GRANNY'S OKRA SOUP

A delicious beef and vegetable soup that is a variation on the okra and tomato-based soup my great-grandmother used to make on the farm in Alabama. It's great with fresh or canned veggies, works with just about any alterations - I use fresh, locally-grown ingredients and it's always amazing. All ingredient measurements are approximate. The important thing about Granny's okra soup is that the tomato is the main ingredient, but okra, lima beans and potatoes are important too. Adding or subtracting other vegetables to taste or based on availability is perfectly acceptable.

4 cups chopped tomatoes
2 cups lima beans
2 cups chopped okra
2 cups chopped red potatoes
1 cup corn
1 cup green beans
½ cup chopped carrots
1 (6 ounce) can tomato paste
4 cups chicken stock
1 pound ground beef
½ tablespoon garlic powder
½ tablespoon celery salt
½ tablespoon onion powder
1 small onion, chopped
2 cloves garlic, crushed, or more to taste
3 tablespoons butter

Steps:

  • Combine tomatoes, lima beans, okra, potatoes, corn, green beans, carrots, and tomato paste in a large soup pot. Pour chicken stock over mixture and bring to a boil over medium heat. Reduce heat and simmer until vegetables begin to soften, about 15 minutes.
  • Season ground beef with garlic powder, celery salt, and onion powder. Set aside.
  • Heat butter in a skillet over medium-high heat. Add onion and garlic when butter stops bubbling; cook and stir for 1 minute. Spread ground beef evenly in the pan. Cook until it has a nice brown sear, stirring minimally to end up with mostly medium-sized chunks, 5 to 7 minutes. Drain skillet and add beef, onions, and garlic to the soup pot.
  • Bring soup mixture to a boil; reduce heat to simmer, cover, and cook until vegetables and beef have cooked down, 1 to 2 hours.

AFRICAN OKRA SOUP

Hearty, healthy are some of the words to describe this African Okra Soup. It goes well with fufu of any kind or garri.

3-4 pounds oxtail, goat meat, cow leg (foot cow), about 2 kg
4 oz smoked fish (deboned) (About 1 1/2 cups)
1/3 cup red palm oil
1/2 cup chopped onion
1/3 cup crayfish (coarsely ground) (crayfish is a kind of dried shrimp common in Cameroon, Nigeria, in West Africa)
4 cups beef stock (from boiling the meats used in this recipe)
2 seasoning cubes (Maggi) (4g per cube)
Salt to taste
2 habanero peppers (optional)
1 pound fresh okra (chopped into circles), half kg
5 oz fresh spinach (roughly chopped)

Steps:

  • Boil the Meats. Rinse the meats you choose to use thoroughly then put them in a pot. Add water to just over above the meat. Add salt and seasoning cubes (Maggi) as needed. Also add half a medium onion (chopped). Cover and let it cook on high heat until the meat is tender.
  • Note: start boiling tougher meats first before adding the other meats or boil all the meats at the same time then take out the ones that get tender first and leave the others to cook.
  • A pressure cooker or an instant pot makes boiling the meats easier.
  • Place a pot on high heat and pour in the palm oil. Let it heat up for 2 to 3 minutes then reduce the heat to medium high and add the onions and let them sauté for about 1 minute while stirring from time to time.
  • Add the crayfish to the pot and stir for only a few seconds to release its flavor. Do not allow the crayfish in oil for long or the crayfish will burn.
  • Add the cooked meats to the pot, followed by their stock. Bring to a simmer, spooning some of the liquid over the meats if they are not completely submerged.
  • Add the smoked fish to the pot. Taste for salt then add the 2 seasoning cubes. Note that seasoning cubes are salty so be the judge and use less if your stock was salty enough. Let everything simmer together on medium heat.
  • Add the habanero peppers whole to the pot. I do it this way to soften the peppers so those who want spicy soup can press some of the pepper into their soup to release its spiciness.
  • However, if you want the entire soup spicy feel free to blend one habanero pepper with water then add it to the soup.
  • While the pot simmers prepare the okra. Place about a cup of the okra into a blender or food processor and pulse about 2 seconds at a time to reveal a chopped consistency. (You can see how I do this in the video).Repeat the process with all of the okra.
  • Add the okra to the pot. Gently stir to ensure it is evenly distributed. Let it cook for 2 minutes.
  • Add the spinach to the pot and stir in. Let everything cook for another 2-3 minutes. Turn off the heat and serve hot with your fufu of choice.

