MEXICAN HORCHATA

Agua de Horchata is a refreshing Mexican rice and cinnamon drink, made with just a few simple ingredients! Enjoy Authentic Horchata Recipe!

Number Of Ingredients 8

2 cups long grain rice
1 stick Mexican Cinnamon
4 cups hot water
8 cups extra water to finish the drink
3/4 cup sugar
2 tsp vanilla extract
1 cup milk (2% or whole)
Ice cubes to serve

Steps:

  • Place the rice and cinnamon stick in a large glass bowl and add the 4 cups of hot water. Cover the bowl with a dish or plastic wrap, then let it soak overnight, or at least 8 hours. *Please see NOTES
  • The next day, pour the rice, cinnamon, and water into your blender and process until it becomes a smooth, watery paste.
  • Using a strainer or sieve, strain the mixture into a wide mouth pitcher, stirring to help the liquid pass through.
  • Add the milk (if using), vanilla extract, and the rest of the water. Stir in the sugar, adjusting the amount to fit your taste. Let the drink chill in the refrigerator. Stir the Horchata before serving, since the rice mix tends to settle at the bottom. Serve in glasses with ice cubes.

We LOVE horchata, but are always disappointed in the amount of wait time required to make it. One day I decided to try to cook the rice slightly before making the drink because I wanted it NOW! We really like it and think it tastes just a good as the original recipe we tried which calls for the rice to be soaked over night.

1 cup white rice
2 cups water
3/4 cup sugar
1 teaspoon vanilla
1/2 teaspoon cinnamon
ice

Steps:

  • Combine rice and water together in saucepan. Bring to a boil and continue to let boil for about 5 minutes.
  • Drain water from rice.
  • Combine milk and rice and blend together. Strain the milk and rice mixture through cheesecloth.
  • Add sugar, vanilla, and cinnamon. Feel free to use less or more sugar and cinnamon depending on personal preference.
  • Add plenty of ice.

FAST EASY HORCHATA

I got this recipe from a friend from work, and she got it from a Mexican restaurant. This is in other words "rice water" it tastes like a rice pudding drink.The original recipe requires you to use actual rice, but this is a fast, refreshing version. The rice flour can be found at your local grocery store in the hispanic isle. Tip: I like to use the pitcher to mix everything well with a spoon and the put the finished drink in an empty milk gallon container and give it all a good shake.

1 gallon water
1 (14 ounce) can sweetened condensed milk
1/2 cup of goya brand rice flour (or more)
2 teaspoons vanilla extract
1 teaspoon cinnamon
sugar, to taste

Steps:

  • Fill a measured pitcher with 3 cups of water. Add rice flour, vanilla, cinnamon and mix well.
  • This will ensure there aren't any clumps.
  • Add the rest of the water to the 1 gallon measure line, condensed milk and sugar (to taste) Stir and mix well. Enjoy!

What better way to beat the heat than with this easy, no-churn horchata ice cream? It's sweet and creamy with toasty notes from the rice and spices.

2 cups whole milk
2 cups Homemade Horchata
1 can sweetened condensed milk
2 large egg yolks
whole cinnamon stick, for garnish - optional
ground cinnamon, for topping

Steps:

  • Prepare a shallow ice bath in a large bowl.
  • Add the milk and horchata to a large, high-walled skillet or saucepan over medium heat. Bring the mixture to a simmer, whisking constantly to make sure it does not burn. Add the sweetened condensed milk and whisk to combine. Reduce the heat to low.
  • Add the egg yolks to a medium bowl. While whisking constantly, slowly ladle the horchata mixture into the eggs to temper the yolks.
  • Slowly pour the egg mixture back into the pan and increase the heat to medium. Continue cooking, whisking constantly, until the mixture becomes thick and creamy, about 5 minutes.
  • Remove the pot from the heat and pour into a clean medium bowl. Place the bowl with the ice cream base in the ice bath, making sure the ice water doesn't get into the base, and stir until chilled completely, about 20 minutes. Transfer the base to an airtight container, cover, and freeze for at least 2 hours, up to 1 week.
  • Scoop and serve. Garnish with whole cinnamon sticks and sprinkle with ground cinnamon, if desired.
  • Enjoy!

5 cups water
1/2 cup milk
1/2 tablespoon vanilla extract
1/2 tablespoon ground cinnamon

Steps:

  • Pour the rice and water into the bowl of a blender; blend until the rice just begins to break up, about 1 minute.
  • Let rice and water stand at room temperature for a minimum of 3 hours.
  • Strain the rice water into a pitcher and discard the rice.

6 cardamom pods, seeds removed and crushed
1 teaspoon ground cinnamon, or more to taste
⅓ cup peeled, slivered almonds
5 cups water

  • Place rice in a blender and grind to a fine texture. Transfer to a large pitcher. Add crushed cardamom and cinnamon.n
  • Grind almonds and 1/3 cup water together in the blender. Add to rice mixture in the pitcher. Add 4 cups water and stir. Cover pitcher and let horchata sit 8 hours to overnight.n
  • Transfer horchata to the blender and add sugar. Blend, gradually adding 2/3 cup water, until smooth. Pour mixture through cheesecloth into a separate container, squeezing gently to extract the milk. Refrigerate horchata 15 minutes before serving.n
