NORTHWEST SALMON SALAD
I love that I can use my favorite Northwest ingredients-fresh salmon, blueberries and hazelnuts-all in one recipe. The salmon and sour cream dressing are just as scrumptious in a sandwich. -Davis Clevenger, Dexter, Oregon

Steps:
- Place salmon on a greased baking sheet; sprinkle with salt and 1/2 teaspoon pepper. Drizzle with 1 tablespoon lemon juice; top with dill sprigs., Bake, uncovered, at 425° for 15-18 minutes or until fish flakes easily with a fork. Flake salmon into large pieces., In a small bowl, combine the cucumber, sour cream, red pepper, snipped fresh dill, capers and remaining pepper and lemon juice., Divide lettuce among 4 plates. Top with peach, hazelnuts, blueberries, onion and salmon. Serve with dressing.

NORTHWEST SUMMER SALAD WITH SMOKED SALMON
Steps:
- In a glass jar, shake the citronette ingredients. Can be made ahead. Let stand at room temperature until ready to use. In a large mixing bowl, toss the first 7 ingredients with a small amount of the citronette. (Too much will wilt the salad.) Carefully, arrange the tossed ingredients on a large platter. Scatter avocado, blueberries, lemon zest, and edamame on top. Sprinkle well with Kosher salt. Add flaked smoked salmon, crumbled feta, and toasted almonds. Sprinkle liberally with coarse ground black pepper. Put remaining citronette in a small bowl or pitcher. Serve plattered salad with citronette,lemon wedges, and additional Kosher salt and coarse ground black pepper.
SMOKED SALMON CHOPPED SALAD
Found this recipe online, from a 1999 BH&G magazine. Sounds like it has potential, so I'm posting it here to keep track of it. I may post some changes once I've actually made it. I'm guessing the smoked salmon in the recipe refers to hot-smoked salmon like alder-smoked salmon, not cold-smoked like lox or nova.

Steps:
- To make dressing: combine olive oil, lemon zest, lemon juice, sugar, salt, and pepper sauce in a jar. Allow to sit at room temperature for 30 minutes before using. Shake well before use.
- Spray four 6-ounce cups or ramekins with nonstick spray.
- Equally divide and layer ingredients in each cup in the following order: salmon, green onion, yellow pepper, tomatoes, onion, and cucumber.
- Cover tops with plastic wrap and firmly press mixture into cups with a can slightly smaller than diameter of cup to press ingredients together.
- Turn salads out onto individual plates lined with lettuce leaves or other greens (if desired). Carefully remove cups.
- Sprinkle salads with capers. Drizzle dressing over salads and serve.

GREAT NORTHWEST SMOKED SALMON PASTA
A re-creation of a wonderful pasta dish I ate on Whidbey Island in Wash. State, this is fresh with tomatoes, mushrooms, and spinach.

Steps:
- Saute shallots and garlic in olive oil in a large skillet until soft.
- Add mushrooms and tomatoes, saute for another 2 mins.
- Add chicken broth and 3/4 of the spinach; gently simmer over low heat while pasta cooks.
- Cook pasta a little less time than according to pkg directions.
- Drain pasta and gently stir it into the sauce.
- Simmer gently until pasta absorbs some of the sauce, and is cooked to your preference.
- Crumble the salmon into chunks and gently stir it into the pasta.
- Add more chicken broth if needed and heat through.
- Serve on a bed of the reserved spinach and sprinkle with freshly ground pepper to taste.
