SOUTHERN-STYLE COLLARD GREENS
There are many delicious ways to cook collard greens, but this is the way we do it in the South.

Steps:
- Cook bacon over medium heat in a 10-qt. stockpot for 10 to 12 minutes or until almost crisp.
- Add onion to stockpot, and sauté 8 minutes. Add garlic and ham, and sauté 1 minute. Stir in broth, collard greens, apple cider vinegar, sugar, salt, and pepper. Reduce heat to medium-low, and cook 2 hours or until desired degree of tenderness.
GRANDMA'S COLLARD GREENS
These are without a doubt, the best collard greens I have ever eaten (and I have had my share). My grandma used to make this recipe in the summer when her collards in the garden were ready. If you don't like these, you don't like collard greens ... guaranteed!! Add more red pepper flakes if you like it spicy.

Steps:
- Cook onion and bacon in a large pot over medium-high heat until onions are soft, 5 to 7 minutes. Add chicken stock, vinegar, brown sugar, and pepper flakes and cook and stir until brown sugar has completely dissolved, 2 to 3 minutes.
- Add 1/2 of the collard greens, reduce heat to medium, and cook until greens are slightly wilted, about 10 minutes. Add remaining greens, toss to combine, and simmer over medium-low heat until tender, about 30 minutes. Season with salt and pepper.

Steps:
- Cook bacon in a large stockpot or Dutch oven over medium heat for 10-12 minutes, or until almost crisp. Add onion, and sauté until translucent, about 7-8 minutes.
- Stir in garlic and sauté 1 more minute. Add broth, collard greens, vinegar, sugar, salt, and pepper. Use a wooden spoon to stir, scraping up any browned bits from the bottom of the pot.
- Simmer (uncovered) over low heat for about 1 ½ hours, stirring occasionally (or until collards reach desired level of tenderness).
- Taste and season with additional salt and pepper, if necessary. Garnish with crushed red pepper flakes or hot sauce.

- 1. COOK FATBACK AND HOG JOWL, IN A 6-QUART DUTCH OVEN, OVER MEDIUM HEAT FOR 8 TO 10 MINUTES OR UNTIL CRISP.
- 2. REMOVE FATBACK AND JOWL AND SET ASIDE.
- 3. RESERVE 1/4 CUP DRIPPINGS.
- 4. BRING 4 CUPS WATER AND 1/4 CUP DRIPPINGS TO A BOIL OVER MEDIUM HIGH HEAT.
- 5. ADD 1/3 OF GREENS, STIRRING OFTEN, 2 TO 3 MINUTES OR UNTIL WILTED.
- 6. REPEAT PROCEDURE TWICE WITH REMAINING GREENS.
- 7. REDUCE HEAT TO LOW; COVER AND COOK, STIRRING OCCASIONALLY, UNTIL COLLARDS ARE TENDER.
FRANCES'S OLD FASHIONED COLLARD GREENS
The man I love grew up eating Collard Greens and this was my first attempt! Now many recipes will call for bacon but this is the tried and true old fashioned way and you just feel so good making it for your family on a Sunday. This recipe is a pleaser and it came from Sylvia's Family Soul Food Cookbook. Sometimes I add red pepper flakes for heat. If you can't eat pork, but don't want to miss out, use smoked turkey!

Steps:
- Heat the oil in a 4 quart pot. Add the meat and cook until partly browned on both sides, about 3 minutes.
- Add the water and bring to a boil. Reduce the heat and simer for 15 minutes covered.
- While the pork is cooking, wipe the collards with a damp towell, then wash two or three times until all the dirt and grit has been removed. Chop the greens.
- Add the greens to the pot. Add the sugar and salt. Cook, covered over medium heat for 30-35 minutes.
- Drain before serving, if desired.

- In a 6-qt. stockpot, heat 1 tablespoon lard over medium heat. Add onion and garlic; cook and stir until tender. Add ham hocks, water, seasoned salt, pepper flakes, and sugar. Bring to a boil. Reduce heat; simmer, uncovered, until meat is tender, 55-60 minutes., Add collard greens, wine, and remaining 1 Tbsp. lard. Return to a boil. Reduce heat; simmer, uncovered, until greens are very tender, 55-60 minutes. Remove meat from bones; finely chop and return to pan. Discard bones. Serve with a slotted spoon.
