BAKED APPLE CINNAMON OATMEAL CUPS



Baked Apple Cinnamon Oatmeal Cups image

Using a few simple ingredients and 1 bowl, throw together these healthy apple cinnamon baked oatmeal cups. They're soft and moist inside with chewy tops and plenty of flavor. Make them ahead and enjoy all week long!

Number Of Ingredients 13

1 and 1/2 cups (360ml) milk (dairy or nondairy)
2 large eggs*
1/2 cup (120ml) pure maple syrup*
1/2 cup (120g) unsweetened applesauce
3 cups (240g) old-fashioned whole oats*
1 teaspoon baking powder
1 and 1/2 teaspoons ground cinnamon
1/4 teaspoon ground nutmeg
1/2 teaspoon pure vanilla extract
1/4 teaspoon salt
1 heaping cup peeled chopped apple*
optional: 1/2 cup (50g) chopped walnuts or pecans
optional: coarse sugar for topping

Steps:

  • Preheat oven to 350°F (177°C). Generously spray a muffin pan with nonstick spray. If using muffin liners, spray them with nonstick spray. The oatmeal cups stick to the liners a bit regardless, so I recommend skipping them.
  • Whisk all of the ingredients together, except for the apples (and nuts and coarse sugar), in 1 large bowl. Using a spoon or rubber spatula, fold in the apples and nuts (if using). Batter will be a little liquid-y. Spoon batter evenly into muffin cups, making sure both the oats/apples and liquid are in each. Fill all the way to the top. See photo above. If desired, sprinkle the tops with coarse sugar.
  • Bake for 25-30 minutes or until the edges are lightly browned and top appears set. If the tops appear to brown very quickly, tent a piece of aluminum foil on top.
  • Cool for 5 minutes before serving. Cover leftover oatmeal cups tightly and refrigerate for up to 1 week.

This is the best dessert for the early fall when the sweet and firm apples are just in season. Use the best quality cinnamon you can get and get it from a spice merchant or even a store where you can get it bulk; it does make a difference. Within ten minutes of going in the oven the scent will fill the house and neighbors you loaned things to years ago will return them just to invite themselves in and wonder aloud if there is any left (Note: there isn't). Optional accompaniments would be caramel sauce, ice cream, and whipped cream.

6 apples - peeled, cored, and sliced
2 tablespoons white sugar

  • Mix brown sugar, oats, flour, and 1 teaspoon cinnamon in a separate bowl. Use a pastry cutter or 2 forks to mash cold butter into the oats mixture until the mixture resembles coarse crumbs; spread over the apples to the edges of the baking dish. Pat the topping gently until even.
  • Bake in preheated oven until golden brown and sides are bubbling, about 40 minutes.

1 cup brown sugar
1 cup rolled oats
1 cup all-purpose flour
½ cup butter, melted
3 cups apples - peeled, cored and chopped
½ cup white sugar
2 teaspoons ground cinnamon

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease an 8-inch square pan.
  • In a large bowl, combine brown sugar, oats, flour and butter. Mix until crumbly. Place half of crumb mixture in pan. Spread the apples evenly over crumb mixture. Sprinkle with sugar and cinnamon and top with remaining crumb mixture.
  • Bake in the preheated oven for 40 to 45 minutes, or until golden brown.

Oatmeal Crisp Crust:
2 cups rolled oats
1 1/2 cups brown sugar
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg (optional)
1 1/2 cups butter
Apple Filling:
3 large McIntosh apples - peeled, cored, and chopped
1/4 cup water
2 tablespoons white sugar
1/2 teaspoon ground cinnamon, or to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease 4 12-cup mini-muffin tins. Apple Filling: Mix apples, water, white sugar, and 1/2 teaspoon of cinnamon together in a saucepan, and bring to a simmer over medium-low heat, stirring occasionally. Simmer until apples are partially cooked, about 5 minutes; remove from heat. Oatmeal Crisp Crust: Combine flour, oats, brown sugar, 1 teaspoon of cinnamon, and nutmeg in a large bowl; cut the butter into the flour mixture with a pastry cutter until the mixture looks like coarse crumbs. Place a heaping tablespoon of the crust mixture into a mini muffin cup, and press it into the cup so that it covers the bottom and pushes up the sides of the cup. Make the crust go all the way to the top of the little muffin cup, and patch any holes with more crust mixture. There will be crust mixture left over.