2 dried hot red chili peppers (optional)
2 tablespoons vegetable oil
2 cups sliced fresh okra
1 tomatoes, chopped
2 cups water
1 (14 1/2 ounce) can chicken broth
2 (6 ounce) cans tomato paste
1 (10 ounce) package frozen chopped spinach, thawed
1/2 teaspoon salt
1/2 teaspoon pepper
1/4 teaspoon rubbed sage
6 cups water
1 teaspoon salt
2 1/2 cups cream of wheat

Steps:

  • For Soup:.
  • Saute onion and chile peppers in hot oil 1 minute.
  • Add okra and tomatoes; reduce heat and simmer, stirring occasionally for 5 minutes.
  • Add 2 cups water, broth and tomato paste; return to a simmer and cook, stirring often for about 7 minutes.
  • Stir in spinach, salt, pepper, and sage and simmer for 10 minutes, stirring often.
  • Serve with Fou Fou on top.

  • Bring 6 cups water to a boil and add salt.
  • Gradually add Cream-of-Wheat, stirring constantly.
  • Reduce heat to low and cook, stirring vigorously, 3-4 minutes, or until thick.
  • Press into a 1 quart bowl sprinkled with cold water.
  • Invert onto a serving plate and serve immediately.

KARDEA'S OKRA SOUP WITH SHRIMP

Okra soup is a traditional tomato-based soup that originated in West Africa. While you can add any protein to this dish, I like using shrimp when it's in season in the Lowcountry because it pairs really well with the okra.

2 cups medium shrimp, peeled and deveined, shrimp reserved for the okra soup, shells cleaned in cold water and reserved for the shrimp broth
1 cup large-chopped carrot
1 cup large-chopped celery
1 cup large-chopped onion
1 tablespoon unsalted butter
1 1/2 teaspoons kosher salt
1 bay leaf
2 tablespoons olive oil
2 garlic cloves, minced
1 large onion, chopped
1 medium green bell pepper, chopped
2 tablespoons unsalted butter
2 cups fresh or thawed frozen corn
2 cups thawed frozen lima beans
1 cup diced fresh Roma tomatoes
One 28-ounce can diced tomatoes
Kosher salt and freshly ground black pepper
2 1/2 cups sliced fresh or thawed frozen okra
1 teaspoon ground ginger
Juice of 1/2 lemon
Steamed rice, for serving, optional

Steps:

  • For the shrimp broth: Put the shrimp shells, carrots, celery, onions, butter, salt, bay leaf and 10 cups water in a large pot. Bring to a boil for 5 minutes. Reduce the heat and simmer, covered, for about 45 minutes, making sure to skim off and discard any impurities that rise to the top. Strain the liquid, reserving 3 cups of the broth for the okra soup. Reserve the additional broth for another use.
  • For the okra soup: Heat a large gumbo pot or Dutch oven over medium-high heat, add the olive oil, garlic, onions, green peppers and 1 tablespoon of the butter and saute until the vegetables soften. Next, add the corn, lima beans and Roma tomatoes and mix together. Add the canned diced tomatoes and reserved 3 cups shrimp broth, stir, cover, bring to a simmer and cook for about 20 minutes.
  • While the soup is simmering, melt the remaining tablespoon of butter in a medium skillet, add the reserved shrimp and season with salt and pepper. Cook until the shrimp begin to turn pink. Add the okra, ground ginger and lemon juice, stir to mix and then cook until the okra and shrimp are cooked through.
  • Once the soup has simmered for 20 minutes, add the shrimp and okra mixture to the soup. Cover and cook for an additional 10 minutes. Stir the soup, then serve over rice (or enjoy it without rice).

