Helping kids everywhere learn to love broccoli! This classic broccoli, cheese, and rice casserole will quickly become a favorite in your family. (Maybe they'll forget to complain about eating something green.)

Yield makes 6 to 8 servings

Number Of Ingredients 8

Cooking spray
3 cups cooked long-grain white rice (see page 195)
2 (10-ounce) packages frozen chopped broccoli, thawed and drained
1 (10 3/4-ounce) can cream of mushroom soup, or 1 1/2 cups homemade Cream of Mushroom Soup (page 203)
8 ounces Velveeta, diced, or Cheddar or Monterey jack, shredded (2 cups)
1/2 cup chopped onion
1/4 cup whole milk
2 tablespoons unsalted butter, softened

Steps:

  • Preheat the oven to 350°F. Coat a 2-quart casserole dish with cooking spray.
  • Combine 3 cups of the cooked rice, the broccoli, soup, cheese, onion, milk, and butter in a large bowl. Spoon the mixture into the prepared casserole dish. Bake for 45 minutes, or until the cheese has melted and the casserole is heated through.

1/2 cup mayonnaise
1/2 cup plain yogurt
1 1/4 cup shredded sharp cheddar cheese
1/3 cup blue cheese dressing
2 eggs
1/2 teaspoon salt
1 1/2 teaspoon fresh ground black pepper
Flavor Pack from Ramen
6 cups broccoli, peeled stems and heads, chopped and blanched in salted water
12 ounces sliced mushrooms, Sauteed in 1 tablespoon butter
1 package chicken flavored Ramen noodles, broken up

Steps:

  • Preheat oven to 350 degrees F.
  • In a bowl combine mayonnaise, yogurt, cheddar cheese, blue cheese dressing, eggs, salt, pepper, and flavor pack from noodles. In a separate bowl combine broccoli, mushrooms, and broken noodles then toss together wet mixture and vegetables to evenly coat. Place in an 8 by 8-inch baking dish that has been sprayed with non- stick cooking spray and cook for 45 minutes covered. Then remove cover and bake for additional 15 minutes to brown. Cool for 15 minutes before serving.

I found this in my mother-in-law's "Pillsbury Best of the Bake-Off Cookbook" and can't wait to try it out!

1 1/2 lbs ground beef
1 cup chopped celery
1/2 cup chopped onion
1/2 cup chopped green bell pepper
1 garlic clove, minced
1 (6 ounce) can tomato paste
3/4 cup water
1 teaspoon paprika
1/2 teaspoon salt
1 (16 ounce) can pork and beans or 1 (16 ounce) can baked beans
1 (15 ounce) can garbanzo beans or 1 (15 ounce) can kidney beans, drained
1 (8 ounce) package refrigerated biscuits

Steps:

  • Preheat oven to 425°F
  • In large skillet, combine ground beef, celery, onion, bell pepper, and garlic; cook over med-hi heat until meat is browned and veggies are tender.
  • Drain beef mixture and reduce heat to low; stir in tomato paste, water, paprika, and salt. Add both types of beans; simmer mixture, stirring occasionally.
  • Meanwhile, open biscuits and place on lightly floured surface; cut out and reserve centers.
  • Reserve ½ cup of meat mixture; pour remaining mixture into 13x9-inch baking dish.
  • Arrange biscuits, without centers, over hot mixture; spoon reserved meat mixture into center of biscuits and top with reserved biscuit holes. Bake for 15-25 minutes or until biscuits are golden brown.

This is an excellent side dish to accompany ham, turkey, etc. I always have requests for this dish during the holidays! This can be made ahead, refrigerated, and cooked when needed.

3 heads broccoli, cut into florets
4 onions, quartered
¼ cup butter
¼ cup all-purpose flour
2 cups milk
1 (8 ounce) package cream cheese
8 ounces shredded Cheddar cheese
¼ cup Italian seasoned bread crumbs

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 inch baking dish.
  • Place a steamer basket in a pot over boiling water, and steam the broccoli about 5 minutes, until tender. Place the onions in a separate pot with enough water to cover. Bring to a boil, and cook until tender. Arrange the broccoli and onions in the prepared dish.
  • Melt the butter in a saucepan over medium heat, and stir in the flour until smooth. Blend in the milk until thickened. Blend in the cream cheese until melted. Pour the mixture over the broccoli and onions. Sprinkle with Cheddar cheese, and top with bread crumbs.
  • Bake covered in the preheated oven 30 minutes. Remove cover, and continue baking 30 minutes, until lightly browned.
