Umm Ali is a delicious traditional Egyptian dessert equivalent to North America's bread pudding. You can serve it warm with a scoop of French vanilla ice cream.

1 (17.25 ounce) package frozen puff pastry, thawed
5 cups milk
1 cup white sugar
1 teaspoon vanilla extract
¼ cup raisins
¼ cup slivered almonds
¼ cup pine nuts
¼ cup chopped pistachio nuts
¼ cup sweetened, flaked coconut

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Unroll the puff pastry sheets, and place flat on a baking sheet. Bake for 15 minutes in the preheated oven, or until puffed and golden brown.
  • Break the puff pastry into pieces, and place in a large bowl. Add the raisins, almonds, pine nuts, pistachios, and coconut, and toss to distribute. Pour into a 9x13 inch glass baking dish, and spread evenly.
  • Pour the milk into a saucepan, and stir in the sugar and vanilla. Heat until hot but not quite boiling. Pour over the mixture in the baking dish.
  • Bake for 15 minutes in the preheated oven. Turn the oven to broil, and broil for 2 minutes to brown the top. Remove from the oven and let stand for 5 minutes. Serve warm.

This Egyptian dessert contains phyllo dough or puff pastry, milk and nuts. Use any kind of nuts that you would like and eat it with a spoon. Legend has it that Om Ali was the first wife of the sultan Ezz El Din Aybek. When the sultan died, his second wife had a dispute with Om Ali, resulting in the second wife's death. To celebrate, Om Ali made this dessert and distributed it among the people of the land.

1 (17.5 ounce) package frozen puff pastry sheets, thawed
½ cup chopped walnuts
1 cup chopped pecans
1 cup chopped hazelnuts
1 cup raisins
1 cup flaked coconut
1 ¼ cups white sugar, divided
4 cups milk
½ cup heavy cream

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Butter a 9x13-inch baking dish.
  • Place the pastry sheets in the baking dish and place the dish in the oven. Watch it closely. When the top layer turns crunchy and golden, remove it from the oven. Continue until all the sheets are cooked.
  • Preheat the oven's broiler.
  • In a bowl, combine walnuts, pecans, hazelnuts, raisins, coconut and 1/4 cup sugar. Break cooked pastry into pieces and stir into nut mixture. Spread mixture evenly in 9x13-inch dish.
  • Bring milk and 1/2 cup sugar to a boil in a medium saucepan over medium heat. Pour over nut mixture.
  • Beat the heavy cream with the remaining 1/2 cup sugar until stiff peaks form. Spread evenly over nut mixture in dish.
  • Place dessert under oven broiler until top is golden brown, about 10 minutes. Serve hot.

500 ml milk
100 ml creme fraiche
1 (8 ounce) can Pillsbury Refrigerated Crescent Dinner Rolls
250 g ground almonds or 250 g ground walnuts
8 maraschino cherries

Steps:

  • Bake the crescent rolls until done (15 minutes) and let them cool. Crush them!
  • Boil the milk in a pot for 2 minutes. Remove from heat. Let it cool for 3-4 minutes.
  • In a bowl beat the cream with an electric mixer and then add the milk and mix well.
  • Then we take 5 individual bowls and we divide at the bottom half of the rolls crushed. Then add 2 tablespoons of ground almonds (or pecans, walnuts etc) in each bowl and then add the rest of the rolls.
  • Then add the milk mixture in the bowls.
  • Grill the bowls in the oven for 15 minutes.
  • Garnish with the cherries!

5 1/2 ounces puff pastry, baked (you could substitute for croissants)
2 ounces ground almonds
2 ounces ground hazelnuts
1 ounce raisins
1 ounce coconut flakes
4 tablespoons sugar
2 cups milk
1 cup cream, whipped

Steps:

  • Break the puff pastry into bite-sized pieces.
  • Mix pastry with nuts, raisins and coconut and put in a deep serving dish.
  • Put the sugar and milk in a pot and bring to a boil.
  • Pour over the pastry, nuts and raisins.
  • Spread whipped cream evenly over mixture.
  • Bake 25 minutes at 400 degrees.
  • Serve, and enjoy.

1/2 cup finely chopped hazelnuts
1 cup raisins
1 cup coconut flakes
4 tablespoons sugar
2 cups milk
1 cup cream, whipped

Steps:

  • Preheat oven to 400°F.
  • Break puff pastry into bite-sized pieces.
  • Mix pastry with nuts, raisins and coconut and put in a 9 x 13 baking dish.
  • Combine sugar and milk in a small pot, and bring to a boil.
  • Pour over the pastry, nuts and raisins.
  • Pour the light cream over everything.
  • Bake 25 minutes in preheated 400° F oven.
  • The cream will lose its 'whipped' nature, but will brown.
  • serve warm.

10 -12 sheets phyllo pastry
2 1/2 cups milk
1 cup heavy cream or 1 cup whipping cream
1 egg, beaten
2 tablespoons rose water
1/2 cup pistachio nut, chopped
1/2 cup almonds, chopped
1/2 cup hazelnuts, chopped
2/3 cup raisins
1 tablespoon ground cinnamon
light cream, to serve

Steps:

  • Preheat oven to 325 degrees F.
  • Place phyllo pastry on a baking sheet and bake for 15-20 minutes until crisp.
  • Remove from oven and raise temperature to 400 degrees F.
  • Scald milk and cream by pouring into a pan and raising heat gradually until hot but not boiling.
  • Gradually add the beaten egg and rose water.
  • Cook over a very low heat, until the mixture begins to thicken, stirring constantly.
  • Using your hands, crumble the pastry and spread it in layers with the nuts and raisins into the bottom of a shallow baking dish.
  • Pour the custard mixture over the nut and pastry base and bake for 20 minutes, or until golden.
  • Sprinkle with cinnamon and serve with light cream.

350 g cooked puff pastry
1 liter fresh milk
3 g cinnamon
100 g sultanas
50 g sliced almonds
300 g whipped cream
250 g sugar

Steps:

  • Boil milk in a large pot.
  • Add sugar to it.
  • Mix the cinnamon powder, sultanas and almond flakes together into the milk.
  • Bring the milk to a boil again.
  • Break the baked puff pastry into small pieces.
  • Arrange it in a baking mould.
  • Pour the hot milk on the broken puff pastry.
  • Pipe the whipped cream on top of the puff pastry to cover the surface of the mould completely.
  • Bake for 15 minutes at 210 degrees Celsius.
  • When the cream turns brown on top, remove it from the oven and serve hot.
