KITTENCAL'S FREEZER BAKED ZITI (OAMC)
This recipe goes back a long time, it makes two 12-1/2 x 8-inch disposable pans, I use my recipe#71273 for this but you may use your favorite homemade sauce, you will need about 8 cups of pasta sauce or a little more if desired, chili flakes is only optional I like to add them in for some heat, you may adjust the amount to suit your taste or omit --- make certain to leave the frozen pan in the refrigerator overnight to thaw slightly before baking, and you will need about 2 cups of mozzarella cheese for the top after baking, this makes the perfect potluck meal and you also get to enjoy one pan :)

Steps:
- In a large pot cook the pasta in boiling salted water until JUST al dente (leave the pasta still firm, do not overcook) drain but do NOT rinse.
- Transfer to a large bowl and mix in 2 tablespoons oil to prevent the pasta from sticking together; set adise.
- In a pot or Dutch oven cook the ground or sausage meat with chili flakes, if using and onion until beef is lightly browned; drain fat.
- Add in the garlic and bell pepper; cook stirring about 10 minutes.
- Season with seasoned salt or white salt and ground black pepper.
- Stir in the pasta sauce and reduce heat to low; simmer stirring for about 25-30 minutes.
- Mix in 2 cups of mozzarella cheese and the cooked ziti pasta.
- Divide the mixture between two greased 12-1/2 x 8-inch disposable foil pans.
- Sprinkle about 3/4 cup or to taste of Parmesan cheese over each top of pan (do not bake).
- Cool completely then cover with heavy foil, freeze until ready to use or bake one right away!.
- Thaw in the refrigerator overnight.
- TO BAKE; set oven to 350 degrees F.
- Bake uncovered for about 45-50 minutes or until hot and bubbly.
- Remove from oven and sprinkle about 2 cups mozzarella cheese on top, then return to oven for 5 minutes to melt the cheese.

OAMC BAKED ZITI
Baked Ziti is such a simple and classic meal and makes a good OAMC dish. This is a good one to throw leftover veggies in too. Originally seen in the book Frozen Assets.

Steps:
- (Meat eaters can add 1 pound ground beef).
- Boil pasta until barely tender, drain and rinse. (Brown meat if using). Saute onion and pepper until softened. Add spaghetti sauce and combine with cooked pasta. Divide into 3 meals and store in gallon freezer bags. Divide mozzarella into 3 quart bags and keep with pasta bags.
- To serve, thaw and spread in 9x13 baking pan. Sprinkle with mozzarella and 1/4 cup Parmesan. Cover and bake for 30 minutes at 350. Remove cover and bake 5 more minutes. Makes 18 servings.
ZIPPITY-DO-DAH BAKED ZITI
I have had this recipe for a couple of years and got it from another site, but I did several modifications to the original. It makes a LOT! Great OAMC recipe!

- Preheat oven to 350.
- Cook ziti according to package. Drain.
- Cook italian sausage along with garlic and onion until browned. Drain. Return sausage mixture to pan. Add in spaghetti sauce, sugar, and spices. Stir.
- Combine sour cream and cottage cheese.
- Grease 13x9 with cooking spray.
- Layer in the pan 1/2 of noodles, 1/2 of sauce, all of the provolone, all of the sour cream/cottage cheese mixture, 2nd 1/2 of noodles, 2nd half of sauce, mozzarella, and parmesan.
- Bake in oven for 20-30 minutes or until heated through and cheeses are melted.

- Heat oven to 375.
- Cook pasta according to directions (I cook it al dente).
- Drain pasta.
- In a large bowl, stir together pasta, 1-1/2 cups of spaghetti sauce, ricotta, mozzarella, parsley oregano, basil, garlic powder and salt and pepper.
- In a 13x9x2 inch baking dish, spoon in pasta mixture.
- Top with remaining 1-1/2 cups sauce.
- Sprinkle with Parmesan cheese.
- Cover with foil.
- Bake 30-40 minutes until hot and bubbly* Make ahead directions: Prepare recipe as directed but do not bake.
- Cover with plastic wrap, then foil.
- Refrigerate up to 24 hours.
- Remove plastic wrap and replace foil.
- Bake as directed above.

- Preheat oven to 350 degrees F.
- In a large skillet, cook ground beef, onions, and garlic over medium-high heat for 6 to 8 minutes or until beef is browned; stirring frequently.
- Stir in spaghetti sauce, chicken broth, and oregano.
- Reduce heat and simmer for 10 minutes.
- Stir 1 cup of the sauce into the cooked ziti noodles.
- Spoon 1/2 of the ziti mixture into a 13x9x2-inch baking dish.
- Sprinkle with 1 1/2 cups mozzarella cheese and 1/2 cup Parmesan cheese.
- Top with 2 cups sauce, then remaining ziti mixture and remaining sauce.
- Cover and bake 20 minutes.
- Sprinkle with remaining mozzarella and Parmesan cheese.

- Preheat oven to 350 degrees.
- Boil pasta as directed on box for al dente. Drain and return to pot.
- Add 5/6 of you pasta sauce to pot.
- Add the riggota cheese, mozzarella cheese, garlic powder, parsley, salt, pepper, oregano, and the egg slightly beaten.Mix well.
- Pour remaining sauce on the bottom of a 9x13 inch glass baking dish.
- Pour ziti mix into the baking dish and sprinkle the parmesan cheese on top.
