Marie Hoyer of Lewistown, Montana whisks together tarragon, chives, parsley and Dijon mustard in her delightful vinaigrette. The fast-to-fix dressing will add a fresh tang to any bowl of mixed greens.

1/2 cup olive oil
1/3 cup red wine vinegar
2 tablespoons minced fresh tarragon or 2 teaspoons dried tarragon
1 teaspoon Dijon mustard
1 garlic clove, minced
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon minced chives
1/2 teaspoon minced fresh parsley
Salad greens

Steps:

  • In a jar with a tight-fitting lid, combine the first 9 ingredients; shake well. Serve over salad greens.

1 cup tarragon sprigs
2 cups white wine vinegar
Additional fresh tarragon sprig, optional

Steps:

  • Wash tarragon and pat dry. Place in a sterilized jar. Using a wooden spoon, gently bruise the tarragon. Add the vinegar. Cover and store in a cool dark place for 2-3 weeks to let flavors develop., Strain and discard tarragon. Pour into a sterilized decorative bottle. Add additional tarragon if desired. Store in a cool dark place for up to 6 months.

  • Mix all ingredients in a jar or bowl.
  • Refrigerate before serving for about an hour.
  • Shake well before serving.

My Favorite Oil and Vinegar Dressing image

Excellent on a salad topped with blue cheese, dried cranberries, mandarin oranges and pecans but good on any green salad. I have made it with Splenda and even though it isn't quite as good IMHO, it is still a nice dressing. (The servings amount is a guess)

2/3 cup sugar (if you prefer a tarter dressing, cut back on the sugar some) or 2/3 cup Splenda sugar substitute (if you prefer a tarter dressing, cut back on the sugar some)
1/2 cup red wine vinegar
1 cup extra virgin olive oil (no substitutes)
1/4 teaspoon onion powder
1 teaspoon paprika
1 teaspoon salt

Steps:

  • To prepare dressing, warm wine vinegar slightly.
  • Add sugar and stir to dissolve.
  • If you don't warm the vinegar, you will have trouble getting the sugar to dissolve.
  • Allow to cool.
  • Add onion, paprika and salt.
  • Stir well.
  • Add olive oil and blend.
  • I prefer to put it in a bottle and shake it.
  • Pour over salad and enjoy!

  • Lightly beat the vinegar and lemon juice with the mustard. Stir in the tarragon.
  • Whisk in the oil, beating it vigorously or shake the entire mixture in a tightly covered jar until well blended. Season with salt and pepper.
