OAT BRAN BISCUITS (COOKIES)

These biscuits are quite plain by themself so need some icing or something to jazz them up a bit but in saying that they are great for a cheese platter.

Number Of Ingredients 7

60 g butter
1/3 cup golden syrup
2 1/2 cups rolled oats
1/2 cup oat bran
1 cup plain whole meal flour
1/3 cup brown sugar
1/3 cup low-fat milk

Steps:

  • Melt butter & golden syrup together over a low heat.
  • Combine oats, oatbran, flour & sugar in a mixing bowl, stir in butter mixture & milk and mix to form a soft dough.
  • Knead lightly on a floured surface then roll out dough to 3mm thickness.
  • Cut out biscuits using a 6cm round cutter.
  • Place on a non-stick or baking paper lined tray and prick well with a fork.
  • Bake at 180.C for 10-15 minutes.
  • If desired, spread cooled biscuits with your favourite icing & sandwich together.

75g wholemeal flour
1 tsp baking powder
75g porridge oats
50g caster sugar
75g butter
1 tbsp golden syrup
2 tbsp milk

Steps:

  • Heat the oven to 180C/160C fan/gas 4. Line a baking tray with baking parchment.
  • Sift the flour into a bowl. Mix in the baking powder, porridge oats and sugar.
  • Melt the butter, syrup and milk in a small saucepan or in the microwave and stir.
  • Add to the dry ingredients. Mix until the liquid covers all the oat mixture and until well combined.
  • Spoon onto a baking tray and shape into rounds, leaving space between each biscuit as they will spread whilst cooking.
  • Bake for 10-15 mins, or until golden brown. Leave to cool for 5 mins before removing from tray.

3/4 cup vegetable shortening
1 cup brown sugar
1/3 cup granulated sugar
1/4 cup strong coffee
1 egg
2 1/2 cups rolled oats
1 cup all-purpose flour
1 teaspoon salt
1/2 teaspoon baking soda
1 1/2 cups all-bran cereal

Steps:

  • Preheat the oven to 350. Don't grease the baking sheets.
  • Put the shortening, sugars, coffee, and egg in a mixing bowl and beat until smooth and blended. Add the oats, flour, salt, and baking soda. Stir very well so the dough is well mixed.
  • Spread the All Bran cereal out on a piece of waxed paper. This is a sticky dough, so wet your fingers with cold water before pinching off about 2 tablespoons of dough at a time and rolling it in the All Bran. Don't worry if you can't get a heavy coating of cereal on each piece of dough; if just a little of the All Bran sticks, it will give a nice texture to the cookies.
  • Place the dough pieces about 1 1/2-inches apart on the baking sheets. Bake 12-15 minutes. Remove from the oven and cool on racks.

This recipe was on a box of "Hodgson Mill Oat Bran Cereal". What wonderful cookies! Chewy, filling, high fiber...and oat to boot. Lower cholesterol here we come. I also used 1/4 cup applesauce for 1/4 cup margarine to lower fat. They were super easy to mix and are sturdy enough to travel well (I mailed some to an avid fan!). Hope you enjoy.

1/2 cup white sugar
1/2 cup brown sugar
1 eggs or 2 egg whites
1/2 cup peanut butter
1/2 teaspoon vanilla
1 cup flour
1 1/2 cups oat bran (Hodgson Mill brand)
3/4 teaspoon baking powder
1/4 teaspoon baking soda

Steps:

  • Preheat oven to 350°F.
  • Mix melted margarine with sugars.
  • Add egg (or whites); mix well.
  • Stir in peanut butter and vanilla; beat until smooth.
  • Add remaining dry ingredients; mix well.
  • Drop by teaspoons onto ungreased cookie sheet.
  • Bake 10-12 minutes or until golden brown.

150 g all-purpose flour
60 g natural bran, unprocessed
60 g rolled oats
1/2 teaspoon baking soda
60 g butter, chopped
110 g sugar
1 egg
2 tablespoons water, approximately

Steps:

  • Process flour, bran, oats ,soda and butter until crumbly.
  • Add sugar, egg and enough of the water to make a firm dough.
  • Knead dough on lightly floured surface until smooth; cover, refrigerate for 30 minutes.
  • Preheat oven to moderate (180 D. Celcius). Grease oven trays and line with baking paper.
  • Divide dough into half; roll each half between sheets of baking paper to about 5mm thickness. Cut into rounds and place 2cm apart on tray.
  • Bake for 15 minutes. Stand biscuits on the tray for 5 minutes before transferring to the wire rack to cool.

Steps:

  • Preheat oven to 375 degrees Fahrenheit. Combine sugars, margarine, eggs, and vanilla; beat until light and fluffy. Add flour, baking soda, baking powder, and salt. Mix well. Stir in oatmeal and cereal.
  • Drop by teaspoon onto ungreased cookie sheet two inches apart.
  • Bake 8-10 minutes or until golden brown. Cool slightly before removing.

  • Preheat oven to 450°F. Line baking sheet with parchment paper. Assemble and measure out ingredients.
  • In large bowl, sift or sieve together the flours, baking powder and salt. Stir in the dry oat bran cereal and brown sugar.
  • Use a wire pastry cutter to cut the butter into the dry ingredients until mixture resembles coarse crumbs. Quickly run fingers through the mixture several times, scooping up bits of the butter and rubbing them into long paper-thin slivers between the thumb and forefinger. It is not necessary to do this with every piece of butter – just quickly pick several at random. Make a well in the center of the ingredients.
  • Pour milk all at once into well in center of dry ingredients. Using a fork, mix ingredients just enough that the liquid is absorbed into the dry ingredients and the dough can be roughly brought together. Dough will be soft and sticky and some floury spots may remain. Transfer dough onto lightly floured work surface, gently working it just until the dry ingredients are barely incorporated and a shaggy dough mass forms. Do not overmix.