1 (1 lb) ham hock
3 cups sliced okra (about 3/4 lb)
1 cup fresh corn, cut from cob

1 bay leaf
1/2 teaspoon salt
1/4 teaspoon dried oregano
1/4 teaspoon pepper
hot cooked yellow rice

Steps:

  • Combine all ingredients except rice in a large Dutch oven, brng to a boil.
  • Cover, reduce heat, and simmer 1 1/2 hr, stirring frequently.
  • Remove bay leat & discard.
  • Remove ham hock from soup.
  • Remove meat from the bone and chop.
  • Add meat from the bone and stir well.
  • Place rice in bowls & ladle soup over rice.

2 cups okra, sliced
1 broiler chicken (2 1/2 lbs)
1/3 cup long grain rice, uncooked
6 cups chicken broth or 6 cups water

  • Cut up broiler-fryer chicken.

  • Add remaining ingredients and continue to cook slowly about 30 minutes, until chicken and rice are tender.
  • Remove chicken pieces and debone.
  • Cut meat into small pieces and return to kettle.

Lowcountry Okra Soup image

Representing ingredients from at least four continents and five spiritual traditions, this okra soup is a true amalgamation of global culinary influences, from West Africa to Peru, all of which intersect in the Lowcountry kitchen. This version belongs to Amethyst Ganaway, a chef and writer of Gullah Geechee ancestry, a direct descendant of people once enslaved on the lower Atlantic Coast. Ms. Ganaway's okra soup is not your Louisiana-style gumbo, thick with roux and rich with sausage and shrimp. It's a simple, wholesome dish that, like the best Gullah Geechee cooking, emphasizes the freshness of its ingredients. As Ms. Ganaway advised, "The okra will naturally thicken the broth, and the fresher it is, the better it'll do the job.'' Since the vegetable is cooked for just 10 minutes, it grows tender but not slimy, while the pod's caviar-like seeds add a textural pop with every bite.

2 pounds turkey necks
1 pound smoked turkey leg or thigh meat
1 medium white or yellow onion, quartered
Salt
1 teaspoon onion powder
1/2 teaspoon smoked paprika
1/2 teaspoon ground cayenne
1/2 teaspoon freshly ground black pepper
15 ounces (fresh or canned) diced tomatoes (about 2 cups)
1 pound okra (fresh or frozen), trimmed and sliced into 1/2-inch pieces
3 ears sweet corn, sliced off the cob
2 cups cooked fresh or canned butter beans (about 15 ounces), drained
Freshly cooked long-grain white rice, cornbread and hot sauce, for serving

Steps:

  • Set an 8-quart Dutch oven or similar pot over medium-high heat. When it is hot, add oil. When oil shimmers, lay in turkey necks and sear until evenly golden brown, about 4 minutes per side.
  • Add 4 quarts water, smoked turkey, onion and a generous pinch of salt. Bring to a boil, then reduce to a heavy simmer, with the lid ajar to ensure the pot doesn't boil over. Check pot every 30 minutes to remove any scum that forms, and add water as needed to ensure that the meat is always submerged. Cook for about 3 hours or until all the meat is tender and broth is flavorful.
  • While it's traditional to leave onion and bones in the soup (and suck meat off turkey neck as you eat), you can strain broth, remove onion and pick meat off bones at this point if desired, returning meat to broth. Either way, reduce broth to about 3 quarts, then stir in onion powder, paprika, cayenne and pepper, and season to taste with salt.
  • Stir in tomatoes, then simmer uncovered for 20 minutes. Taste, and adjust seasoning for salt, then add okra, reduce heat to low and cook until okra is just tender, not mushy, and still has bite to it, no more than 10 minutes. The okra will naturally thicken the broth as it cooks.
  • Stir in corn and beans, cook for another minute or 2, then serve immediately with rice, cornbread and hot sauce. Refrigerate leftovers for up to 5 days, or freeze for up to 1 month. Return to a boil for 3 minutes before serving.
