SUNDAY CHICKEN
This was my mother's favorite recipe for Sunday-hence the name. It makes an excellent recipe for Sunday dinner, because it can be prepared ahead of time and left to bake while you attend church. The leftovers also freeze well. -Don Harksen, Dothan, Alabama

- Preheat oven to 350°. In a large bowl, combine soups, 1/4 cup butter and rice. Pour into a greased 13x9-in. baking dish. Top with chicken pieces. Drizzle chicken with remaining butter. Sprinkle with salt, pepper and paprika. , Bake, uncovered, 2 hours or until chicken juices run clear and rice is tender.

NONNI'S SUNDAY CHICKEN
My Nonna always served this with a simple green salad and a risotto Milanaise on Sundays. We now know that eating chicken fats are unhealthy, but I would diet all month just to have this.

- 1. Nonni's Roasted Chicken Wash and dry chickens. Place in a large roasting pan (big enough for both birds). Rub each bird all over with the olive oil. Fill the cavities of each bird with 2 whole cloves of garlic, and ½ bunch each of rosemary and sage, reserve some herbs for the tops of the birds. Rub the remaining chopped garlic and herbs on the outside of the chickens. Season with salt and pepper. Roast at 325 degrees until legs move easily (2 hours approximately). Remove chickens to a platter to rest. Add some the white wine and the chicken broth to the drippings in the pan. Scrape up all the bits of goodness from the pan and simmer. While the 'au jus' is simmering, cut each chicken into 8 pieces, place on a serving platter. Serve the sauce separately with the Italian bread for dunking.

- 1. Remove any "innards" from chicken. Rinse chicken and cavity with cold water, pat dry with paper towel. Oil outside of chicken well with olive oil. Sprinkle with seasoning salt inside and out. Place on rack in shallow roasting pan with about a 1/2" of water covering bottom of pan. Sprinkle rest of spices and herbs evenly on outside (and a little inside) of chicken. Tie legs together if desired. Tuck wings under. Roast, uncovered, in 350° oven for about 2 hours or until done. (*About 20 minutes per pound). *Baste well every 30 minutes with melted butter. (You can also baste with juices from the pan when enough accumulate. But start with butter). Let chicken rest for about 15-20 minutes before carving. Great for turkeys and cornish hens, too! *Cut-up potatoes, baby carrots, celery and onions can also be added to the pan if desired for a "one pot wonder"! And gravy can be made from the drippings.

- Finely grate the zest from the lemons to measure 2 tablespoons; set aside. Coarsely chop 2 lemons; place chopped lemons and rosemary sprigs in the chicken cavity. Save remaining lemon for another use., Place chicken on a rack in a shallow roasting pan; brush with oil. Combine the minced rosemary, pepper, salt and lemon zest; rub over chicken., Bake, uncovered, at 350° for 2-1/4 to 2-3/4 hours or until a thermometer inserted in thickest part of thigh reads 170°-175°, basting occasionally with drippings. - pound chicken breast to 1/4 inch season with salt and pepper then lightly flour and set aside.
- in a large skillet heat evooand a tablespoon of butter.
- heat to medium high and cook chicken breast on each side to a light golden brwon and set aside.
- add 2 tablespoons of evoo and 1 tablespoon butter and saute shallots and garlic until just tender.
- deglaze pan with chicken broth and lemon juice.
- season to taste with salt, pepper and pepper flakes.
- reduce by 1/2 and then swirl in 1 tablespoon of cold unsalted butter.
- brush a shallow oven proof baking dish with olive oil and arrange chicken breast in one layer overlapping if need be.
- top chicken breasts with artichokes, capers and sun dried tomatoes.
- pour sauce over chicken then sprinkle with lemon zest, chopped parsley and basil.
- drizzle with olive oil cover with foil and bake at 350 for 40 minutes.
