SOUTHERN GREEN BEANS RECIPE

Number Of Ingredients 5

1 quart of Green Beans
2 ounces of Pork side meat, or similar
1 teaspoon of Sugar
½ teaspoon of Black Pepper
Salt to taste

Steps:

  • Pour green beans into a colander to remove any liquid from jar or can.
  • Rinse lightly with cool running water, let drain.
  • Slice the pork side meat into ½ thick slices.
  • Place pork in a sauce pot over medium heat.
  • Cook meat until the fat sections appear translucent in color. Remove the meat if desired but leave the rendered fat in the pot to season the beans as they cook.
  • Add 2 cups of warm water.
  • Add the drained green beans. Add more water if needed to reach about 1 inch over top of beans.
  • Add Sugar
  • Add Black Pepper
  • Add Salt
  • Stir well and bring to a low boil. Cover pot, REDUCE heat to medium-low, simmer 30-45 minutes or until done.
  • Taste a bean or two to see if they are cooked to your desired tenderness. Add more salt if needed, or more water if needed to finish cooking the beans to your taste preference.
  • Remove from heat when done, cover until ready to serve.
  • Serve warm and Enjoy.

6 bacon strips, cut into 1/2-inch pieces
2 pounds fresh green beans
3 tablespoons brown sugar
1/2 cup water

Steps:

  • In a large cast-iron or other heavy skillet, cook bacon over medium heat until crisp, about 5 minutes. Add the beans, brown sugar and water. Stir gently; bring to a boil. Reduce heat; cover and simmer until beans are crisp-tender, 15 minutes. Remove to a serving bowl with a slotted spoon.

An old southern recipe from Mississippi for green beans and potatoes. You can delete the bacon or ham hock and they still taste good. Green beans adds a special taste to potatoes and I love it.

2 lbs fresh green beans
2 slices bacon or 1 ham hock
3 medium potatoes
salt and pepper

Steps:

  • In pot cover green beans with water and boil till tender with potatoes and bacon (or ham hock); drain.
  • Add your favorite seasoning (I like butter, salt, and pepper).
  • Remember ham hocks take a little longer than green beans, so if you use a ham hock, boil it first till tender then add the rest and cook. I personally never use ham hock due to fat content--I usually just use the bacon strips. I only listed it here as it was in the old south recipe.

1 lb green beans
1 teaspoon salt
1 tablespoon bacon grease
2 tablespoons butter

Steps:

  • Wash beans and snap them into 1 1/2" pieces, discarding ends.
  • Cover with water and add salt and bacon grease.
  • Cover and bring to a boil.
  • Turn down to simmer and continue cooking for about an hour.
  • Pour off water and add 2 T butter. Let sit with lid on for a minute for butter to melt, then toss beans a little to distribute butter.

  • Heat a Dutch oven (or other large heavy-bottomed lidded skillet or pot) on medium heat. Add the bacon pieces and saute until golden. Remove the bacon from the pot, leaving the grease behind, and drain the pieces on a paper towel lined plate.
  • Add the onion and saute until softening and turning translucent (about 3 to 5 minutes). Add the garlic and saute until aromatic (about 30 seconds to 1 minute). Turn the heat off.
  • Return the pot to the stove and turn the heat to medium-low. Add the water and deglaze the pot, using the end of a spatula to scrape up any brown bits from the bottom. Add the bouillon, salt, pepper, sugar, and red pepper flakes (if using). Stir to combine. Add the sauteed onion and garlic back to the pot and stir.
