I've received many requests for this recipe. It's easy to make and just a little different from other quick breads I've tried.

Yield 2 loaves.

Number Of Ingredients 11

2 cups sugar
3/4 cup vegetable oil
4 large eggs
2 teaspoons coconut extract
3 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup buttermilk
1 cup sweetened shredded coconut
1 cup chopped walnuts

Steps:

  • In a large bowl, combine the sugar, oil, eggs and extract. Combine the flour, baking powder, baking soda and salt; add to sugar mixture alternately with buttermilk, stirring just until moistened. Fold in coconut and walnuts. , Pour into two greased 8x4-in. loaf pans. Bake at 325° for 60-65 minutes or until toothpick inserted in the center comes out clean. Cool 10 minutes in pans before removing from pans to wire racks to cool completely.

Nutty Coconut Bread (Abm) image

Not a sweet bread. Adapted from Electric Bread. This is a very tender yet chewy bread with a pleasant nutty crunch. I prefer to use all walnuts instead of walnuts and pecans. You can bake this on the regular or rapid cycle. You can also mix this on the dough cycle. Shape and let rise about 40 minutes, and bake in the oven, 400° F. for about 30 minutes. Any way you bake it, you'll like it! Time will vary according to your machine. This makes a 1 1/2 pound loaf.

1 1/8 cups water (1 cup plus 2 tablespoons)
2 tablespoons cream of coconut
1 1/2 tablespoons butter
3 cups bread flour
1 1/2 teaspoons salt
1/2 cup shredded coconut (or flaked coconut)
1/4 cup chopped pecans
1/4 cup chopped walnuts
2 teaspoons bread machine yeast (3 teaspoons if using active dry yeast)

Steps:

  • Add ingredients in order listed, or as recommended by manufacturer.
  • Bake on regular setting or rapid setting.

This bread takes pumpkin bread to a whole new realm. I invented this one day when thinking of how to make pumpkin bread retain its moistness even longer. Solution: coconut milk!

3 ½ cups all-purpose flour
2 cups packed dark brown sugar
⅔ cup white sugar
1 (15 ounce) can pumpkin puree
1 cup vegetable oil
⅔ cup coconut milk
2 teaspoons baking soda
1 teaspoon salt
1 teaspoon ground nutmeg
1 ½ teaspoons ground cinnamon
⅔ cup unsweetened flaked coconut
1 cup chopped walnuts, toasted

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour two 8 x 4 inch loaf pans.
  • Combine flour, sugars, pumpkin, oil, coconut milk, baking soda, salt, and spices. Mix until well blended. Fold in coconut and nuts. Pour into prepared pans.
  • Bake for about 1 hour and 15 minutes, or until an inserted toothpick comes out clean. Remove from oven. Cover with foil tightly, and allow to steam 10 minutes. Remove foil, and turn out onto cooling rack. Tent lightly with the foil, and allow to cool completely.

8 eggs
4 cups sugar
4 tsp coconut flavoring
2 cups buttermilk
2 cups coconut
2 cups salad oil
2 cups nuts
6 cups flour
1 tsp salt
1 tsp baking soda
1 tsp baking powder
Sauce:
2 cups sugar
1 cup water
4 tsp butter
2 tsp coconut flavoring

Steps:

  • Beat eggs, sugar, coconut flavoring, buttermilk, coconut, oil & nuts. In a separate bowl, sift flour, salt, baking soda, baking powder & add to other ingredients. Mix till all is moistened. Pour into greased & floured bread pans (half way).
  • Bake at 325 degrees F for 1 1/4 hrs or till toothpick inserted in middle comes out clean. Leave bread in pans.
  • Sauce:
  • Combine sugar, water & butter. Boil 5 minutes stirring constantly until all ingredients are well blended. Remove from heat and stir in coconut flavoring. Pour over bread and let stand for 4 hours before removing bread from pans, (be sure to stir heated mixture every time you pour over bread).
