EASY OLD FASHIONED HERMIT COOKIES

Truly the best and most soft Hermit cookies recipe. These were Grandma's most favourite cookies - a New England classic with warm spices, nuts and dried fruit. A true old fashioned classic.

1/2 cup butter (room temperature)
1 cup brown sugar (packed)
2 large eggs
1/2 tsp vanilla extract
1 3/4 cups all purpose flour
1 tsp baking soda
1/2 tsp salt
1/2 tsp cinnamon
1/8 tsp allspice
1/8 tsp nutmeg
1 cup raisins
1 cup chopped dates
1 cup coarsely chopped walnuts or pecans

Steps:

  • Preheat oven to 350 F.
  • In a standing mixer on medium speed, cream together butter and brown sugar. Add eggs and beat until mixture is pale and thick - about 2 minutes. Beat in vanilla.
  • Reduce mixer speed to low and beat in flour, baking soda, salt, cinnamon, allspice and nutmeg. Incorporate raisins, dates and nuts (depending on your mixer, you may have to do this part by hand with a wooden spoon).
  • Drop cookies by tablespoonfuls onto a well-greased or parchment-lined baking sheet, about 2 inches apart (you will have to do batches). Bake 10-12 minutes, until edges are set but centres still appear moist. Cool on baking sheet 2 minutes, then transfer to wire racks to cool completely.

1 Cup Salted Butter, Softened to room temperature
1 1/2 Cups Brown Sugar, packed
2 eggs
1/2 Cup Cold Coffee
3 1/2 Cups Unbleached, All-Purpose Flour
1 teaspoon Baking Soda
1 teaspoon Ground Nutmeg
1 teaspoon Ground Cinnamon
2 1/2 Cups Raisins
1 1/4 Cups Chopped Nuts

Steps:

  • Whisk together the flour, baking soda, and spices. Set aside.
  • In a large bowl, cream together the sugar and butter until soft & fluffy. Add the eggs and mix well. Slowly add the coffee and mix well.
  • Add the dry ingredients and stir until completely incorporated.
  • Fold in the raisins and nuts.
  • Cover the bowl and refrigerate. Chill for at least 1 hour, longer okay.
  • Pre-heat oven to 400 degrees Fahrenheit. Grease baking sheets, or line with a sheet of parchment paper.
  • Drop the dough by Tablespoons onto prepared sheet pan.
  • Flatten the dough slightly with the palm of hand.
  • Bake for 10 - 12 minutes or until golden brown and set on top.
  • Cool on wire rack.

My grandmother called them Merry Christmas Cookies. This recipe is her own take on fruitcake cookies.

3 cups all-purpose flour
1 teaspoon ground cinnamon
½ teaspoon baking soda
1 cup butter, at room temperature
1 cup brown sugar, packed
3 eggs
½ cup milk
2 tablespoons vanilla-flavored cream sherry
7 cups chopped mixed nuts
2 cups chopped raisins
2 cups pitted chopped dates
1 pound candied pineapple, coarsely chopped
1 pound red and green candied cherries, chopped

Steps:

  • Preheat oven to 300 degrees F (150 degrees C). Grease several baking sheets. Sift together the flour, cinnamon, and baking soda in a bowl; set aside.
  • Beat together the butter and brown sugar in a large mixing bowl until fluffy, about 5 minutes. Beat in the eggs, one at a time. Gradually beat the flour mixture into the butter mixture, alternating each addition with about 2 tablespoons of milk until all the milk is incorporated and the dough is soft. Beat in the sherry, and mix in the nuts, raisins, dates, pineapple, and cherries until thoroughly mixed. Drop the dough by rounded teaspoons onto the prepared baking sheets.
  • Bake in the preheated oven until the cookies are set and the bottoms are very lightly browned, 20 to 30 minutes. Cool on wire racks.

An old fashioned recipe for a soft and chewy cookie that is spiced with cinnamon and clove, and filled with candied cherries, dates, and pecans. (AKA. Fruit Drop Cookies)

1 cup butter (softened (2 sticks))
2 cups brown sugar (packed)
2 large eggs
1/2 cup buttermilk
1 tsp vanilla
3 1/2 cups all purpose flour
1 tsp baking soda
1 tsp kosher salt
1/2 tsp ground cinnamon
1/4 tsp each : ground clove and nutmeg
2 cups candied cherries (cut in half )
2 cups dates (chopped)
1 1/2 cups pecans (chopped)
optional - pecan halves for the top of cookies

Steps:

  • Preheat the oven to 400°. Line a cookie sheet with parchment paper or a reusable silpat.
  • Cream together the butter and sugar, about 2 minutes. Add the eggs one at a time and mix for another minute.Pro Tip: crack your eggs into a separate bowl and then pour in, this will help avoid any shell pieces in your cookies!
  • Pour in the buttermilk and vanilla and mix another minute.
  • In a separate bowl sift together the flour, baking soda, salt, cinnamon, clove and nutmeg.
  • Add the flour a little at a time to the cookie dough mixture, just until combined.
  • Stir/Mix in the candied cherries, dates and chopped pecans. Pro Tip: if you want a more pronounced red and green look, save back 1/2 cup of each color cherries. Then dot the outside of the portioned cookies with the extra pieces.
  • Drop the dough onto the parchment lined baking sheet, about a heaping tablespoon each.
  • If using the pecan half, place on top of each cookie, pressing down to adhere and spread the cookie a little.
  • Bake for 9-11 minutes. They will be done when the very outside edge is just starting to turn golden. They are a very soft cookie so they will seem under done in the center, but will firm up as they cool. Watch the first batch and see how long it takes, then use that time for the remaining batches. If you are baking in batches, place the remaining dough in the refrigerator until needed.
  • Let the cookies cool for 5 minutes, then transfer to a cooling rack to cool the rest of the way.

2 cups white sugar
½ cup shortening
½ cup butter
3 eggs
5 teaspoons baking powder
½ cup milk
4 cups all-purpose flour

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease two cookie sheets.
  • Cream the sugar with the shortening and the butter or the margarine. Add the baking powder, eggs, milk and flour. Mix until combined.
  • On a lightly floured surface roll out the dough to 1/4 inch thick and cut into desired shapes. Place cookies on the prepared cookie sheets.
  • Bake at 350 degrees F (175 degrees C) until lightly browned.
