CHEWY, NUTTY, HEALTHY GRANOLA BARS

Chewy, Nutty, Healthy Granola Bars image

Chewy, nutty, chocolaty, and packed with tasty energy, no one will ever know these bars are low-fat and healthy! They're very easy to make and you can pack in everyone's favorite nuts and fruits. My family has now stopped buying Kashi® and chewy bars because we love these so much. These are gluten-free when made with rice flour and appear to be professionally made thanks to the small spoonful of corn syrup that keeps everything tightly combined and gives the bars a nice shine. Have fun experimenting with different combinations of nuts, dried fruits, and toppings! Almond butter works well, too!

Number Of Ingredients 14

⅓ cup peanut butter
3 tablespoons butter, melted
¼ cup brown sugar
2 tablespoons honey
1 tablespoon corn syrup
1 teaspoon vanilla extract
½ teaspoon ground cinnamon
½ teaspoon salt
3 tablespoons unsweetened applesauce
1 ⅔ cups old-fashioned oats
⅓ cup all-purpose flour

Categories     Nut     Quick & Easy     Wheat/Gluten-Free

Yield 16 bars

Number Of Ingredients 14

1/4 cup (1/2 stick) unsalted butter
1/4 cup coconut oil (or butter)
3/4 cup Nut Butter (homemade - it's in her book - or storebought)
1/2 cup packed light brown sugar (homemade or storebought)
2 tablespoons Vanilla Extract (homemade or storebought)
1/3 cup honey
2 1/2 cups old-fashioned rolled oats
1 1/2 cups raw sliced almonds
1/2 cup shredded unsweetened coconuts
3/4 cup semisweet chocolate chips
1/2 cup oat bran
1/4 cup sesame seeds
1/2 teaspoon ground cinnamon
1/2 teaspoon kosher salt

Steps:

  • Preheat oven to 350°F. Line a 9 x 13-inch baking pan with parchment paper, leaving extra paper to pull the finished product out of the pan. In a large saucepan, combine the butter, coconut oil, nut butter, brown sugar, vanilla, honey, and 2 tablespoons water. Cook over medium heat, stirring frequently, until you have a uniform syrup. Remove from heat. Add the oats, almonds, coconut, chocolate chips, oat bran, sesame seeds, and cinnamon. Stir until the dry ingredients are thoroughly coated. Transfer the mixture to the prepared pan, and press it as firmly into the pan as possible, first using your hands, then using a spatula or wooden spoon to flatten the top. Sprinkle the salt over the top. Bake until the edges darken, 35 to 40 minutes. The mixture will be soft when you take it out of the oven, but allow it to cool completely before taking it out of the pan and cutting into 16 squares. They can be stored at room temperature in a covered container for 10 days and in the freezer, cut and stored in a covered freezer-safe container (with layers of parchment paper) for 4 months.

Provided by rebeccaa2

Categories     Breakfast

Time 40m

Yield 9 granola bars, 9-12 serving(s)

Number Of Ingredients 9

2 teaspoons vanilla
2 teaspoons cinnamon
1 teaspoon salt

Steps:

  • Preheat the oven to 350 degrees.

  • While oats and nuts are toasting, place in a saucepan over medium heat the honey, brown sugar, butter, vanilla, cinnamon and salt.
  • Stir until the mixture bubbles, and keep it boiling and stirring for about 2 minutes.
  • When oats and nuts come out of the oven, turn it down to 325.
  • Take the pan off the heat, and when the oats are finished, pour them right into the saucepan and mix to combine honey mixture evenly.
  • Stir in the chopped dried fruit.
  • Press mixture into the glass pan with the back of a spoon - it will be pretty sticky.
  • Bake at 325 for 20 minutes, and let cool completely before cutting.
  • Wrapped in saran wrap, these will keep for at least a couple of weeks!

NUTTY GRANOLA

Nutty Granola image

A very easy-to-make granola recipe that is delicious and the best snack ever. All the girls at my office eat this with yogurt every day. It's awesome! If you don't have some of the dry ingredients, just add more of what you do have. Walnuts are a fine substitute for pecans. You can also try dried blueberries instead of or with the cranberries.
