It's amazing to know that this corn pudding originally appeared in a Kansas cookbook dated 1854! This time-tested recipe is wonderful, and I've served it often to my family and guests. It's also a recipe I've shared with many of my friends who've requested it.

3 large eggs
2 tablespoons butter, melted
2 tablespoons all-purpose flour
1 tablespoon sugar
1 teaspoon salt
1 cup whole milk
1 can (16-1/2 ounces) cream-style corn

Steps:

  • In a bowl, beat eggs. Add butter, flour, sugar and salt; mix well. Stir in milk and corn. Pour into a greased 1-1/2-qt. baking dish. Bake, uncovered, at 350° for 35 minutes or until a knife inserted in the center comes out clean.

This delicious, easy, comforting side dish is perfect for any holiday or Southern meal.

2 tablespoons butter
1 egg
1/3 cup milk
1/2 cup sour cream
3 tablespoons sugar
1/2 cup all purpose flour (I substituted gluten-free flour)
2/3 cup polenta or cornmeal
1 tablespoon baking powder
1/4 teaspoon salt
15 ounces can creamed corn
15 ounces can whole kernel corn (drained)
1/2 cup shredded cheddar cheese (2% milk cheese OK)

Steps:

  • Preheat oven to 400 degrees F. Spray an 8" square baking dish with cooking spray.
  • Place butter in a microwave-safe bowl, and heat for 30 seconds or just until melted. Set aside.
  • Whisk together egg, milk, sour cream, and sugar. Slowly pour in melted butter, whisking constantly.
  • Add flour, polenta, baking powder, and salt, and stir until combined. Stir in both cans of corn and cheddar cheese.
  • Pour corn mixture into prepared pan, and bake in preheated oven for 35-45 minutes, or until set in the middle.

4 Tbsp all purpose flour
4 Tbsp sugar
1/2 tsp salt
2 large eggs
1/4 c light cream
4 Tbsp butter, melted
1 15.25 ounce can crisp, sweet whole kernel corn, drained
1 14 3/4 ounc can cream style corn

Steps:

  • 1. Heat oven to 350 degrees F. Generously coat a 2-3 quart baking dish with cooking spray. Set aside.
  • 2. In a large bowl, combine the flour, sugar and salt. Add the eggs and mix well. Mix in the cream and melted butter, Whisk with a wire whisk until all combined. Add the drained corn and creamed corn and mix until all combined.
  • 3. Transfer to prepared baking dish.
  • 4. Bake for 1 hour to 1 hour 15 minutes or until edges start to brown and middle is set.

½ cup milk
4 tablespoons cornstarch
1 (14 ounce) can corn kernels, drained
2 (14.75 ounce) cans cream-style corn

Steps:

  • Preheat oven to 400 Degrees F (200 degrees C). Grease a 2 quart casserole dish.
  • In a large bowl, lightly beat eggs. Add melted butter, sugar, and milk. Whisk in cornstarch. Stir in corn and creamed corn. Blend well. Pour mixture into prepared casserole dish.
  • Bake for 1 hour.

1/2 cup sugar
2 eggs
8 ounces sour cream
7 ounces corn muffin mix
1/2 cup milk
15 ounces whole corn, drained
15 ounces creamed corn

Steps:

  • Cream the butter and sugar together.
  • Add eggs one at a time, beating well after each addition.
  • Beat in sour cream.
  • Gradually add in the muffin mix, alternating with the milk.
  • Fold in the corn and creamed corn.
  • Pour into 3 qt baking dish.
  • Bake uncovered at 325 degrees for 45 minutes, or until set.

  • Blend honey and milk together.
  • Add flour gradually, srirring until smooth.

2 eggs, beaten
2 teaspoons salt
2 tablespoons white sugar
ground black pepper to taste
2 cups milk

2 cups fresh corn

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Place butter in a 9x13 inch baking pan and set in oven to melt.
  • In a medium bowl, whisk together eggs, salt, sugar, pepper, milk and flour. When mixture is smooth, stir in corn. Remove pan from oven when butter is melted. Pour butter into corn mixture and stir well. Pour corn mixture into baking pan.
  • Bake in preheated oven for 1 hour or until set in center and golden brown on top.
