NUTTY SALMON
"I've been making this super-fast microwave dish for 20 years," shares Vicki Ruiz from Twin Falls, Idaho. Simply add an egg and cracker crumbs to hold the salmon together, then fry in butter until both sides are golden brown."

- Place the almonds in a small microwave-safe bowl; add butter if desired. Cover and microwave on high for 3-4 minutes or until almonds are browned, stirring twice. Add the lemon juice, salt and pepper. , Place the salmon in an 8-in. square microwave-safe dish; top with almond mixture. Cover and microwave on high for 5-7 minutes or until fish flakes easily with a fork. Let stand for 5 minutes before serving.

- Preheat the oven to 375 degrees F (190 degrees C).
- Combine pistachios, panko bread crumbs, Parmesan cheese, and butter in a small bowl; stir with a fork until evenly combined.
- Lightly season salmon fillets with salt and pepper on both sides.
- Heat olive oil in a large oven-safe skillet over medium heat. Sear salmon fillets, flesh-side down, for 2 to 3 minutes. Turn heat off and flip salmon pieces over so skin side is down. Brush tops of salmon evenly with Dijon mustard. Top with pistachio mixture, pressing mixture down onto salmon.
- Bake in the preheated oven until salmon flakes easily with a fork, 10 to 12 minutes. Serve with lemon wedges.

- For the macadamia nuts, you want enough to be able to have a good crust on your salmon after you have crushed them up. So enough to cover the top of the salmon with no salmon showing through the top crust. (see the picture above)
- First, crush up your macadamia nuts. We found that we like a coarser texture than what you see in the picture above. So I would use a food processor and pulse them until the nuts are coarsely ground, with some chunks. (Ground not too fine, and not too chunky – just medium). Set aside.
- On a baking sheet, lay out a sheet of tin foil, then lay out what ever size of salmon you are using, onto the foil.
