CHEESY GREEN RICE
I like to serve this dish at Thanksgiving and Christmas - or for that matter, anytime we have guests. It's a "no-fail" recipe.

- In a large bowl, combine the rice, parsley, 1/3 cup cheese, onion, green pepper and garlic. In another bowl, combine the eggs, milk, oil, lemon juice and zest, salt, seasoned salt and pepper. Stir into the rice mixture. , Transfer to a greased 2-qt. baking dish; sprinkle with remaining cheese. Bake, uncovered, at 350° for 40-45 minutes or until golden brown.

MOM'S GREEN RICE
MY MOTHER-IN-LAW always served green rice with her chicken casserole. She was a great cook, and the local newspaper featured her several times as "cook of the week". - In a skillet, saute onions in butter until tender. stir in the broth, rice, green pepper, parsley and pepper; bring to a boil. Remove from the heat; pour into a greased 1-qt. baking dish. Cover and bake at 350° for 25 minutes or until rice is tender. Top with cheese if desired; bake 3 minutes longer or until melted.

NORWEGIAN GREEN RICE CASSEROLE
I haven't seen any green rice recipe like this one. This dish has been traditionally served at all family holidays. I don't know for a fact that this is a Norwegian recipe, but that is what I have been by my family.

Steps:
- Preheat oven to 350°. In a blender, add pepper, onions, parsley, oil, eggs, salt and 1 cup milk and run on the highest setting until it is a frothy liquid. Add second cup milk to blender and blend on a lower setting until combined.
- Spray a covered casserole dish with non-stick spray, add rice, cheese and blended mixture and stir to combine.
- Cover dish and bake approximately ½ hour and gently stir. Remove lid and continue baking another ½ hour or until rice is slightly browned around the edge.

I found this recipe in a casserole cookbook by James Villas and made some changes to suit my tastes. This makes a great potluck or buffet dish.

Steps:
- Preheat oven to 350 degrees F.
- Butter a 2-quart baking dish and set aside.
- In a large bowl, combine the rice, 3/4 of the cheddar cheese, ricotta, sour cream, garlic, salt, and pepper.
- Mix until well blended.
- Add the spinach, bell pepper, chiles, and green onions.
- Mix until well blended.
- Transfer to prepared baking dish.
- Sprinkle the remaining cheddar cheese over the top and bake until golden, about 30 minutes.

GREEN RICE CASSEROLE
I grew up eating this at family parties and requested the recipe from my Aunt while I was in college. It is tasty and transports well if you're going to a potluck. Use it as a side dish or a vegetarian one dish meal with some crusty bread. I like it cold though it designed to be served hot.

- Cook rice according to package directions.
- Stir cheese whiz into hot rice.
- Meanwhile heat margarine in skillet and sauté celery and onion until soft but not brown.
- Cook broccoli according to package directions and drain well.
- Fold celery, onion, broccoli, and soup into rice mixture.
- Pour into greased 3 quart casserole.
- Bake uncovered 1 hour in 350 degree oven.
