NOODLES WITH EGG AND PARSLEY TOPPING

Steps:
- Cook the noodles in salted water until tender. Drain and add 1 tablespoon of the butter, salt and pepper. Toss well.
- Heat the remaining 2 tablespoons of butter in a skillet over medium-high heat, and add the chopped egg and nutmeg. Cook briefly, shaking the skillet. Add the parsley, and cook for 30 seconds. Pour over the noodles and toss. Serve immediately.

MICKEY'S BUTTERED EGG NOODLES WITH BROWNED CRACKER CRUMBS
My mother made this wonderful dish usually with a pork roast and apple sauce on the side. I'm sure it came from her mother and before that my great-grandmother.

- Melt 4 ounces of butter in a frying pan over medium heat.
- Add the crumbled cracker crumbs and mix well.
- Cook until the crumbs are well browned, stirring often. Set aside.
- Meanwhile bring a large pot of salted water to a boil and cook noodles according to package directions. Reserve 1/3 cup of the water and then drain the noodles and pour into a large bowl, add the water and mix well.
- While noodles are cooking melt the remaining 4 ounces of butter in a Pyrex measuring cup in the microwave. Pour over cooked noodles and stir.
- Finally add the browned cracker crumbs and mix well.

- Bring a large pot of lightly salted water to a boil. Cook egg noodles at a boil until tender yet firm to the bite, about 8 minutes; drain.
- Melt butter in a skillet or large pot over low heat. Add bread crumbs and stir until coated in butter. Mix noodles into bread crumbs mixture. Cook, stirring occasionally, until a crust forms on the bottom, about 30 minutes; season with salt.

NOODLE PUDDING
This noodle pudding is a family favorite. The recipe has been passed to many friends. It can also be frozen and it travels well. Can be baked for 30 minutes, allowed to cool and then be frozen. Cut into serving size pieces before freezing. Defrost after freezing and then bake at 350 degrees for 30 minutes or until hot.

- Preheat oven to 350 degrees F (175 degrees C). Grease a large casserole dish.
- Bring a large pot of lightly salted water to a boil. Add egg noodles and cook for 8 to 10 minutes or until al dente; drain.
- Blend together cottage cheese and cream cheese until smooth. Mix in sour cream, vanilla, sugar and eggs. When noodles are done stir together 1/2 cup butter and noodles in a large bowl. Combine cheese mixture and noodles; Blend well. Place all in one large casserole dish.
- To make the topping: Mix together graham cracker crumbs, butter and sugar until it looks like large crumbs. Sprinkle evenly over top of noodle mixture.
- Bake at 350 degrees for 15 minutes. Lower oven to 325 degrees and continue baking for 45 minutes more. Allow to cool before cutting and serve warm.

- Bring water, 2 boullion cubes and 1/2 stick of butter to boil using med to high heat.
- Add egg noodles.
- Cook until noodles are desired texture.
- (About 6-8 minutes) During last minute of cooking add remaining 1/2 stick of butter.
- (You may add additional butter if desired. Also you may use 1 can of chicken broth instead of bullion. I suggest using bullion).

- 1. Boil your noodles as directed on package. Drain do not rinse.
- 2. While hot add 3/4 stick butter. Carefully stirring butter in until melted. ( trying not to break up noodles )
- 3. Melt the stick of butter, add this to the garlic powder and bread crumbs. Blend till crumbs are coated.
- 4. Preheat oven to 350 degree F. Spray a 3 quart casserole dish with non stick cooking spray.
- 5. Place 1/3 of the noodles in the casserole dish. Now sprinkle 1/3 of the bread crumbs.
- 6. Continue layering until you have 3 layers, ending with crumbs.
- 7. Bake covered, for about 35-45 minutes or until heated through. The last 3 - 4 minutes I stick them under the broiler.
- 8. Serve with a ladle of gravy or two. I usually ladle the gravy over all before serving. You can do it individually if prefer, as some may not like gravy. Savory and delicious!!! Enjoy!
