry if the meat is still raw in the center -- it should be.
  • * While the meat is searing, saute the onion and celery in a frying pan with 1 tbsp of butter and 1 tbsp of olive oil. Once the onion has become clear and/or browned on the edges add the garlic. Continue to saute stirring frequently until all the ingredients have caramelized. By doing this you release the sweetness from the ingredients adding a scrumptious flavor to your stew.
  • * After the meat has been seared, cool it down by adding the entire contents of the boxed beef broth. Add your parsnips, potatoes, carrots and caramelized onions, celery and garlic.
  • * Add enough water to just cover all the ingredients. Cover and simmer for 1 hour.
  • * As the stew is simmering, saute the mushrooms in 1 tbsp of butter and 1 tbsp of olive oil. The key for perfect sauted mushrooms is room to cook. Once your mushrooms are sauted add them to the stew along with the bacon. Continue to simmer.
  • * Once you have all the ingredients in the pot add the dry packets. Stir till well blended and no dry clumps are visible. Add salt and pepper to taste and continue to simmer to complete the hour.
  • * Cool for 15 minutes, ladle into bowls or large plates. Garnish top with parsley and serve with your favorite bread and red wine.

Number Of Ingredients 14

1 pound lean beef chuck, trimmed and cut into 1 inch cubes
2 tablespoons all-purpose flour
2 teaspoons vegetable oil
2 onions, thinly sliced
2 cups fresh sliced mushrooms
2 cloves garlic, minced
2 teaspoons tomato paste
2 cups beef broth
4 cups sliced carrots
2 russet potatoes, sliced into 1/4 inch slices
1 cup chopped fresh green beans
1 tablespoon cornstarch
1 tablespoon cold water
¼ cup chopped parsley

Steps:

  • Coat beef with flour, shaking off excess. In a large nonstick stock pot, heat oil over medium-high heat, add beef and saute until brown, approximately 6 minutes. Remove beef from stock pot and set aside.
  • Add onions and mushrooms to stock pot and saute for 6 minutes. Add garlic and saute for 1 minute, continually stirring.
  • Skim off fat any fat from the stock pot and return cooked beef to pot; stir in tomato paste and broth. Add enough water to just cover ingredients and bring to a boil. Reduce heat to low and simmer until beef is tender, about 1 hour and 15 minutes.
  • Skim off any foam that has accumulated on the surface of stew and add carrots, potatoes and green beans. Cover partially and simmer for 15 minutes.
  • In a small mixing bowl, mix cornstarch and cold water. Stir mixture into stew. Increase heat and boil uncovered for 1 minute. Sprinkle with parsley and serve.

1/4 cup all-purpose flour
1 teaspoon salt
1/2 teaspoon black pepper
2 lbs stewing beef, cut into 1/2 inch cubes
2 tablespoons vegetable oil
2 cups beef stock
4 medium carrots, peeled and sliced
4 medium potatoes, peeled and chopped
2 stalks celery, chopped
1 large onion, diced
1 (19 ounce) can tomatoes, diced,with juice
1 bay leaf
1 tablespoon Worcestershire sauce
1/2 cup chopped fresh parsley or 2 tablespoons dried parsley
1 cup frozen peas
salt and pepper

Steps:

  • In a heavy plastic bag, combine flour, salt and pepper.
  • In batches, add beef to flour mixture and toss to coat.
  • Transfer to a plate.
  • In a large nonstick skillet, heat half the oil over medium high heat.
  • Cook beef in batches, adding more oil as needed, until browned all over.
  • With a slotted spoon, transfer beef to a slow cooker.
  • Add 1 cup stock to pan and stir to scrape up any brown bits.
  • Transfer stock mixtures to slow cooker.
  • Add carrots, potatoes, celery, onion, tomatoes (with juice) remaining stock, bay leaf, Worcestershire sauce and parsely; mix well to combine.
  • Cover and cook on low for 8 to 10 hours or on high for 4 to 6 hours until vegetables are tender and stew is bubbling.
  • Remove bay leaf and discard.
  • Add peas.
  • Cover and cook on high 15 to 20 minutes longer or until slightly thickened and peas are heated through.
  • Season to taste with salt and pepper.

2 lbs stewing beef
2 tablespoons vegetable oil
32 ounces beef broth
1 teaspoon Worcestershire sauce
1 garlic clove, minced
1 -2 bay leaf (I use 2)
1 medium onion, sliced
1 teaspoon salt
1 teaspoon sugar
1/2 teaspoon pepper
1/2 teaspoon paprika
1 dash ground allspice or 1 dash clove
3 large carrots, sliced (I use baby carrots)
4 red potatoes, quartered
3 celery ribs, chopped (I omit this)
2 tablespoons cornstarch

Steps:

  • Brown meat in hot oil. Add water, Worcestershire sauce, garlic, bay leaves, onion, salt, sugar, pepper, paprika, and allspice. Cover and simmer 1-1/2 hours.
  • Remove bay leaves. Add carrots, potatoes, and celery. Cover and cook 20-30 minutes longer or until vegetables are cooked.
  • To thicken gravy, remove 2 cups hot liquid. Using seperate bowl, combine 1/4 cup water and cornstarch until smooth. Mix with hot liquid and return mixture to pot. Stir and cook until bubbly and thickened. Enjoy!
