GRANDMA'S SOUR CREAM COFFEE CAKE - AN OLD FASHIONED POUND CAKE RECIPE
Grandma's Sour Cream Coffee Cake recipe is perfect for breakfast or as dessert, especially when served with a hot cup of coffee. This sour cream coffee cake is easy to make and looks gorgeous since it's made in a Bundt pan.

Steps:
- Beat butter, margarine and sugar (1 1/2 cups) until creamy.
- Add the eggs, one at a time, and continue beating.
- In a separate bowl, stir together flour, baking powder, and baking soda. Add to the creamed mixture alternately with sour cream, mixing after each addition.
- Add vanilla, and mix until completely incorporated.
- In a small bowl, mix chopped nuts, sugar (4 T.) and cinnamon.
- Prepare a Bundt pan by greasing generously, and lightly dusting with flour.
- Pour 1/3 of the batter into the bottom of the prepared Bundt pan. Smooth into a consistent layer with a knife. Sprinkle with 1/2 of the cinnamon sugar mixture.
- Pour an additional 1/3 of the batter over the cinnamon sugar layer, smooth again with a knife. Sprinkle with the remaining 1/2 of the cinnamon sugar mixture.
- Spread the remaining 1/3 batter on top the cinnamon sugar layer, and smooth with a knife.
- Bake in a preheated 350 degree F oven for 1 hour.
- Remove from the oven, and let cool for 1 hour in the pan. Take a knife gently around inner and outer edges to loosen, and invert to remove from pan.

- 1. Preheat oven to 325°F; grease a 12-cup Bundt pan or a 10x4-inch tube pan.
- 2. Prepare apple-nut filling: Cook all ingredients, except nuts, over medium heat, stirring constantly. Cook until apples are tender. This will take approximately 3 to 4 minutes. Stir in nuts. Set aside.
- 3. Combine sugar, butter, vanilla and eggs in a large mixing bowl. Beat at medium speed, 2 minutes, scraping bowl occasionally.
- 4. Alternately add the dry ingredients and the sour cream, beginning and ending with the dry ingredients. Beat well between each addition on low speed.
- 5. Spread 1/3 of the batter (about 2 cups) in the baking pan. Top with 1/3 of the filling. Repeat this pattern 2 more times, until all batter and filling have been used.
- 6. Bake at 325°F for 1 hour, until a toothpick inserted near the center comes out clean. Cool in the pan for 20 minutes, then turnout onto a serving plate and cool completely.

- Preheat the oven to 350 degrees F. Grease and flour a 10-inch tube pan.
- Cream the butter and sugar in the bowl of an electric mixer fitted with the paddle attachment for 4 to 5 minutes, until light. Add the eggs 1 at a time, then add the vanilla and sour cream. In a separate bowl, sift together the flour, baking powder, baking soda, and salt. With the mixer on low, add the flour mixture to the batter until just combined. Finish stirring with a spatula to be sure the batter is completely mixed.
- For the streusel, place the brown sugar, flour, cinnamon, salt, and butter in a bowl and pinch together with your fingers until it forms a crumble. Mix in the walnuts, if desired.
- Spoon half the batter into the pan and spread it out with a knife. Sprinkle with 3/4 cup streusel. Spoon the rest of the batter in the pan, spread it out, and scatter the remaining streusel on top. Bake for 50 to 60 minutes, until a cake tester comes out clean.
- Let cool on a wire rack for at least 30 minutes. Carefully transfer the cake, streusel side up, onto a serving plate. Whisk the confectioners' sugar and maple syrup together, adding a few drops of water if necessary, to make the glaze runny. Drizzle as much as you like over the cake with a fork or spoon.

GRANDMA'S APPLE NUT CAKE
This is my husband's favorite. His mom gave it to us many years ago. I have refined the recipe just a little since then. Please don't tell her...hehe. It doesn't need a frosting because it is so yummy just by itself, but it would dress it up to drizzle with a thin creamy icing. I had misplaced this recipe for the longest time and had thought I had lost it, so I hadn't made it for ages. My husband found it this weekend and I have made it twice since then. Both times it was gone before it was even all the way cooled, thanks to our 5 daughters. My husband and I barely managed to claim a few bites before it disappeared. I'm posting it here to share with everyone and to keep it from ever getting lost again. It's definately a keeper.

- Grease and flour a 9x13 baking pan.
- Preheat oven to 325 F.
- Sift dry ingredients into a bowl and set aside.
- In another mixing bowl, stir together the first six ingredients, then fold in the dry ingredients, followed by the apples and nuts.

- Pre heat the oven to 350 degrees. Lightly grease and flour a 9 inch springform pan. To make the baked cake easier to remove from the pan lightly grease the pan, line the bottom with parchment paper and lightly grease the parchment paper. Dust the pan with flour.
- For the Nut Topping:Place the nuts, brown sugar and cinnamon in a small bowl, stir to combine and set aside.
- Combine 1/3 cup flour and 1/4 cup butter into a medium bowl. Cut the butter into the flour using a pastry blender until it resembles coarse crumbs. Add 3/4 cup of the nut topping mix and stir to combine. Toss the apples with lemon juice and set aside.
- Combine the flour, baking powder, baking soda and salt in a medium bowl. Stir together to combine. Set the bowl aside.Place the butter and sugar into a large bowl. Using an electric mixer , beat the two together until they are light and fluffy. Add the eggs to a bowl one at a time and beat until well incorporated.
