Steps:

• Mix all ingredients.
• Form mixture into two equal size patties.

Steps:

• Open albacore tuna and drain the water from the tuna. In a small bowl, combine albacore tuna, chopped onion, egg whites, Old Bay Seasoning, salt, pepper, and Panko bread crumbs. Mix well and form mixture into 4 equal size patties. Spray a medium sized skillet with non-stick cooking spray and cook tuna patties over medium heat, turning occasionally to make sure both sides cook evenly. Steps:

• In a large bowl, combine 12 crushed crackers and next 5 ingredients.
• Place tuna in bowl with cracker mixture; with rubber spatula, gently fold mixture together.
• Form into 8 small patties.
• Crush the remaining 3 crackers on a plate and lightly coat the cakes.
• Heat olive oil in large non stick skilet.
• Add patties, cook until browned 12-15 minutes.
